I press my peaches in a fruit press.
Then take the juice and add pectic enzyme (to clear the juice of cloudy particles)
Add some sugar if you want a stronger ABV (alcohol by volume)
Next add Lemon juice to lower the pH.
After that add black tea for tannins.
Then I add wine yeast.
And that’s pretty much it, to make good wine.
I use the left over peach material from pressing the juice to make a second wine that I distill into peach brandy.
🍑 😊
Spectacular 🤤
Now I'll need to buy some peaches
Good idea 😉🍑🍾
Bravo
I bought some but I bought them for a cobbi🤣🤣🤣. When I was young ( 19 to 21) I use to drink a wine called Peach Creek. It was my favorite. Nowadays and shortly after (age 24 on) I could no longer drink wine. It gives me heartburn. I'd love to make this wine if I could drink it and I would even though but none of us drink alcohol.i do cook with wine though. I bet peach wine would be good in many dishes especially desserts❣️❣️❣️
@sublimnalphish7232 good idea for dessert 😉 you can use it for zabaglione
Caro cuoredicioccolato The smooth skin peaches are called Nectarines in english. pelón in spanish ... so also called pelon peach in some parts of the US
Thanks for the information 👍🏼 and the help 🙂
Another Homemade wine ! 🤩Its been minute ! 😀 Spectacular ! Cant wait for peach season to try this out ! Thanx Andrea !💪
Keep us updated 👍🏼 Paul 🍾🍑🥳
It's peach season already.
Can’t wait to try this!
🥳 brava 🤩
I'm super excited to try this out, I enjoy peach wine.
Keep us updated 😉
Good stuff! Thanks for sharing.
Thanks for watching and sharing the video 👍🏼
This isjust about halfway towards a bellini… less sweet but there’s peach flavour. Seems delicious to me!
What you can do after fermentation to ensure you get sparkling wine no matter which yeast you use, is to seed your finished wine with a very small amount of champagne yeast. Champagne yeast is usually a ‘bayanus’ strain, and those are often so-called ‘killer yeasts’. Any viable yeast in you wine serves, in addition to the added priming sugars, as food for the champagne yeast. It might take a little longer for you wine to become sparkling because you add so little and it needs to establish itself. But that’s also depending on general the conditions (acidity, temperature,…). But on the whole, after 2-4 weeks you should have sparkling wine at a higher success rate.
I always keep champagne yeast on hand for priming wine an if I have even the slightest doubt it’ll go sparkling I use it.
Thanks for the advice 👍🏼 I should buy the bayanus yeast 🙂
Thanks again
Thanks to you brother my wide and I been making your recipes for 4 years and all NEVER disappoint ❤❤
Thanks for your support and for sharing the videos with friends and family 🤗
Love it.
Thanks 🥳
Amazing video as usual my friend Andrea😊. Will definitely gonna try this in peach season. It's may be because of yeast alcohol intolerance ur wine becomes flat or may be due to leak flip top bottle. Anyway ur videos are always less complicated and very informative. N also u never include high end expensive equipments..... still you deliver great wine at end. Ur simplicity has made u famous.I learn to make beautiful wines n champagne from ur tutorials. Your efforts to make such beautiful tutorial videos are highly appreciated. Keep up the good work dear friend Andrea. 👍🏼👍🏼😊😊
Yes 😬 flip top bottle
Thanks my dear for this beautiful comment
Spectacular video Andrea. Just going out shopping now I will have to buy peaches
😉 good idea 🍑👍🏼
Good work!
Thanks 🙏🏼
Time to buy peaches now. ❤❤❤.
Black grapes wine is aging can't wait for that as well.
Spectacular 🥳👍🏼🍷🍾🍑
Pesche al vino rosso in the summer is lovely also
Yes 👍🏼 I like it too 🥳🍾🍷
Good idea.
Thanks 😉
I think you mentioned adding almonds somewhere in the video. Almonds contain emulsin, which breaks down cellulose; so if you're leaving the peach skin, the almond enzyme is beneficial.
Thanks for this good information 👍🏼
The color is, how do you say... SPECTACULAR!
