- Tonight is all about the Smash Burger! 💥
We are rocking with some 85/15 ground beef
Divide it into 4 equal balls and throw in the fridge to keep cold while we make our sauce!
Sauce:
1/3 cup lite mayo
2 Tbs Dijon mustard
1-2 Tbs hot sauce
1 Tbs pickle relish with some of that juice
1/4 cup of a grated yellow onion
Throw those beef balls on a cast iron over medium high heat and give them a smash, season with salt and pepper.
After 2-3 minutes give them a flip and add a slice of cheddar cheese, once cooked stack together and remove from the heat!
Using a toasted bun, add your patty’s, lettuce, onion, tomato and that sauce!
Now enjoy!!! 🍔

Depends on the burger for me, like if I make a burger at home, easily two slices. But whenever I used to get a doublecheeseburger at McDonald's, I found myself enjoying the McDouble more specifically because it has less cheese. I'm sure quality of ingredients and size of the patty affects it a lot.

@@Kaminari2332 Don't listen to that guy, you aren't supposed to put sauce on both buns. Any professional cook would tell you that creates slippage in a burger. Plus it masks the taste of the burger. You're supposed to be eating a hamburger, not a sauce sandwich.

Nice! Only thing I would do differently is I’d fry the onions next to the burger. I’d also mix an egg yolk into the meat, along with a little salt and pepper. Then season the outside a bit while cooking.

Tip: cheese slice on both patties and put the sauce on both buns, that will keep the burger much more stable and it won't fall apart.

You should try building your burger the other way around. Bottom bun, sauce, leaf lettuce, tomato, onion, patty, top bun. Your burger won't get soggy. 🤷

That's a lie. The sauce lettuce and tomato all contain a high moisture content. The best way to get around soggy buns is by melting a piece of cheese on the bottom bun as well as the burger.

Nothing because not every food needs to be seasoned to taste good. Beef has natural umami flavour so it's fine without seasoning.

Sauce looks great and a good choice of toppings but here are some areas i personally think could improve:
- obviously there needs to be another slice of cheese for that second pattie. Thats a given.
- be more gentle with the mince when shaping. You don't want to compress it. You want to make sure theres plenty of gaps for fat to render out through. It sounds like a minor thing but I find it's one of the most important things for getting a consistent crust across the whole pattie and not just the edges.
- patties should be thinner for smash burgers. If needed use less mince per pattie.
- sauce goes on the opposite side of the meat to the toppings. If they're both on the same side it results in an unstable burger that just wants to fall apart. I like a messy burger but I dont like it when I constantly have to rebuild it. I usually do sauce on the bottom toppings on top for this reason.
- always season your tomatoes directly. It's not enough just to have seasonings in other parts of the burger. Raw tomatoes, regardless of the kind of food, need to have seasoning on them. In particular salt but pepper is always good too.

Try caramelizing some diced onions and mix it into your burger sauce instead of the grated onion. Take a little dollop of the sauce and put it on the patty right after you smash it. Let it melt. Once you flip the patty, the sauce cooks into the meat. Try it!

I think wrapping it up in paper is what makes it tastes so flavorful. My last girlfriend broke up with me because she said I didn’t have enough paper. Makes sense after watching this. She must have been very very hungry.
