  • Tripe soup (işkembe çorbası) in Turkey is considered as the best hangover cure and often consumed at night after drinking. For some it's one of the best tasting soups with it's gelatine rich and tangy flavor and unique texture.
    Enriched with a lemon & egg sauce called "terbiye" which is similar to salsa blanco or avgolemono and served with garlic vinegar sauce, this soup is the best and most delicious hangover remedy!

    Ingredients:
    • 1 kg tripe (veal or lamb) - pre-cleaned
    • 1 cup milk (200 ml)
    • 2 eggs
    • 4 tbsp flour
    • ½ onion
    • 1 lemon
    • 2 tbsp butter
    • 4 cloves of garlic
    • 1 cup red wine vinegar
    • 1 tbsp baking soda
    • ½ cup white vinegar (to clean)
    • salt to taste
    • chili flakes to garnish

    Living in Istanbul once, there was a restaurant on my way to work that served this first thing in the morning. In those days, I'd sometimes have something of a hangover, especially stomach-wise. Upon the recommendation of local colleagues, I tried this and it was a very good remedy. Can't bear tripe but this soup, not to mention the squirt of lemon before drinking it, and the pepper, made it palatable. Probably also very healthy.

    Actually for Turks, if we take the lambs/cows life to eat, we believe that we have to use every single part of it. This is how we appreciate this animal which give its life for us to eat.
    So we dont waste any part

    I've only ever had tripe once and I loved it but I wasn't hungover then. These days I am frequently hung over so this is a must try dish for me for so many reasons!!!! Awesome cooking once again Hungry Man this Turkish Tripe Soup looks delightful...Now I just have to find some tripe...😋👍

    Hi i am a girl from Bulgaria, we really enjoy shkembe chorba here as well I i am making it with pre cooked frozen beef stomach and never tried to do it with a raw one, becouse i was afraid that it wont come up nicely but i will give this one a try
    I truly believe that with the broth from the boiled tripe it will trun much more Amazing

    Greeks have a similar soup called Patsas, they also use the trotters, skipping the egg and flour wash. I think this is superior because of it. I make the Greek version every winter as a starter. This year I will try this, but with the trotters as well because they have more flavour.

      We also have a soup with trotters and it's called Paça (pronounced Pacha), probably same or similar to Patsa ;)

      This soup is a Turkish soup. It's called ''İşkembe Çorbası'' in Turkey.

    In Mexico there's also a beef tripe soup called menudo, but it's so very different from this video. I think it's very interesting that both turkey and mexico say it's a hangover cure lol I think I'll try this recipe one day, but veal tripe is very hard to find. Beef tripe is easier.

      Most people use beef or lamb tripe in Turkey. Try it. I bet it will be delicious :)

    I've just made it according to this video and I'm amazed at how much better it tastes than the Greek traditional recipe Do you recommend following the same for trotters as well?.

      Glad you liked it. Yes, same can be done with trotters, there is also a version of trotter soup without the egg and yogurt / milk temper, just lots of garlic and vinegar.

    Wow! You make tripe look delicious! 😋 Tripe is not something I grew up with, but is very commonly used in many cultures. I would definitely give this a try! Especially if I am hungover👍

      It is delicious and chewy soft 😁 yes it takes a lot of preparation before adding in any dishes you want to cook but it’s worth it. I’ve tried this soup before and it is gorgeous and yes it does cure your hangover like magic 😁

    I usually boil them in a steamer for an hour and when they are ready, I fill the plate with tripe and juice, put half a lemon and go crazy! Nice cocking.

    i love tripe but am more accustomed to eating it in spanish/italian dishes with tomato - a white soup looks odd to me despite the garlic, lemon, vinegar additions - i must get one of my Turkish friends to make it for me - would still like to try it.
