Roman Style Tripe Recipe | Beef Tripe Recipe

    Learning how to prepare beef tripe might seem difficult, but these days it's pretty easy if you can find it. Beef tripe is sold already cleaned and disinfected, though our Italian Grandma boils it for 15 minutes in salt water with onion, carrot and celery to remove the last of the odor.
    Considered one of the bizarre foods of Italy, Trippa alla Romana is nonetheless a favorite Italian recipe that dates back to ancient times.

    INGREDIENTS for Beef Tripe Recipe (Trippa alla Romana recipe)
    beef tripe - 1kg / 2.2 lbs (cleaned, boiled for 15 minutes in salt water)
    onion - one, chopped
    carrot - half, chopped
    celery - one stalk, chopped
    crushed tomatoes - 800 grams
    fresh mint - handful
    pecorino romano - 4 Tablespoons or to taste
    dry white wine - 1/2 cup
    olive oil - as needed
    chili peppers - fresh, to taste
    fine salt - to taste
    black pepper - to taste

    What's interesting is in Chinese we called that stomach 百叶 "hundred layers" which is almost the same meaning in Italian too!

    I'm not a tripe guy but that looks good. And I know if a little Italian Grandma made it, IT'S GOT TO BE GOOD👍! I'm going to try and make this.

    OMG it looks delicious! Reminds me of my Grandmothers cooking in out Italian family! Hers was a different version as my grandfather was from Bari in southern Italy off the Adriatic coast. I have to try this version! Thank you!

    Looks delicious; I definitely want to try. Before I tried tripe for the first time at a Szechaun Chinese place down the road, I gotta admit I was disgusted by the idea, but after I tried tripe pan fried in spicy oil with greens, I fell in love. It would be really cool to try a different kind of tripe from a different culture and expand my palate.

      you have to simmer it for 2.5h to 3h , just like you doing beef stew

      I always boil my tripe then dump that water then put the sauce in it . Also cleaning out the fat from it it’s the stinky part of it . I personally love Mexican food that uses stomach with nice chiles but African food with stomach is amazing so many flavors

    Growing up in a Sicilian family on my mother’s side, we ate this at weddings a lot. Unfortunately, now I can’t even find tripe anywhere except menudo at Mexican places.

    What is the difference between Roman Style and Florentine style tripe? They seem pretty much the same, except for the mint in the Roman style.

    It looks beautiful. I need your help/advise. I was making la trippa, but I cannot get rid of kind of “special smell’ at the back of my palate. The sauce is great, but trippa itself has this aroma I cannot stand. Is it something missed in cleaning?
    I noticed some nonnas in Firenze and Palermo areas soak it first with lemons or oranges…
    What do you suggest?

      These days, most butchers or groceries sell tripe already commercially cleaned. However, Grandma Lulu still boils the 'cleaned' tripe for 15 minutes in salt water with some onion and herbs (as seen in the video) to remove any lingering smell before using it in the dish.

      I soak mine overnight in water, salt and vinegar. I think it helps. M Hazan recommends dunking the raw tripe a few times in boiling water to scald it. It “tightens” it up, but I don’t know if it helps with the smell.

    Is there a cleaning process for the tripe?

    Can tripe be medium rare or well done just like a steak?

      Great question! Tripe isn't like steak. While there are many ways to prepare it, it is either 'cooked' or not.

      You can eat it raw. Just add a bit of vinegar and salt it lemon and salt.
