    Ingredients for Fried garlic:
    1 lb = 450 gr fresh, peeled garlic
    3 cup = 720 ml
    Ingredients for SAUCE:
    1 1/2 cup = 360 ml garlic oil
    1 1/3 cup = 320 ml soy sauce
    1/2 cup = 120 ml cooking wine
    3 tsp = 8 gr tapioca starch
    1 Tbsp = 14 gr water
    1 cup = 215 gr sugar
    Ingredients for Egg noodles:
    Flour mixture:
    3 cup - 2 Tbsp = 380 gr bread flour
    1/3 cup + 1 Tbsp = 67 gr vital wheat gluten
    1/3 cup = 53 gr wheat starch
    1/4 tsp = 1 gr turmeric powder
    Liquid mixture:
    2 eggs + 1 Tbsp veg. oil + water = 190 gr
    1 tsp = 5 gr kosher salt

    Thank you.
    I will give this a try with my fresh milled flour (whole grain wheat) instead of the store bought flour and see if it holds up.
    I find the Pasta Maker very easy to clean if I leave it until the next day. The dough dries, shrinks and practically falls off or out all by itself.

    I only put 53g wheat gluten and replaced it with bread flour cause i ran out of the wheat gluten , and I also left it uncovered on the countertop for few hours, maybe that’s cause the problem. I will try again with the correct measurement. Thank you for sharing and hope you can post more videos using this machine 😊 🙏

    I love your video and have just copied down the recipe. You provide very precise details for the whole process. I am planning to make fried noodles as part of an Asian lunch meal with friends.     I tried the noodle but it’s “hard”, need to cook for a long time plus let it rest in the hot water for a longtime before I can actually eat it.maybe I did something wrong, 😒, I let it rest in the counter uncover it for few hours before I cook .but it’s a great videos, thanks for sharing and hope you can have more video with this pasta machine.

    Can you please explain your flour choices. Wheat starch will lower the protein and then you add wheat gluten that will increase the protein content. It’s like cancelling each other.

      Sorry for my late respond, you can buy wheat starch at any Asian grocery store, wheat starch and wheat flour aren't the same.

    How much garlic did you use when you fried it up? Do you just use garlic in a jar? I've never seen that much garlic so I'm wondering where you buy it in bulk like that. Your noodles look delicious!

      grandepuce8 Costco sells organic peeled garlic in 1 lb bags. She fried up 1 lb.

      Hi chị, this one is a newer version of my Philips pasta maker amzn.to/3Kil7bL
      I had it for 4,5 years now and like it alot. I bought mine from Costco, you can check with Costco first because they have better price and more accessories compare to the one on amazon.

      Yes, some recipes that call for gluten flour are referring to vital wheat gluten flour. Please keep in mind that Vital wheat gluten flour, high gluten flour/bread flour are totally different in use.

      The oil should be hot but not smoking hot. If you test with chopstick, it should have bubble from rapidly around it. Fry garlic are easier then fry shallots...

    dont understand why you turn off the Philip before pouring the mixture ? I like this receipe because you dont use sodium bicarbonate(baking soda).

    max capacity is only 500g but yr ingredient weight 500g + 200G = 700g. Machine will spoiled?

      Max capacity for flour is 500g, water and 2 eggs will make up 190g- that’s the formula of Philips Pasta Maker machine.

      Hi Judy, I'm not so sure since I have not freeze my noodle before, but I think you must thaw it in the frig or defrost in the microwave before cooking. This noodle will keep well in the refrigerator for 1 week.
