Not sure why so many people are knocking the cooking practices, no gloves, charcoal fires, carbon build-up, the food was washed so many times and cooked at high temperatures that make sure everything is safe to eat. They make it intentionally like that and you cant imagine how cancerous that food is even if you scrapped the charred area, it still not recommended to eat them. The chicken is fine, but the Pork is no-no, I will go for the other stall who carefully cooking that crispy pork belly rather than doing like that. I can smell the amount of char even if you hide them with sauces, it still there.

The first thing I learned on my first job in a slaughter house in the 70s in Wigan, , was , never cut towards yourself, and a blunt knife is more dangerous than a sharp one, nice vid.
