What's the BEST Way to Cook Sea Bass

- Chilean Sea Bass is one of the best fish around. It's delicious, it's versatile, and especially amazing when served with Mediterranean-style vegetables and is finished with fresh basil.
What I want to know is what is the best way to cook it? Pan-Seared? Grilled? Baked?
Chilean sea bass is caught in deep waters in and around southern oceans near Antarctica. It is a buttery, firm, mildly sweet, melt-in-your-mouth fish that pairs with just about anything. It is snow-white in color and can be eaten with or without the skin.
You can grill, broil, bake, pan-sear, or poach it. Chilean sea bass is a bit of an overfished species and is often very expensive.

Okay. Thanks. I’m doing pan seared tonight.
Made it for my dad and fam 57th birthday. Everyone loved it. Thanks!
This is one of my favorite recipe for potato and Seabass
On Cape Cod, bought wild caught black bass, with no odea how to cook it. Found this video and played it while cooking (paising as needed). And it works! Bravo!
Came for the sea bass, stayed for the potatoes. I’ve made this side dish at least 4 times in a few months! Pan seared sea bass was spot on. Thanks for the help!!
Made this tonight. So glad you added the potato/tomato/olives/peppers, turned out great. Thank you!
Thank you! Baked this tonight and the butter enhanced the flavor....perfection!! 😋
Been a follower of you for a long time! Whenever I don't know how to cook something ...You are my go to :)
Thank you, I love how you add the very important details ~♥~
Sea Bass. Give it a Crown, it is a King! The Ruler of the world! Something special. Grilled, Pan Seared, or Baked? Yes,
E
I made this tonight. Husband loved it! Thanks Chef. Next time I have a dinner party this is being served.
Great vid! I've always pan seared one side, flipped and popped in the oven. Never tried another way, so this was good to see. Definitely gonna make the potatoes & friends.
Thanks for showing me how to cook sea bass in the pan. It was real easy and came out great!!!
i had no clue in the kitchen until i saw this video, perfectly simple instruction got a great result ,thank you
Thank you so much Billy. Definitely will cook this weekend 😋
I love Sea Bass also! Definitely trying this!
We Love Seabass as well! Thank you for sharing.
We already had all the ingredients on hand. Pan seared was amazing! Thank you!
I am so happy I found your channel. Your recipes are wonderful and you do a great job of explaining the process. Do you have a website or is there somewhere I can print out your recipes? Thank you 😊
I love Sea Bass (butter is definitely better) and look forward to trying this at home. Thanks Chef!!
Excellent tutorial.
Thank you😊😊😊😊
FANTASTIC!!! 😂
I will try all 3.
Thank you.
I made your seared Chilean sea bass! It was amazing, thank you!
love this. I love sea bass and will be trying this
Made this for dinner last night. Omgosh, yum!
Thank you so much my friend you are awesome
Sea bass is my favorite
Thank you! This came out awesome. Stuck to the recipe, (might have drank the wine). Seared the fish in a cast iron. Righteous!
All of them looks delicious
Thank you! I will try it out.
Gee whiz! All three looked yummy. The Mediterranean dish- I could damn near smell itl through the phone. Dude, you killed it!❤
Many thanks!
I agree, this is the BEST topping for a beautiful piece of mild, flaky but firm white fish, and Sea Bass is the best! I've been using this "tapenade" for years.
@ChefBillyParisi made this same recipe but did it with Halibut and it was fantastic. I went pan-seared and it was excellent. Also a quick time saver, grab some prepared roasted red peppers from the whole foods olive bar or salad bar at your local store. Save yourself some time and clean up. 3 Red Peppers were almost $5 and fresh out the oven at whole foods was $7 for 3/4 lb.
i made this dish tonight and it was spot on. the pan seared chilean seabass is the way to go. The Mediterranean veggies was absolutely awesome too. Will have to do this again.
Thanks for giving it a shot!!
Great video. What kind of oil do you cook fish in? You said olive oil for the base but did not specify with grilling or pan searing fish.
OMG, at least $5 meat was wasted! Now Sea bass is $25/pound At Costco.
You don't have to waste it. Just freeze it until you want to make fish stock.
Thank you Billy! 🙏🏻One of my favorite fish❤️! However, fresh Chilean sea bass is hard to come by , occasionally I can find the frozen ones.. perhaps it’s easier for the chefs, you always have the sources for the best seafood and meat!☺️
Whole foods has it if there is one near you.
I buy it at Costco-in the fresh section- its fabulous.
One of my all time favorites ❤
I remember asking you to give me some tips on fish. And so, here's you, delivering. Thank you chef, I pan sear mine as well.
😋
Sous vide + sear on ripping hot pan is my favorite
Love it
My favorite! I rigged a potato base with what I had. Chunked idaho potato, diced vine tomato, I did blister my own bell pepper, onion, garlic and because I had no olives, I squeezed fresh lemon juice into it. It's pretty good, not as beautiful as Chef Billy's. The sea bass was the exact method and it was fab!
