    Katsudon is one of my favorite dish to order when I eat at a Japanese restaurant so I tried this recipe tonight. I followed the recipe except I used an air fryer to cook the pork and it came out delicious. It wasn’t as good as the Japanese restaurant Katsudon, but good enough for me. I’ll be making this again soon. Thank you!

    Just did some Chicken Katsudon for me a few days ago. In my eyes (and taste) the baked version is way way better than the deep fried one. And obviously way more healthy ;D

      Hi, no need to weep! You can use gluten-free crumbs and soy sauce, and either rice flour or cornstarch 😄👌

      Gluten free crumbs never stick to anything well at all ;[ I've tried to use them before. They tend to just fall off.

      Thank you! We don't make this dish with meat other than pork loin or chicken breast/thighs. There is Gyukatsu (beef katsu) but not over the rice... It's rare and more regional food. :)

    Can I do Katsudon with chicken and without onions? I mean I can eat fried pork chops coated in panko, but I'm not a big fan of onions and the only onions I'll eat is scallions. Is that okay?

    Is there a difference between Baked Tonkatsu and Baked Katsudon?

      Hi Sally! Yes. First of all, Tonkatsu = pork cutlet usually deep fried. Katsudon is Tonkatsu, onion, and egg are simmered in a dashi broth, then transfered to bed of rice in a bowl. Katsu can be chicken katsu, tonkatsu, fish katsu... and don is short for donburi (rice bowl dish). :)

      I do not eat pork so my Japanese friend always make for me with chicken and it taste delicious. Even other friend who eat pork, prefer the chicken version. She uses boneless, skinless, chicken thigh. Hope this help.

      Mizi Alfy probably another white-like meat, since foe this you use white pork. Maybe chicken?

      Mizi, usually chicken breast/thigh is used to make (chicken) katsu. :) No beef or lamb... a bit strange for Japanese people. There is Beef Katsu so you can, but not common. :)

    May I suggest an alternative regarding the sauce?
    ... Grill the onion in the sauce then serve separately on the side as some people may not like that much sauce or salt with the rice or pork.
    ... The egg can then be cooked separately as well then placed on top of the cutlet.
    ... Cover with sauce as you like.

    First and foremost, this video shows the process of what you should do with your ingredients for this food quite well, so thank you for the video. However..
    You should not use a hammer like that on red meat (or white meat, fish, tofu, etc.) - it ruins the texture and guarantees that you won't get a proper result since the juices will flow out - the steak won't stay juicy. If you want to try the baked version (or a deep fried one), please pound it with a flat object, like the flat side of your cutting knife or a flat hammer against a cutting board - juices will stay in and the texture won't be ruined.
    For vegetarians and/or pescatarians: you can use something like a "likemeat" schnitzel, or any other soy/tempeh/quorn/seitan schnitzels for this recipe if you don't want to do all the work. It'll be a bit thinner, but not too far off. You can also try the vegan option.
    For vegans: freeze tofu overnight and then thaw it before cooking - it will give it a meat-like texture. You will need to bread it and deep fry it or do it like this video shows. You can use products like "the vegg" to do so. With tofu, I would recommend letting it sit in some broth to give it more taste, as tofu is considered to taste plain (=="tasteless") otherwise.
