I made this! I didn't have soy milk, so I added miso and a bit of regular milk to the broth. It turned out creamy and full of flavour. For meat I used porchetta, which I warmed up under the grill. I didn't have asian sesame paste so I used tahini and sesame oil. Then added chilli oil, soy sauce, cooked egg, noodles and some greens and voila, it turned out better than okay. Can't wait to cook it with the correct ingredients. Thank you Marion for the recipe and the tips. You are such a joy to watch.

I made this recipe after patiently waiting for the doubanjiang chilli bean paste from Amazon... and it really is just as easy and delicious as in the video. Spicy but not overly spicy. This one will be on repeat!

Japanese tantanmen ramen is really similar to Hong Kong style soupy dan dan noodle. I think they are identical except using sesami/peanut paste for soup base. I like both.

Doh i added some onion and green paprica along with sweet paprica and a dash of peanutbutter. And had to use dried kefir lime leaves instead of fresh. And didnt wanna go shopping again. Love this recipe, might just have to get your new book! Is there a particular reason to use soy milk instead of say, milk + cream? That's what I use at least, and I like to add some gelatin to mimic the collagen mouth feel of a 'real' ramen. I've used your cheat ramen as a base and made my own variants, which has been so much fun
Hey Marion, I have the dbj but what would you suggest if you’re allergic to peanuts? Could I use tamari..? Or would you suggest using a cashew or almond alternative to the peanut Butter? Or is tamari effectively the same as, or an alternative to, Chinese sesame paste?
I'm not Marion but I do make this dish a lot at home - I've had success using any nut butter that is totally smooth, but that's just because I prefer the texture. Almond butter is totally fine, cashew butter might be a little too rich and sweet in my opinion
