    TRUE STORY. Year 2001 at one of Venice's most popular restaurants. I ordered "linguini nero" (linguini with squid ink sauce). It looked good and tasted even better. Somehow, I decided to put freshly-grated Parmigiano Reggiano on it thinking it was going to taste even better. In less then 45 seconds, the chef came out of the kitchen headed for our table with the proverbial fumes coming out of his nostrils. Without saying a word, he took my plate and screamed something in Italian as he headed back to the kitchen. A lady from the neighboring table translated what the chef said: "You ruined his signature dish!!!" I'm sure that wasn't all he said, but the lady spared me any further humiliation. She later explained that it was considered culinary taboo in Italy to combine cheese or any dairy product with seafood.
    A fresh plate of squid ink linguini was delivered in front of me about 20 minutes after the chef''s outburst. This time I ate my secondo piato (second course) as it was presented to me. Enjoyed every bite of it like it was going to be my last meal.
    The chef came out with manager after the dessert and coffee to apologize for his "unprofessional behavior". The manager announced that our meal was on the house. 💖💖💖

      It isn't, it's just stupid. Mussels are served with Pecorino cheese all over Italy.
      The problem is that If you put grated Parmigiano cheese on Mediterranean (expensive and delicate) seafood the all dish will taste of grated Parmigiano cheese. You'd waste your money and the chef's time and effort. Order Spaghetti with a reduction of glutamate and too much salt if you like Parmesan and Salt so much.
      I have heard the same story by American tourists many times, for sure it did not happen to you in 2001: there are no more chefs in Venice so proud of their job and so worried for customers wasting money.
      Anyway, it's "linguinE al nero di seppia". And if they served linguine and not bigoli either you were not in Venice or you have eaten in the mother of all venetians tourist traps.

      (1) "(linguini with squid ink sauce)" was a brief description of the dish. It was not a translation. The menu listed the dish as simply "LINGUINE NERE". I had decided to write "LINGUINI NERO" for linguistic familiarity and in consideration of non-Italian readers.
      (2) If it's "squid ink"...shouldn't it be "nero di calamaro"?
      (3) If the noun adjective had to be in singular form (and it should be), then how do you explain "SPAGHETTI alle vongole" (or al pomodoro; or all'Arrabbiata)? Shouldn't it be "SPAGHETTO"?
      How about "zuppa di MACCHERONI di pollo"? That's exactly what the menu said...not MACCHERONE.
      (4) I have visited 14 of Italy's 20 regions and ordered a big pot of mussels for lunch at least once in each region. Not once have I seen on the menu a mussel dish with pecorino cheese on and in them.
      (5) Yes, it was 2001...the time when Italy was transitioning its currency from Italian lira to Euro.

    This scene is so wonderful for so many reasons. Great writing but it comes alive because of two titans of acting: Tucci and Shalhoub. They have so much latent anger just under the surface and are so opposite in their outlooks and each one is right in his own way. It's just amazing to watch even now after I have seen the film 2 times already. Brilliant! And Marc Anthony hovering in the background like Igor looking worried that Shalhoub is going to really lose it. And then he does! (Throws the pot)

    I've enjoyed this movie many times and on many different levels. The passion for food properly cooked and presented, the love between the brothers, the superb acting, the smart writing, the quiet staging of some scenes (the breakfast scene reminds me of the early mornings I worked in a commercial kitchen). I can't recommend this film highly enough.

    I remember watching an episode of Giada cooking traditional Spaghetti and Meatballs with her grandma.
    When they were plating it grandma insisted that meatballs be served on a separate plate and women were never served more than one!
    Giada said “I don’t care, I’m hungry, I’m having 2”! The hell with tradition!

    Some days this might be my favourite film. I can always watch it, get invested, laugh, get caught up in their lives, love them like brothers, and enjoy their big night, and be there when... y'know.

      Risotto is one of my favorite to make. When I make mushroom risotto, I’ll take all the odds and ends and make a batch of mushroom stock, very good mushroom flavor throughout.

      That’s interesting. It helps me appreciate the scene even more. Maybe since I’m an anthropologist, whatever that means, I’m drawn to this scene because it reminds me of a busy intersection with cars, bicycles, pedestrians, blimps, and spectators. So glad you commented!

      People are people. Most are used to a small selection of diet items; especially true in the fifties. Most importantly, they're customers, so they should be treated with patience and respect, even the frustrating ones. The rude ones, feel free to spit in the risotto.

