This faux meat product looks very convincing, delicious, and nutritious. I would call it chickpea Seitan, as it is the wheat gluten flour which gives it its texture. Very well done, I will make note of the recipe.
Just because something has gluten in it doesn't make it seitan. The whole point of seitan is that all the starch of the wheat has been removed. Here she's not removing the starch, and actually adding even more with the chickpeas. Not saying it's not good, it's just not seitan.
Actually the dough is flexible because you use flour in the recipe isn't it, as the gluten gives the flexibility. Then if you didn't beat it, it should work just the same with a bit of kneading? Or have you tried with a no gluten flour and it still works?
