    Awesome brine recipe!!! You can also use a gallon sized Ziploc freezer bag, placing the chicken in the bag and pouring the brine mixture in, with about 1/2 the salt and sugar and just one bottle of beer to completely cover the chicken and then drink the rest :)

      I think so. I think just stay away fro a real strong flavor beer if you want to replicate the recipe. I did use bud in a different chicken recipe and it turned out nice.

    Question: In quite a few of your videos that deal with the brining of poultry, the next step you show after the brining period is over, is just wiping down the bird, and not rinsing it under water to remove the excess brine.
    Just wondering....is this something recently new?
    Seems like every video I’ve ever seen concerning brining mentions to RINSE AFTER the BRINING PROCESS, then patting dry, then either injecting w/marinade, or applying dry rub seasoning, if desired.
    Just wondering if one method is superior to the other.
    TIA, for your suggestions and advice! 👌

    • @Armadillopepper
      @Armadillopepper  4 роки тому +1

      The FDA recommends against rinsing chicken anytime due to contaminating the sink, countertops and everything in the surrounding area. In our experience rinsing doesn't produce a different result from just wiping with paper towels. So, we wipe 😁.

      Thanks for the quick response. If I decide to brine this year, it will be my first attempt at doing so. Just wanted to make sure of the process before family and friends are greeted by an overly seasoned gobbler! LOL
      Purchased my first “Big Easy”
      Monday night. May end up doing a “practice run” with some chickens this weekend just to get an idea of what to expect from the BE when I do my Holiday Turkey , but your videos seem to be “text-book, step-by-step detailed” so that we may get the same great looking end results!
      Again, Thanks.

      Don't brine more than 24 hours or it could get salty. We have a new Big Easy turkey video coming out this Sunday. The girls said it was the best turkey they ever had.

    Wow! That's all I can say. I saw duck fat at Wal-mart a few weeks ago - it was like $8 a spray can or $14 dollars for a quart jar of it. I may need to get some to try on chicken. You should get out fishing, Jeff. The bass should be about ready to go on their beds down there, shouldn't they?

    • @Armadillopepper
      @Armadillopepper  5 років тому

      This is the time of year for them to be on the beds. Been in the 80s for a week. I also ordered duck fat on Amazon. I think it was $10 or so for a small jar.

      @@Armadillopepper Is it safe for the grill to wrap the lid with aluminum foil to hold more heat in? I live in temps under 30 degrees this time of year.

    • @Armadillopepper

      I've never had to do that. Just guessing, but don't think aluminum foil would provide much insulation. Just guessing.
