- Since we've been making this luxurious NOBU inspired dish at home, we have no longer been ordering it at restaurants. I am making this with wild caught chilean sea bass but black cod also works well with this recipe! Let me know if you try it!

RECIPE
2 chilean sea bass fish steaks (try to find ones that are similar in size so they cook evenly)
Kosher salt for drawing out moisture from the fish
3 tablespoons white miso paste
1.5 tablespoons mirin
1.5 tablespoons sake (for marinade) + 1/3 cup (for rinsing fish)
1 teaspoon sugar, optional (I didn't add)
I’m going to try this. Do you prefer to use sea salt or kosher salt in the beginning?
I use kosher salt--just added that to the description box--thanks boo! I hope you love it! Super easy to make and now I refuse to pay for it when out lol
