Looking at it, I'm going to guess you'll need to start with a piece of 3/8" steel. It has one hell of a back bone, and is sharp AF. Even after chopping threw vertebrae. It appears he uses 2 or 3 different knives that all look very similar. I love how the butcher is sure and almost methodical in his way he makes his cuts.

I’m no expert - in any way. Never caught or cut a tuna big or small in my life. I’m wondering though : wouldn’t it just be easier on a table? Some low table with a tap & drain. Some leverage to work upright? I’m 6’2” and this - although fascinating - looks back-breakingly innefficient. No? Anyway ; thank you for the entertainment.

I'm impressed by the fish-cutting knife, it's incredibly sharp. The gigantic fish was sliced cleanly.
Interesting way of breaking the fish, bottom to top loins instead of side to side.

My grandfather had a similar knife, a friend made it for him with a circular saw from a sawmill, the knife never lost its edge.