      And these customers were rude, which was 90% of the problem. Be picky, have bad taste. Fine. But bad manners is one thing to never be forgiven. The problem nowadays is that you tell off one rude customer and they hurt your business with a negative review.

    A brilliant cast, a sharp, witty script & great direction. Such a happy memory too. Checking the newspaper to see the times & theaters where this was playing. Dinner before, or cake & coffee after. Thank you for sharing this. I guess I can never leave the couch this Friday nite & just "stream" it 😔 . WHAT A WONDERFUL FILM! "BIG NIGHT" is truly a treat! If U hv rd my, (long - sorry), post, I highly recommend this charming, "feel good" film to anyone. It is a gem.

    It took me until yesterday to see this movie, after years of wanting to do so (long story). I relate to Primo's rage against ignorant diners, but I also relate to being an ignorant (though not boorish) diner. It reminds me of something a musician friend told me. If they ask for "Mustang Sally," you do it even though you'd rather take a bath in sewer water than play that for the ten thousandth time. If you're going to cater only to customers with good taste, you'll never make a dime.

    This movie inspired me to buy a Timballo pan and make a Timpano with my kids. Delicous and fun, though really involved and initially overwhelming. We were glad we did it and loved the meal!

    anyone else notice there's a continuity error? when the server goes to give her the plate but in the next scene, he's way back behind the table again, going around her and then finally setting the plate down

      One of my all time favorites. I grew up in Italy until the middle of high school and this is so authentic about how Italians are with food. I texted my dad this clip 5 minutes ago and he immediately was like, I need to see this again. He texted me back just now and was like, I found it on demand and am watching it now! Lol!

      "She's a philistine(.)" I served a perfect roasted beef Bordelaise and my uncle started salting it before he even tasted it. I just took a deep breath, took a deep drink, and ate in tongue-bitten silence.

    Just watched this for the first time and was howling at this scene: when I was 10 or 11, I asked for spaghetti with mashed potatoes for my birthday dinner. My mom told me those didn't go together, but she made it for me anyway.
    Don't worry, I've developed my palette a little more since then! >.

    I worked at a steak house that served one dish that has a already chopped steak, it was usually ordered by seniors, but every once in a while ( more common than I’d have liked) some macho guy would come in and order the meal because it was also the only plate that came with mushroom onions and a sauce on top already, they ordered it thinking they’d save a few bucks, not realizing the steak would come like that. I had to get a manager involved so many times because the guys would think we submitted the order to be pre chopped and be pissed cause it somehow implied they weren’t as masculine as they made themselves out to be. I started leaving one menu behind at the tables that ordered it, made sure to say it was incase they needed anything so I didn’t seem rude, and I’d be sure to tell them they can check the menu while I get a manager once they’d complain. People take so much offense when you try to correct them about their order without the menu in front of them, and if you try to inform them while they’re ordering they get frustrated because “ I read the menu” so I know I’m f’d outta my tip either way

    I find this painful to watch. Painful. It’s a brilliant scene, but I find it painful. This isn’t a scene from a movie, this is a scene from real life.
    She’s impatient, condescending and ignorant. The husband is embarrassed and will do anything to appease her. Secondo is irritated but has to keep everyone in the building calm. Primo is impassioned with this food, but uncompromising. Oh and Mark Anthony had no idea what’s going on, but knows the tension is there.
    Does anyone else feel the pain for all these people? (Asking for a friend) 😆

    Can't really tell from this quality. When she's saying that she doesn't see anything resembling a shrimp or scallop, is it because they're diced, or is it more that shrimp and scallop were part of the stock that made the risotto?

      I was thinking about portion size matter. My guess is Primo insisted on traditional tiny risotto portion size but Secondo was trying to please Americans' eating habit, so he added one more Primo approved portion on top of it to make it bigger. But then, I didn't see anyone was holding another portion on hand so I really don't know.

    So, did the risotto not have any seafood in it? I have not seen the movie, so apologies if this is explained. But if on the menu it said 'seafood risotto' I would expect it to be rice with seafood, but this is seemingly risotto *flavored* with shrimp and scallops.

