Not sure what you mean by “overcooked”, as explained in the video the cheese is supposed to caramelise, not just melt, so it needs to reach a certain temperature (Maillard reaction) and the fats should separate from the protein matrix. I’m American, but I live in London, and the idea that British people don’t know how to cook burgers is an old cliché. Of course McDonald’s and BK are not ideal examples.

Oh man i've been doing this with omelets all my life. I make the omelet, fold it in half then grate some cheese on to the top of one side, let it melt a bit, then flip it so its at the bottom caramelasing. Then grate cheese on the other half and flip it again. It gives the omelet a beautiful crusty cheese shell and its just orgasmic.
I saute minced onions in the pan before I put the cheese down. I like the onions in there. If I have a thin cheap pan, I heat up the pan, take it off the heat and put the cheese on, I don't leave it directly on heat- then it doesn't stick so fast. You don't actually want the pan to touch nor melt the cheese, you want the grease,butter or oil as the heat catalyst and barrier Don't use soap nor salted butter in your pan!
I worked at an iconic burger place here in town for a few years, and that's how we did it with the cheese too. We also had a burger with Västerbotten cheese, a local Swedish delicacy. Ramsay being the chef he is probably has heard about it. That cheese is amazing!
That’s a good solution if you don’t have the super slick non stick pans Gordon does, but the cheese won’t caramelise into the bun using that technique. But both are good.
I got a set of the hexclad pans recently. Wow what an absolute game changer. Highly recommend. I baked chicken in a pan in the oven and turned out amazing, pans always clean up super easily and handles aren’t hot after boiling on the stove top for an hour. Love these, saving up for some more so I can get rid of my crappy t-fal pans

As a chef myself, you have to get a top quality non stick pan , hexclad if you're trying to get some good pans , or heritage if you're not trying to spend to much . If you use ordinary Walmart brands or local store brands, they will go bad fast and will stick to the pan and it just becomes a mess . Anyway good day y'all 🙌
