I used to do research on long nose gar in the Great Lakes. Dissection was incredibly difficult. We would use hedge trimmers to cut through the skin. These fish are incredibly tough, they can even use their swim bladder as a lung if oxygen levels in the water are low allowing them to live in very warm shallow water.
Best way to cut one of them is with snips. We have even used tin snips as the scales are like armor and you'd be hard pressed to cut through them with a knife

Nail the head down, then use a sharp hatchet and remove the hard skin and scales along the spine with a hacking motion. Once you get it started, hold on the end and pull down as you chop. Once that's done. Do what you did a peel it away. Trust me, a sharp hatchet is faster and will save your cleaver from hammer damage. 😉

For the fish, they haven't prepared it before. (Judged from what they said, as well as the way they did to remove it scale.) For the dish, it is common dish in Thai. Even streetside food stalls can do the dish. It is not that unique or fancy dish to be excited. (Walking catfish is commonly used. In fact, I have never heard about using others fish for this dish before.)
If you know Thai language, then you will know that they haven't had any experience with this fish before. What they did to remove its scale was improvised. The fish may look scary. For the dish, it is common dish in Thai. Even streetside food stalls can do the dish. It is not that unique or fancy dish to be excited. (Walking catfish is commonly used. In fact, I have never heard about using others fish for this dish before.)

If you know Thai language, then you will know that they haven't had any experience with this fish before. What they did to remove its scale was improvised.
The fish may look scary. But they are much more passive than Arapaima (recently uploaded by this channal). They both are popular exotic fish for Thai fish keepers, along with Redtail catfish, Tiger catfish, Peacock Bass and other exotic predator fish.
For some reason, I have a feeling that the next video may feature one of these fish.