Fantastic video! Any chance we can get a recipe for the Sea bass with the Lemon beurre blanc and blueberry? I love blueberries!
Thank you 👌🏻❤️
What brand of pan are you using in this video? Thanks! We love this fish so much too!
A Chef at a restaurant grilled it for me with miso....heavenly
Good job
Why not cook skin side down first like everything I’m reading tells me to do with the sea bass? Is there anything behind that?
I made the pan seared method in a cast iron skillet; it was great! Thank you
I’m gonna make that base for lots of stuff
What kind of oil do you use to coat the fish. Do you use a high temperature oil like avocado oil or just vegetable oil or olive oil?
It's 500-600 degrees you should probably use high heat oil... unless you want burnt oil all over your fish
Very good question
It will always be avocado or olive. Olive is best (and typically what I use), but avocado has that high smoke point allowing you to cook longer if you prefer a more firm texture.
Id like the raspberry butter sauce recipe, please!!
I needed this video a couple weeks ago, I munked up my expensive Sea Bass
P.s. am making this tonight..pan searing👍
Seabass loves you too dude
Did you par boil the potatoes first?
super moist ... i'm off to pan sear
Is the oil you sheared it with in the pan, is it olive oil as well or no?
Is this branzino? That’s the type of Chilean sea bass I always use. It’s so dang good and surprisingly cheap, at least relatively speaking. They have it at Trader Joe’s for just $12/lb. I love halibut too, but halibut is so damn expensive it’s insane, so I always use branzino sea bass in place of halibut.
What kind of oil did you use
will the potato recipe taste good without the olive?
That berry sauce sounds dope af! If you happen to remember the ingredients/recipe, throw it under here.
Pan seared indeed but I guess it's even better if you did that first skin side down for most of that cooking it's even better that way!
Can you do whole Spanish onion and turmeric Pablo demi glace.
I have two pounds of sea bass in the fridge. Will let you know how the pan sear goes!
How would you compare the halibut vs the sea bass?
Why do you do skin-side-down? Just curious.
Why skin side up? Ive always been told to do skin down like you would do salmon
What kind of sea bass
I get my Chilean sea bass from the fresh market at $33. a lb. The butcher there does my steaks too. I don’t buy from the meat displays (meat or fish case)….. I get mines cut fresh.
So you lost your garlic press?
I say pan sear over charcoal in weber kettle
I choose the same😊. But all of them delicious! I’m going to cook mine. Thank you❤
If you cook the sea bass in the oven for 25 minutes at 400 degrees, it will give an oven sear. Use melted butter with onion salt, garlic power, and black pepper.
What happened to the beurre blanc and gastrique?
Agree with pan-seared finishing 1st, but no way baked is better than grilled.
Try stem with high heat for 8 min. The skin side down and suspended. Discard the liquid.
OLIVE THAT! OLIVE THAT PUN
Thx .. pan sear it is ..2mrw !
What kinda white wine?
Any dry
Sir, ever thought about cleaning that second stainless steel pan? Barkeeper’s friend or Bon Ami could make that neglected pan look like new.
Living in the west, it has been impossible to find fresh or frozen sea bass! Where can I find some? Sea bass is reported to be excellent for kidney health.
Costco, or Whole Foods
As soon as you said Chilean sea bass I heard dollar signs $$$
Please add a recipe for the airfry version
Sorry I don’t even own one and don’t plan on purchasing one as of right now
@@ChefBillyParisi Thanks so much for the quick response
Julienne...how very 90s. So quaint.
Ahh Patagonian toothfish
ever tried steam Sea Bass?
For sure. Needs a sear though
My man. Best way is to sear it skin side down for 2 mins then throw in oven under broiler
Best of all worlds
Why lose that center by cutting it when you can cook it as is and the bones comes out very very easy.
Blueberry what?
Chilean sea bass? No Jurassic Park plate?
The better option is local, wild caught White Seabass, not Patagonian Toothfish which are sold as Chilean Seabass, overfished, and come from the other side of the world.
Potato definitely needs more than 2-3 minutes.
It’s like steak of the ocean tk me lol
Why would you cook Chilean sea bass with Mediterranean base
now cook a sea bass with the head still on. that's where all the nutrients are, see.
Did Jurassic Park bring anyone here?
If you say you like sea bass, consider featuring some sea bass in your video. Chilean “sea bass” is a toothfish, not a bass
The pot will be under cooked
Potatoes need more than 2 minutes
Olives? I'm out...
nah grilled best 100% good video though
Skin tough to eat? Noticed no scoring the skin…
Scoring is for thin skinned fish that buckle and curl up when searing. Chilean Sea bass has pretty thick skin that it really does not affect it when searing.
@@ChefBillyParisi excellent info! Am excited to prepare the fish as you have!!!
The BEST Miso-Sake Sea Bass was at Kona Grill. It was delicious!!
So wasteful to toss the meat just because there is bones in it.
So don’t buy this fish!
awsome.
