    This week, Springfieldian culinary giant Marge Simpson innovates once again with another playful twist on a familiar favorite: wasabi buffalo wings. In a rare cartoon food mash-up that actually sounds pretty awesome, a wasabi hot sauce must be merged with half its weight in butter to qualify for a Buffalo moniker.       I would not go 3%. The sweet nature of Franks/Crystal sauce lends itself more towards 1.5%.
      Only go the 1.5% route if you are well versed in the arts of fermenting food. You need to clean your equipment and containers with starsan and other safety steps.

      @@reign3864 From what I have seen when testing it, yes. Looks like it's been thrown together by a toddler, I wouldn't trust it with my money (and I have read many negative reviews too, regarding money, which makes it worse)

      I would ferment the peppers first then blend them. That way you don't have to have all that salt in your salsa and you still get that funky fermented taste.

      Idea for an episode: WonderTart from the game "Cuphead: delicious last course". Unfortunately, we don't even know how it looks like; and the ingredients (distillery dough, desert limes, pineapple mint, gnome berries, icy sugar cubes and one living soul) are unavaileble in our shops. Yet I'm sure, that you could improvise something with regular dough, limes, pineaple, strawberries, sugar cubes and love. ;-) Just a thought.

      This isn't the main residence - the Brooklyn digs have both the "main" Babish studio on the first floor, the "Alvin" & "Kendall" (and prep) kitchen/studio in the basement, and Andrew & Jess' living space on the second/third floors. I feel like he hasn't completely introduced us to this place, but I think he mentioned this is a vacation place ... somewhere?

      it would be extremely hard to get. They need to be used almost immediately once harvested or else they go bad.

    I wonder how the wings would turn out using wasabi root instead of the tubed stuff? Actual wasabi isn't actually spicy, so maybe it would add more of a sweet element to the wings.

    Those look PHENOMENAL! One question, though: were there serrano peppers included on the green pepper sheet tray that I just didn't notice? I'd imagine their flavor profile would complement the wasabi quite well. (I'd also be interested to see how *fresh* serrano peppers included into the mash along with the other roasted peppers might work. Definitely going to be trying this...)

    Andrew please don't forget the salt and anaerobic conditions for fermenting. That looked like straight ground peppers and is more likely to grow mold than ferment.

    I find it interesting how different countries have different cuts of meat, even for the same produce. Here in Brazil I've seen, countless times, the wing and wing-tip served and fried together. I've eaten the skin between the joints as well as the wing-tips countless times

    Not throwing shade on the recent stuff but this is the kind of content I had subscribed to the channel for. Love me some Binging with Babish vids because they made me feel like I could replicate the recipes at home. As the channel grew I felt there was a stark departure from its soul to make way for more a more professional/ TV channel apprach.

    I think coating the sauced up wings in seaweed powder (the type used on takoyaki) would make it look more green and seaweed goes really well with wasabi too

    I'm happy to see that the potato flake recipe turned out well here, because that was my Grandmother's "secret recipe" that I learned from her twenty years ago. Although her version went with "double dipping": dredge in standard flour/spices mixture, then beaten egg, then the potato flakes by themselves. It usually turns out crispier than standard recipes, but like Babish said, you have to be more careful about overcooking.

    Love this. I’ve been experimenting a lot with oven friend and air fryer wings. Super simple and so crispy. I used to be an air fryer hater but I have to admit it’s amazing for wings.

    Its so crazy that he brings up Shishito peppers now. My neighbor adored them and had a huge garden with tomatoes, cucumber, zucchini, jalapeno, and shishito. He died from a heart attack a few days before this video aired after we picked some of his peppers with him. He's been close to the family since I was a kid and I saw him collapse on his porch. 😓

    At a great restaurant I had the pleasure of working at, the chef’s secret with many of his sauces was to ferment them. It not only mellows the flavors of the ingredients and gives them time to combine with each other, but adds a load of funky umami. 100% worth the time

    My dad and I usually make buffalo wings on New Years Eve, but I might have to convince him to give this a shot instead.
    Suggestion: My absolute favorite Pixar movie is Ratatouille and I know you’ve made the title dish before (spectacular video), but what about a video on the lightning cooked mushroom or even the soup from that classic scene? I’ve always wondered how you’d recreate that mushroom in particular…
