- This week, we are testing the patience of the Italians once again with an attempt at some real-deal risotto, from the realest of dealest of movies about Italian food: Big Night. I try a few different shortcuts, but spoiler alert: nothing quite compares to the real thing. So toss some pomade in your hair and hop in the Studebaker, because we're headed back to a mythical time when the Jersey Shore didn't appreciate Italian food.

I couldn't be happier for the man's success, but i sometimes miss his early video magic of a single burner, Ratatat, and the occasional inspirational jazz cigarette.

my biggest concern here is the pronunciation of tricolore, but I am admittedly (and unsuccessfully) trying to erase the italians-mad-at-bastardized-food stereotype so I guess I don't really count

Do the soup from the beginning of Ratatouille, it would be fun to see a try at a dish we don't know much about, besides what Remy threw in there, and the fact that it looked white and a little creamy with what looked to be carrots and potatoes.
It went from orange to white. That is a transformation I think even the actually trained Sohla would struggle with

I feel like, instead of seafood risotto, to complement the cheese, and the pesto as well, one could possibly use a tomato risotto. Adding a smooth, cooked tomato sauce to make it really, really red.
he went for the show version, where they say it's seafood, but definitely, tomato would've made it obviously red to the point of saturating the camera sensor.
I was thinking to finish and amp up the red at the end, puree some sundried tomatoes from olive oil and maybe some roasted red pepper dice.

My experience with Risotto is:
If you don't care about your health: Add as much butter as you want at the very end. There is no too much butter.
Only way to balance out the carbs in the rice if you're on keto.
You can never go wrong with butter.

Here’s an idea: maybe at this point, film an empty/template walk-on with nothing on the counter as stock footage, then use it whenever you forget to film one in the future.

You should do an episode of Binging with Babish on some of foods from the Golden Girls. There’s Sophia’s 14 hour sauce, chocolate cheesecake, Sophia’s lasagna, and definitely more that I can’t think of.
The best risotto I ever had was a taro risotto I had in Maui last year. It was green and just... a divine dish.

From someone who just did the oven risotto method two nights ago, it works perfectly. You just overcooked yours. You need to take it out when it's still slightly water. Stirring the rice will mix in the starch and, along with the butter and parmesan, will make it creamy.

You can make cheats risotto like soup. The rice will roll in the boiling broth so that you don't have to tend it until it starts to get thick and then it's almost done.

Making risotto for my Moms birthday based on your Rusotto video is one of my best memories from last year.
you need a top-down camera for those high walled pots and pressure cookers.
I like how he only ever seems to worry about bothering the Italians.
Trust me, he has a reason to do so. I don't know what happens to us when they change traditional recipes, it's like berserker mode, a bunch of screaming and biting and then we forget everything
Tip: lemon zest brightens the pesto really nicely.
A spoonful of boiling water also does the trick and doesn't add lemon flavour

@@Xartab what's the hot water supposedly doing? Seems like a small amount just warms up the pesto. If it slightly cooks the basil is not going against the purpose of having fresh basil? Never tried that trick before.
@@yourmother3207 Lemon zest isn't acidic. It tastes like lemon like the core of a lemonhead tastes like lemon.
So I tried using Andrew's risotto recipe to make risotto yesterday. I used homemade vegetable stock and added some sauteed mushrooms at the end to make mushroom risotto. That said, I had to use more stock than what the recipe said, more close to 4 cups of stock.
BIg Night is a movie i adore that hardly anyone seems to know about. this made my whole day.
For anyone wondering, the “tri” in Tricolore (3 colors) is pronounced like the tri in “trim” (yes this is the italian comment you were looking for)

Risotto is probably the first dish my grandma taught me how to make. It's actually quite easy if you practise a few times, and you can try out so many variations.

Interesting. In Italy I learned to make risotto in a completely different way. We used to roast onions and garlic, add whatever you want, add the water/stock and take off the heat. Put on a lid and wrap in a few towels and let rest for 10 minutes. Weird how it's so different.
