I found tripe, for the first time, at my local supermarket this morning and came straight to YT to find a recipe. Lo and behold, Chef John delivered. I had it in Italy years ago and loved it. It wasn't cut up, just folded into the sauce. Squisito. Offal is awesome. Chef John, please add braised sweetbreads to your bucket list. You won't regret it. PS - dipping crusty bread into the sauce is a time honored tradition, but if you mop up the leftover sauce in your plate with a piece of bread it's called "scarpetta" which translates to "little shoe". My Italian cousins in Livorno taught me that, even if they had no idea why it was called that 🥿
OMG, I made this last night and it was AMAZING!!! I also used your recipe for the Marinara Sauce. Thank you so much for this recipe Chef John. My family loved it. BTW, Chef John's Marinara Sauce is the best I've ever made. And yes, the mint is the secret. A must for this dish.
It looks like tripe is making a comeback all over the world. From Dominican tripe stew, Romanian and Turkish beef tripe soup, Italian (I must try this recipe), Mexico...and it's about time.

I recently had tripe for the first time while on holiday in France and it was... nice but a little soupy. Not a whole lot of special flavours. This however looks a hundred times better! Next time I go to the butcher's, I'll ask if they can order some tripe for me as they don't usually stock it :( Looking forward to trying this dish and thank you so much for sharing it :D

When I visit Italy every time in Trieste I stop by restaurant and have plate ( large !) of tripes.Now I learn from you how I can make this fantastic dish by my self. Looks fantastic! (I'm a big fan of tripe--Menudo, Filipino Kare-Kare, etc). But since this is a Roman dish, shouldn't you use Pecorino instead of Parmesan?

Not chef John, but I have made this dish. While mint or parsley is usual, I can’t see why basil wouldn’t work. Don’t let the people who say things like, “if it isn’t exactly like I remember how my grandmother made, it’s not real tripe alla romana!” The Mexican variant (aka menudo) uses dried or fresh oregano, and hominy instead of chickpeas, but is otherwise pretty much the same.

it was awesome! so easy to make,and it was not chewy just make sure that you boil it plenty long even if you let it cook 1/2 hour longer (the longer the better) i will use this recipe again....
Is tripe a similar taste to beef tongue? I have had tongue a few times as a kid but have never had tripe. The tongue isn't bad but it isn't good either.
I usually use tripe for guatita or sopa de mondogo; the concept is quite interesting so I will see if I can make it this week as i have the ingredients at hand :D

And then i found out that Chef John did a recepie with tripe!) Cooked this dish yesterday, This is super good! I think people shouldn't be so picky and give it a try! Its so unique and delicious! I tried this dish a couple of weeks ago. I bought some ‘Rinderpansen’ in a German ‘Edeka’ supermarket. It didn’t have the honeycomb structure, though, it was more like a chunk of white skin. Well, the sauce was alright, but I can’t say I would like to have it another time. But I'm always curious to out something new.
Tripe is an exquisite dish. The mint was interesting. I've always seen it cooked with cilantro added at the end, but might try it with mint some day. In regards with the cheese, I don't know, I'll pass on that one.
9 years and I still cooking this , amazing , only twist I added was when I boiled it , I added basil leaves and seasoning, exceptional taste , blessings ❤️

How do you prep your store bought tripe before final boilling. Tried yr recipe, it tasted like bleech.. that's how i found out you should pre prep yr tripe ??

i have used this recipe and it was awesome, feel free to try other types of beans! i used black eyed,and kidney beans...

With tripe made one of the most famous Greek dishes , patsas , It is very tasty and the best hangover remedy !
