    Hey from Kentucky I was watching you canning your corn and thought I would offer you a tip that I taught myself. I was given a nice Kitchen Aid Mandolin that not only came with attachments but also you could adjust the thickness of your slicers. I set the depth according if the cob has a lot of milk I set to to scrape the cob as it cuts off the corn. This so fast and easy when my mom, sister, and 2 sisters in law canned corn together they could not clean enough corn to keep up with me. We did 300 ears in about 5 hours including picking and shucking it. Now I do have one of those safty wire mesh gloves so I do not cut my hands. Just a tip to safe your hands.

    My wife and I do it a little different and I think you will like it, we have done our corn like this for years and never have any to get freezer burned. We pick our corn and shuck the outer 2 layers and then cut off the silk end and also the butt end and then put it in a ziplock bag,it will last for at least 3 years. We are now eating some that we froze over 3 years ago. Try it and you will like it

    Just have a question about canning. Do you make any adjustments for elevation such as increasing pressure pounds and time? We recently moved and are at at higher elevation.

      Thank you so much! It’s an American Corn cutter, unfortunately they are sold out on the website right now, but I’m going to keep my eye out and grab one when they become available again!

      Unfortunately corn is a low acid food, your best bet if not pressure canning would be to freeze your corn off the cob to be on the safe side! The best i could find it is an American Corn Cutter, unfortunately they are sold out right now, but that thing was the trick! www.americancorncutter.com/order-online/ Thanks for watching!

    Meghan, I use a electric knife to cut the corn off the cob. Really fast .

    I see you took the rings off your jars of corn, any reason for that?

      Yes, rings can create a false seal on your jars meaning bacteria could get in without you knowing because the ring is still holding pressure on the lid. Also rings are reusable, so I always reuse them. Thanks for watching!