    Isn't the "criminal" lady also the character of Shirley in the Marvelous Mrs. Maisel? Caroline Aaron? She is smoking during lunch also in Mrs. Maisel. Interesting habit still more than 20 years later 😂 😂 😂 . Such a touching lovable film. For a nice evening with friends and risotto and WITHOUT spaghetti. Otherwise Tony Shalhoub throws a cooking pot at your head and becomes very angry. That's something nobody wants!!! 😇 😇 😇

      Kojarzę, że kiedyś tak. Przypomniałam sobie teraz definicję "filisterstwa". Dawno, nie słyszałam i oczywiście nie używałam tego słowa, które nie wiadomo dlaczego, wyszło z obiegu, a nie powinno, bo filistrów namnożyło się i to z karykaturalnie rozrośniętymi nowymi aspektami w ujęciu starej reguły. Filisterskiej, rzecz jasna, choć po Paździochowemu. ST między młotem a kowadłem. Demonstrował sztukę relacji międzyludzkich smarowanych wazeliną. Klient ma zawsze rację, więc po co mu mieszać w oswojonych smakach. Niech je, jak i co do czego chce. Przynajmniej wyjdzie zadowolony i będzie dobrze wspominał. Że się najadł i jedzenie było "domowe". Najlepsze to, co dzieje się w kuchni. Szczypta do rizotta z nabożną czcią mistrza i jego nerw z garnkiem. Chwyciłabym kiełbasę z haka, bo nie poszłoby w koszty, mogłabym rzuty ponowić, a może skupiłabym się na samej kiełbasie, gdyby zapachniała suchą krakowską. Zapach nieziemski dla Tadka Niejadka.

      Like it or not, the cook. The patron can eat at home or wherever else. You go to a restaurant so that someone else serves you food and cleans your dishes. You can make whatever food you want, but enough customers have to like it if you want to staying business. The whole gist of the movie is that Primo is a great, but uncompromising chef, but their restaurant is failing while a less authentically Italian restaurant down the street is thriving. There's only one table with customers that night. As long as they're paying for their food, just give it to them.

    The risotto prop used in this scene confuses me. I've eaten and made risotto enough times to know what it looks like. It's made with broth and typically uses a liberal amount of butter too (among other ingredients). Both of those things end up giving the risotto a yellow-ish tinge. The risotto in this scene is eggshell white. And the grain on that rice does not look like arborio rice. It looks like plain white rice. They also say it's supposed to have seafood in it but you can clearly see there's no seafood.
    If they're trying to make that woman seem uneducated about real Italian food, which is the point of the scene, they should have used a better prop for the food. It's especially confusing given the later scenes where you can tell a lot of though and care went into the food they show.

      CivilityOfEnemies I agree with COE. A better food stylist should have been employed (or explain that it was just a seafood stock). And saffron is not always used is seafood risotto.

    I used to be a cook, and I never liked the stuck up cooks that think they know what the customer should want. His job is to make the customer happy. Shut up and make the spaghetti... and if she asked for a side of mashed potatoes... giver her that as well ha ha. I made additions that I thought were disgusting - but got compliments from the happy customer. That is the job. Cooking snobs can be such assholes 😎

      There are four positions, four types. There are the two extremes, representing the two predictably opposed positions, one at each end of the spectrum, types A and B; and then there are two types of mixture positions in between: type C who mindlessly and haphazardly tosses together elements from each extreme; and type D who mindfully and carefully blends the best and most appropriate elements from the otherwise opposed positions. Types A, B, and D are all humorous. Type C is almost too dangerous to be funny. The film, I think, is about ethnic identity, change over time, assimilation, and the sacrament of Italian food. What would Primo say about pineapple on a pizza?

      Then get your personal chef. It seems that that is what you are looking for. The customer is not God or king. He comes into the restaurant by agreeing to a simple contract. He will consume the food the chef had picked as his signature style and theme and in return he will get the best of service and a perfectly cooked meal. If you feel entitled to completely go off menu anywhere, restaurants are not for you.

      @@susn1987 You must not have ever worked in food service. I cooked for years. Our job was to make the customer happy. We had menu items, but were very flexible in how it gets prepared. That is what successful restaurants do. 😎

    The lesson here is, if you're an Italian national and you move to America to open an Italian restaurant, try to learn a little something about Italian-American culture. Yes, in old-world Italy there is no spaghetti & meatballs, but, surprise, in Italian America there is.

      But it's an authentic Italian restaurant that serves, surprise, real Italian food. If you want meatballs, make it at home or go to an American eatery. But stay away from the real stuff. Or even better, stick to your frozen "Italian" tv dinner. And learn the difference. Historic, worldwide renowned Italian food has no reason to bow its head to some 100-150 year old variations from immigrants. Like hell they have to adapt to your "Italian" food.
