Unpopular opinion. I don't think it makes the burger taste better. I want to taste the sauce and burger then cheese then pickle and tomato not the other way around.
Thats pretty good, ik putting lettuce and stuff on bottom keeps it in place, but perosnally i like it better on top, also, if you want your cheese to melt on your burger, get a lid for the pan, and put a little bit of water in and cove it, the steam will melt your cheese perfectly.
Use butter to toast your buns, not oil, oil tends to get too hot and burn the edges before toasting the center. Simply butter the bun, and it will always toast completely before it burns.
I prefer to put cheese between the patty and Lettuce/tomato to stop the salad type items from getting too warm and wilting, even if I have to use two different slices of cheese, which I usually use sliced cheddar instead of American cheese because I prefer the flavor profile, same as using butter instead of oil
To the bottom: Burger sauce, tomato and pickles. Then the patty. The sauce and the moisture from tomato, pickles and patty keep them solid. On top of the cheese length wise cut salad. On the lid the sauce. Thus the cheese and the sauce keep the lettuce in place. Solid burger.
Burger tip if you want a juicy burger get a skillet turn up all the way to get that char and when you flip the 3rd time put mustard to make it juicy and flavorful
Anyone else like their burgers smaller than their buns just the slightest bit so that you can kinda press and hold all the juices and sauces inside by pinching the edge of the bun??
Plus then you have bun insurance for when the burger and bottomings start sliding. You can guarantee you won't be without bun at the end. I actually build my burger off center so the patty is closest to where I'm taking my first bite, so it has plenty of space to slip around.
I prefer the cheese to be melted all over the patty, rather than the perfectly shaped square. Like Five Guys, instead of In-N-Out. I prefer the mushy untoasted bun too.
If you use American cheese, like most chefs recommend and burger places use, it will totally melt just from the heat of the burger. There will be no shape to it. The fact that it melts so easily and quickly is why you put it on just before removing from the heat. Other firmer cheeses need more time in the pan, and some need to be totally covered to get started melting.
Bun was burnt and toasted unevenly. Instead of oiling the pan, try buttering each side directly, then pressing the actual bun into the pan so it has 100% contact with the heat. If you don't do this, the buns tend to curl up and just the ends get toasted (or burnt in this case), while the middle just ends up soggy with melted butter/oil.
I found method of eating burgers that has revolutionized my sandwich eating. You know how all the toppings get pushed out the back side of the burger? Instead of taking a bite and getting some of the top and bottom bun, just get the filling and one of the buns. It doesn't squeeze the buns together and prevents the toppings from sliding out the back. Then once you take a few bites of one bug and the inside, switch to the other bun and the inside. Life changing.
The only thing I would add to this is to not add pepper right away. Add it closer to the end of the cooking process as pepper burns quickly and will not have as good of flavor.
The bottomings also prevent the juices to soak into the bottom bun. At this point its preference, but if you want a meatier taste, simply flip the burger upside down so the meat toaches the tongue first. Yes it does make a difference.
The burger juices still seep in but a toasted bun doesn’t immediately get softer from the juices it will retain its crisp for a while making it seem as if no juice has gone into the bread when it indeed has just as much as it would untoasted
If you pull back on the corners of the cheese you will get more cheese on the burger. Fold back a quarter inch on each corner of the slice of cheese. Put the cheese on fold side down. You basically want a smaller size square of cheese.
READ THIS: Always put toppings on top; the top bun is thicker and will hold it better even toasted buns can get soggy if there’s lots of moisture and your digging fingers into it to eat it
Too much salt, don’t fry cracked pepper it turns bitter. Just add pepper to you patties or steaks after you have fried them. Fresh cracked pepper tastes much better 😊
Last tip is to actually use the top bun as the bottom so it can absorb more juices without becoming soggy and breaking down. Plus your jaw opens down, not up, making bigger burgers easier to eat.
Im so glad he said wrapping in foil. My roommates say I make the best breakfast sandwiches they've ever had and that is my secret. Cook everything, then assemble and cook a little again in foil or parchment paper. It does more than you'd think.

Don't add pepper until after you pull out of the pan. It burns really easily. Adding salt early is fine.

My man did not just use a metal utensil on his cast iron skillet. My god
Metal is actually perfectly fine on a cast iron, especially if its well-seasoned as I would hope his is.

Pro tip. Put the bun on top of cheese after the final flip. Put bottom of bun upside down and let it steam.
Steaming is better than grilling the bun
As a former professional burger flipper, I stand behind every technique he demonstrated. That bun needs to be crispayyyy
The bottomings also prevent the juices to soak into the bottom bun. At this point its preference, but if you want a meatier taste, simply flip the burger upside down so the meat toaches the tongue first. Yes it does make a difference.

Finally! Something this man takes serious, and not trolling us.
Pro tip. Make a checkered bored with your spatula for shrinking. Good smash, then checkered board works wonders on any size burger.
Last tip is to actually use the top bun as the bottom so it can absorb more juices without becoming soggy and breaking down. Plus your jaw opens down, not up, making bigger burgers easier to eat.
put dense veggies like tomatoes, onion and pickles in between meat patty and the lettuce to keep the lettuce cool and crispy as long as possible.
Top layer will slide with that sauce, just sauce the bottom. Also no need to fry your buns, dry toast them has the same effect and is nicer.
