Recipe makes 4 burgers
Ingredients:
For the burger:
500-600g Ground beef, 15-20% fat
Salt
Pepper
For the sauce:
1/2 cup (120g) Mayonnaise
1/4 cup (60g) Ketchup
1/8 cup (30g) Mustard
1/2 teaspoon Smoked paprika
1-2 tablespoons Pickles, chopped (optional)
For assembly:
4 Hamburger buns
1 Red onion, sliced
4-5 Lettuce leaves
1 Tomato
Pickles
Cheese of your choice
Directions:
1. Make the sauce: in a bowl whisk mayonnaise, ketchup, mustard, smoked paprika and diced pickles if desired. Set aside.
2. Toast burger buns: slice the bun in half, lay them on the pan, cut side down and toast until golden, remove from heat and set aside.
3. Make the burgers: divide the meat into four pieces, each piece about 125-150g. shape into a ball, then using a burger press shape a burger patty. If you don't have a burger press, you can shape a patty using your hands.
4. Season burger patties generously with salt and pepper from both sides. Using a cooking spray, lightly grease the pan/skillet. Heat the pan over high heat until very hot. Add the burger to the pan and fry for 3-5 minutes per side (depending desired doneness). Thermometer
5. Assembly: spread a portion of sauce on both sides of the bun. Place lettuce, tomato, onion, pickles, burger patty and other toppings if desired. Top with the other bun half.

I get that kind of meat, 1/2 kilo, put it in a bowel and add ground rusks (or bread crumbs) salt, pepper, 1 egg, oil, and oregano. mix well and make 4 burgers. Wrap seperatly the burgers I don't use and freeze them until I want one,. Melt cheese on top if you like, and ketchup, mustard and what ever gets you happy. Enjoy.

I find that when the burgers are thick it becomes difficult to know how long to cook for desired done ness. Yesterday I did 5mins one side then 7 mins the other and it STILL was pink inside. I did not mind at all but my kids were complaining. I even tried a thermometer but it was unreliable. Any tips.

That's oh, I've been making hamburgers for years and everyone always says they taste the best for people who put fillers in their burgers like eggs or onions or bread crumbs and stuff like that. That's a meatloaf. Patty and it might taste good but not as good as this kind of hamburger. You want eggs you want onions. You put that on as a topping not in the burger. The only thing different than I do on my burger that not burger that I find kicks it up a notch. I sprinkle a little cayenne on the burger with the salt and pepper but very light because it kicks it up quite a bit
