    I’m a ty*pe 1 d*iabe*tic.
Ate a Keto diet years ago… felt the best I’d ever felt in my entire life @44, lost those “last” 5lbs, and was motivated to even get toned…which I did.
Just got off a 4 year vegan diet where I had become miserable, gained weight (5+ an extra 5 more), lacking motivation.
Yep, I read the books, listened to long seminars, took B12 and faithfully grounded my flax seeds. I could never get a balanced glucose reading.
Went back to a keto diet and within days I felt better, slept better have had much more consistent readings and need only 1/2 the insulin.
I became vegan for healthy reasons…me and the planet.
But, it has to be noted and accepted that some bodies do better on one than on another.

Huge tip! When you make pasta or baked potatoes, sweet potatoes, etc. Make them ahead of time and throw them in the fridge. Let them cool overnight and that will turn the starch more of a resistant starch and it will have a lower glycaemic effect. I keep cooked pasta in the fridge, usually the spirals as they don’t stick together as much as well as baked sweet potatoes.

I don't think one should choose a diet based on 'easy,' but going meat-based is the ultimate in easy.
      1) When shopping, ignore the whole store except the meat rack, dairy and eggs.
      2) Meal prep is just throwing something into a pan with butter for a few minutes.
No recipes, no ingredients, minimal prep time. Compared to this, vegan cooking is downright time-consuming. I'm not advocating for others to eat the way I do, I'm just pointing out what easy really means.

As soon as I watched, I realized there was someone out there preparing food the way she does, who could make eating healthier more accessible for her.
