Little tip folks, before you ground your own meat, put the grinder attachment and meats in the freezer for 30 minutes. This helps keep everything cool, the meats not frozen, just firm enough but still cuttable, and once in the grinder, it won't jam up your grinder.

You could do this easily on a cast iron pan, with ground meat from a good butcher shop, and it would taste exactly the same. Some of the other tips are good though. The best restaurants cook everything seared on flat tops and/or cast iron pans.

Bro, that bottom bun says it all. You should consider the over all "Wetness" of your burger when you assemble. Oils, vegetables, meat, and condiments can all effect the wetness of your burger and that burger is dripping.
I think the initial smash needs to be burger directly with griddle to have a better crust. Onions can go on top of the ball before smashing. Otherwise it looks amazing

The burgers are gonna be good but there's some fundamental burger tricks to reduce greasyness while retaining juicy meat because they aren't exactly the same thing and I'd choose a different burger if you're going this far with making burgers. For these reasons I'm going like a 7.85 disregarding my preference for toppings, I'd recommend letting the patties sit and drain a bit in a warm place for about 10-15 minutes
If the burgers are dry after that you are either cooking them too long or the environment you have them in is probably too hot and dry if it's not that
It probably has a good flavor ill give you that, every little attention to details add up but for my time and money its hard to beat hot and fast 80/20 charcoal cooked burger with salt and pepper, toasted buns, and mayonnaise. Every now and then I'll fancy it up with the veggies, maybe some bacon and roasted jalapeño.
