i made this dish tonight and it was spot on. the pan seared chilean seabass is the way to go. The Mediterranean veggies was absolutely awesome too. Will have to do this again.
My favorite! I rigged a potato base with what I had. Chunked idaho potato, diced vine tomato, I did blister my own bell pepper, onion, garlic and because I had no olives, I squeezed fresh lemon juice into it. It's pretty good, not as beautiful as Chef Billy's. The sea bass was the exact method and it was fab!
Great vid! I've always pan seared one side, flipped and popped in the oven. Never tried another way, so this was good to see. Definitely gonna make the potatoes & friends.
I agree, this is the BEST topping for a beautiful piece of mild, flaky but firm white fish, and Sea Bass is the best! I've been using this "tapenade" for years.
@ChefBillyParisi made this same recipe but did it with Halibut and it was fantastic. I went pan-seared and it was excellent. Also a quick time saver, grab some prepared roasted red peppers from the whole foods olive bar or salad bar at your local store. Save yourself some time and clean up. 3 Red Peppers were almost $5 and fresh out the oven at whole foods was $7 for 3/4 lb.

It will always be avocado or olive. Olive is best (and typically what I use), but avocado has that high smoke point allowing you to cook longer if you prefer a more firm texture.

Is this branzino? That’s the type of Chilean sea bass I always use. It’s so dang good and surprisingly cheap, at least relatively speaking. They have it at Trader Joe’s for just $12/lb. I love halibut too, but halibut is so damn expensive it’s insane, so I always use branzino sea bass in place of halibut.
If you cook the sea bass in the oven for 25 minutes at 400 degrees, it will give an oven sear. Use melted butter with onion salt, garlic power, and black pepper.
I get my Chilean sea bass from the fresh market at $33. a lb. The butcher there does my steaks too. I don’t buy from the meat displays (meat or fish case)….. I get mines cut fresh.
Living in the west, it has been impossible to find fresh or frozen sea bass! Where can I find some? Sea bass is reported to be excellent for kidney health.
The better option is local, wild caught White Seabass, not Patagonian Toothfish which are sold as Chilean Seabass, overfished, and come from the other side of the world.

OMG, at least $5 meat was wasted! Now Sea bass is $25/pound At Costco.
You don't have to waste it. Just freeze it until you want to make fish stock.

What kind of oil do you use to coat the fish. Do you use a high temperature oil like avocado oil or just vegetable oil or olive oil?
It's 500-600 degrees you should probably use high heat oil... unless you want burnt oil all over your fish

Try stem with high heat for 8 min. The skin side down and suspended. Discard the liquid.
