I haven't seen too much of his shows, but it looks like his insults are directed at the chef's work and not directly chef towards the chef at a personal level. Taught me to use the egg yolk for better cohesiveness when making a patty from scratch. I watched like 30 UA-cam videos on how to make burger patty, not one video used an egg. Lo and behold, the legendary Ramsey uses this method. Put a giant smile on my face to see this video
I'm gonna have to be that guy.. incorporating egg + salt and working the meat as much as Ramsay did causes the meat proteins to bind and will make the burger springy, sort of like sausage. The best burgers in the world keep the meat as loose as possible.

I enjoyed that almost as much as I'd have enjoyed that burger. Because of Gastroparesis I haven't been able to eat solid food for years. One of my last meals ended up being on a day when I freed myself by making the life changing decision to end my marriage to a man who had lied, cheated and abused me for years, and because of my poor health, I convinced myself that I deserved to be treated with cruelty and disrespect. I decided I'd honored my vows but I was done with the man who had used the pretext of working on our relationship for a free trip to Vegas, and as I expected, he left to go out with his friend, knowing my multiple chronic illnesses caused me great deal of pain, so I could not stay out long. He was thoughtful enough to spare me that pain by spending the whole night on the town after I had dinner. Sociopath. I took my winnings and had one of the best meals of my life at a pub owned by Gordon Ramsay. I didn't know it was going to to be my literal last supper, but if you have to go, go out on a high note. That was over 13 years ago, and I'm glad I won enough money to have a once in a life time meal, for someone in my income bracket. I love watching Gordon cook, I love his passion for his family and for food. I had a steak the size of the Brontosaurus steak at the beginning of the Flintstone cartoons, and I'm sure there were side dishes. I still remember how heavenly it was. I couldn't stop eating it. By morning (I took most of it back to my hotel) it was gone. Anyway, I just enjoyed this segment, and it made me remember my meal and how good it tasted, and how great it felt to free myself of guilt, and to start freeing myself of shame and humiliation that were never mine too begin with.

Very experienced cooks associate the done-ness of food based on sound, color and smell not just sight. I think that's where that came from. After cooking tens of thousands of onions, he certainly would recognize the smell which he then would automatically associate with a color as well as the sound of the sizzle as an onion is caramelized.
