American here, I wish I could get something like this in Chicago🤤 a person can get rich in America selling a sandwich like this beautiful creation. Just throw some teriyaki sauce on it and call it a Japanese cheese steak..watch the money flow!
I'm assuming for speed when they're busy and also for keeping portions consistent. It looks like 2 pre-portioned balls of steak per sandwich - so if the cook has an order for 2 sandwiches they grab 4 balls to cook and split into 2 sandwiches, if they get an order for 6 sandwiches they grab 12 balls to cook and split into 6, etc. It would be slower to do the math and weigh out exactly how many ounces of steak is needed for X-amount of sandwiches per order, also more opportunity for mistakes if they go the other way and just "eyeball" how much they need for an order.
Looks like 1 ball = 1 single meat sandwich (video showed double meat). On a slow day they might cook the balls one at a time - but getting started they are making 6 sandwiches at once so cooked a bunch of balls together. I guess it depends on how consistent their order rate is. But yeah, if they were cooking 6 or more at a time most of the day then I would think about making a mix of 6-up and 1-up balls.
You can tell he used to work at a corner store in Philly and went to culinary school on the weekends because this looks amazing. "Lemme get a ahh salt pepper ketchup fried onions and mayo with some cheese fries" 👍🏾

Well I have to say his chili recipe is darn close to mine (his looks more spicy and has more garlic) so I will say it's definitely "American" style on that--however there are dozens of different "American style" chili recipes lol. BTW, that type of chili is awesome when served over Fritos and sour cream with shredded cheese on top ❤

American here: In the USA the kind of chili that has beans in it is eaten like a thick soup during autumn and winter months when it is cold. We actually have large competitions where people whip out the spices to see who can make theirs the hottest while maintaining good flavor. The kind of chili we use as a topping does not have beans in it so that it can a be a bit thinner and less messy when being used as a topping. Either way, the food looks amazing
I only eat chili with meat and beans regardless of what it's going on. You might as well make a coney sauce which is fine too. I'm American and if it doesn't have both meat and beans, I don't want it. If I want bean stew or meat stew that's what if make. This looks like chili sloppy joe.

Kirkland cheese is very good especially that American swiss mix that is made in the usa but not sold here anymore (at least not in my stores). Also, what specifically is wrong with the prep? I mean, you're right, this definitely is not American, and any place around here selling it would be charging 20 dollars for it and put in half the meat and cheese.

I mean, imagine some American making a video of Japanese style tonkatsu ramen but using Spaghetti noodles, chicken broth, hot dogs, and canned tuna.
