I don't like chives in my Gyoza and I don't do the slurry. It makes the Gyoza look nice, but it makes the gyoza chewy. I don't like that texture. I prefer chopping up the ginger and veggies and salting them on low medium pan to release the flavors and then knead the veggie and meat mixture together when it's cool.

Have tried several times to make the Gyoza wrappers at home. The store bought are sort of tough, and my homemade are even tougher…might try cake flour next time?
Not bad, a little dark on the bottom for some of them. But I’m sure it still tastes amazing.