Yes 😂👍🏼 it is spectacular 🥳
Amazing spectacular👍😊
Thanks 🥳
We had a family friend that used to make liquor out of any grain and any fruit but he used to also take my moms old jars of home canned fruits and jams to make liquor.
Spectacular 😂👍🏼🥳
13% is like a Pinot Grigio. Yummy! I bet that wine from the bottom of the fermenter would be refreshing over homemade ice cream😊
I should try 😉
I love your T-shirt!!!!

Nice! I try at the Moment a Honey-Melon wine :)
Very interesting 👍🏼 keep us updated 🥳
09:25 - 4-right-arm circular motions….that’s a winner!
😂👍🏼
I dare you to make a batch of white (green if you prefer) wild grape wine. I've managed one once. It was super dry and ultra nutty with short but extra crispy finish.
It's just pure hand-drawn juice, no commercial yeast added for the WIN!
Yes 👍🏼🍾 it will be spectacular
I'll make it
🥳 spectacular 🍾🍑
Hello brother,
In my experience it’s difficult to get something with that high an alcohol content to sparkle. Usually by the time the original fermentation has taken place the yeast has reached its maximum threshold for what it can tolerate alcohol wise. I have gotten carbonation in something around 11.6-12 by adding champagne yeast just before bottling. But that can effect the taste of your final product.
Could be 👍🏼
Yes. I’ve had the same experience. Alcohol will slow down yeast activity. I’ve tried adding a little bit of champagne yeast and sugar (or dextrose) at the end for carbonation, but it sours the final product somewhat.
@cmsense8193 Thanks for sharing your experience 👍🏼
Yeah true but ur wine would be cloudy as all the sediment will settle down at bottom n after de cocking it will get mixed in ur wine. So home made champagne is always cloudy. Anybody having the solution for this please share
Well you really do PREACH wine😂. Another spec-taa-kula video. Thank you. And cheers🍷
😂
spectacular
🥳👍🏼🍾 thanks
I definitely prefer my wines sparkling! 👍
Me too if not for all the heartburn I get when I drink any wine 🫤🥺
Me too 🥳👍🏼🍾
I did your recipe of the white wine once but it turned out quite yeasty tasting. This seems a bit easier and I will try to filter it more this time. Would you recommend using a campden tablet in the beginning? :)
Love your videos!
What kind of yeast have you used it? For wine or for bread?
I used no yeast, only natural from the grapes. @@Spectacular-cuoredicioccolato
درود وسپاس....goodwine...goodman
Thanks 😊
What if you used an immersion blender to puree the cooked peaches and then added that to the fermenter? Would that have deepened the color, added more natural sugars, and given the wine a more peach-forward flavor?
You don’t need to blend it because it will be difficult to filter, if you add the fruit in the fermenter you will have the same result 👍🏼 but not peach jam 😉
Thanks for amazing recipes and vids , Have you tried to make Carob wine ?
What might be the recipe as for addition to the extracted Carobs resin ?
Cheers
No 😬 never 🙂 sorry
Hey bro, how are you.
Again spectacular.
Thank you for video...
Thanks my dear 🥳
Hey bro. You're from Tamilnadu?
Where did you get the fermentation kits?
Hello again from the UK. I noticed in your video that you did not transfer a little yeast from the fermenter to the bottles after adding 10g of priming sugar and therefore the wine failed to carbonate after 3 weeks of conditioning. Nice video. X
The problem was this one Be careful to the bottles 😱 #wine
ua-cam.com/users/shorts4N08t-We9e4?feature=share
If I were to make an educated guess, I'd say if the wine was slightly sweet that the added sugar did not ferment. SG
I need to check the only bottle that I am sure close properly, the beer 🍺 bottle. Some friends said that could be the bottles 😬
Fantastic , lots of love from Iran , I just have on question , does this wine requires daily stirring or not ???
Thank you
Only if you add the fruit too
A question: at the end when bottled and corked, do you leave the bottles out or put them in the fridge for the last 2 weeks? thankyou for all your inspiring content :)
Room temperature at list for 2 weeks
@@Spectacular-cuoredicioccolato Thank you :)
I haven’t seen such large and beautiful peaches since I was a child almost 50 years ago
You should visit Italy in spring season
Do you think it got sweeter because you added the sugar to make it sparkly, but the yeast was dead? I just did peach jam. Wished had watched this video to try making peach wine.
Btw, the other "peach" seems to be nectarine.
Yes 👍🏼 it’s possible
Thanks for the help with the name 🙂
🎉🎉🎉🎉🎉🎉🎉no words
Thanks 🥳🤩👍🏼🍾
You know it's really tasty when the guy rotates his hand while tasting it
😂👍🏼 spectacular
Nice video as usual =) I love sparkling wines also and looking to try making them myself. I have a question, I stay in tropical country so the indoor temperature is usually 26~29ish degree C. Can I still make the sparkling wine in such environment? Thanks in advance =)
Yes 👍🏼 you can
Okie thank you~!@@Spectacular-cuoredicioccolato
@luxy6014 🥳
Grazie my chef,
Where are you when doing the tasting, the background is spectacular,

Ciao ciao
On the roof of my house 🏠
The wine didn't looked all that carbonated in the end. Would you add a few more grams of sugar or do you think the yeast wasn't revived post fermentation? Grazie per l'informazione!
The sugar that you need is 10 g per liter 😉👍🏼 yes 😬 probably my yeast was weak
Could you do the same with apricots?
Yes 👍🏼
Wonderful. I love peaches. We want to store in the refrigerator. How much temperature
12*C degrees
where is this tating place , its beautiful
Torrepaduli in Apuglia
How long can can you keep this wine stored? 6 months, or year(s?
Yes 👍🏼 1 year
You add a little sugar for the purpose of making sparkling when you bottling them right!!?? And why 7.5 for the division??
Yes 👍🏼 check this ua-cam.com/video/0AyFo77Ak68/v-deo.htmlsi=eTEpNAjTRljuM8oU
I’m assuming 7.5 is the standard to find the amount of alcohol content ; )
I guess no sparkling in addition to sweetness, means there were no secondary fermentation. I think your yeast did not live (or stalled) after primary fermentation.... but it will always taste good my dear.
Yes 👍🏼 it’s possible 😬
Do you think warmth or stiring in some air would help?
No 👎🏼 air because can becomes vinegar 😬 but not sure about the temperature
Hi, NO, no air! live with the results and enjoy them, no O2 under any circumstance. @@helenscoffield
How to make it sweet and not dry?
At the end this wine is sweet
Hello! I saw that you stopped to do the starter. It is not necessary?
Up to you, it’s easier to put the yeast directly in the fermenter
❤❤❤👍👍👍😋😋😋
🥳👍🏼🤩
Are you going to make a video about peach jam?
Yes 👍🏼
@@Spectacular-cuoredicioccolato Yay! Looking forward to it!
Sir my wine always turn sour. What could be the reason and how to solve it
Are you using the airlock?
What kind of yeast are you using?
What kind of wine?
@@Spectacular-cuoredicioccolato sir I am using air lock and using wine yeast only. Could it be a sterilization issue?
@roadmess7505 yes 👍🏼 it could be
Hello! I have been enjoying 1 other English-language UA-cam Chanel on Italian cuisine. It is called “Pasta Grammar” - the husband is American, the wife Italian. So thoroughly enjoyable as well! They just bought an old restaurant space in the wife’s hometown. Maybe you can connect while they are in Italy right now. You would be a lot of crazy fun together.
I will check 👍🏼 thanks
They have the restaurant in a different region 😬 too far away
@@Spectacular-cuoredicioccolato OK. Thank you !!!
😬 maybe in the future
Make some gluten free quinua beer!
Thanks for the idea 👍🏼
What about cheating and using a Sodastream? The only concern I have is that it would change the flavor profile. 🤷🏻♂️
Yes 😬 it will be different
*it is called nectarine
Hello, dear friend, I feel that you have lost a little weight, I hope you have no problem and that you are always well, bro.❤🎉
He looks the same and has always been tall and lanky.
Thanks for the concern 🤗 I am fine thanks, probably I need to start again to exercise at the gym 😬 now I have less muscles and more belly 😂
Thank you very much for all your efforts my good friend. ❤
🤗
How to make 30% alcohol.??
You need to make a distillation process
Cause the yeast dies at arount 15% Alcohol.
