How to cook broccoli without losing its anti-inflammatory and anti-cancer properties!

  • Do you cook broccoli like this too? You have always done it wrong!
    Broccoli is a vegetable full of mineral salts and vitamins, but did you know that by cooking them in abundant water they lose all their nutrients?
    Rich in calcium, iron, vitamin C and B, it's effective in cancer prevention, reducing cholesterol and diabetes prevention, but by letting it boil for a long time, we lose the most important substance the anti-tumor substance called glucosinolate
    According to two researchers of the University of Warwick boiling food has the worst impact on it, causing the loss of beneficial substances. But if you are thinking of using the cooking water to salvage its properties: DON'T DO IT!
    During the cooking process, pesticides are also transferred to the water, unless you buy some untreated vegetables
    So how can you cook some excellent broccoli without giving up its anti-inflammatory and anti-cancer properties? SIMPLE!
    Here are two alternative ways to cook them without losing the benefits:
    STEAMING
    Steam cooking is best way because it preserves the bright green color and all the properties of broccoli.
    But be careful not to go overboard with the time: 5 minutes is enough.
    In fact the loss of vitamins is also due to the prolonged heat from cooking.
    It is therefore preferable to choose methods that have a short cooking time.
    MICROWAVE COOKING
    It's the easiest way to cook it!

    You can start off by boiling the broccoli for 1 to 2 mins. Will not lose it's nutrients unless boiled close to 5 mins. Boiling it first gives them a good cleaning & removes pesticides. Then add olive oil & whatever spices you like. Either sauté or oven roast & enjoy. I like mine with some fresh lemon juice on top.

    Don’t drink the broccoli water due to pesticides but steam them and the pesticides magically disappear.

    Blanch for 2 mins in simmering water and then ice bath immediately afterwards. Still flavoursome, nutritious and green looks good enough to eat😊 long video about very little

    Hang on! If the cooking water ends up full of pesticides that must mean the pesticides stay in the vegetable to some extent when steamed or microwaved. 🤔

    This video was soooo annoying!!! Yes we get it boiling it is bad. You don’t need to say it 15 freaking times. Not until half way through the video do you even start to remotely get near the point.

    The first step is washing the broccoli by soaking it in salt water for 10 minutes. A brocoli farmer told me they put tons of pesticides on brocolis to get rid of worms, so salt water washes those off better than water. Then you can cook with a drizzle of cold water on low heat and cover the pot to keep the steam inside once the water gets hot. You can then add a bit of oil if you like a light frying because the initial water already penetrated the brocoli and cooked it al dente.

      @@pa5666 If the nutrients are mixed with pesticides, are they more nutritious? The idea is helping wash away pesticides so that you get a healthier meal out of your vegetable. I have found that broccoli and other veggies have a richer taste if washed with salt water. I can always tell when I eat at someone else's house.

    To remove pesticides of veggies, soak it in baking soda water for 15 minutes. Pesticides are acidic but baking soda is alkaline. Therefore baking soda removes pesticides on veggies.

      I started consuming boiling vegetables bcoz I get real taste of it ..By eliminating vegy oils and different kind of masalas...with some pinch of salt,Garlic ginger paste.. By putting little bit of water and veggies..Try this don't bother putting lots of water and throwing it's water later.. Just put some water and let it boil until it's cooked..Sorry for long explanation just tryna help you guys 😁

    Roasted in oven at at 375°f for 7-10 minutes or until tips show browning.
    To prepare: olive oils 2Tbsp, salt, pepper, garlic all to taste.
    Once roasted remove and sprinkle with Parmesan cheese.

    I make broccoli everyday for my family and myself. This is our lunch.. I cutt it and only use the most greenparts and almost no stems, only the flowerpart. I steam it high and fast (2min max) My 3year old daughter eats it since she was 1,5year. Start early and they will learn it to eat it without hesitation.

      You are wasting the stems. Peel the outer woody layers off and chop up the center section and it is delicious and nutritious. It doesn’t even need to be cooked. I cross or length cut the pieces and use them in stir fry or salads.

      Peel and slice the main stalk, they are very nice raw, most people throw the stalks away, I never do.

    We have been using steamer baskets for ALL our vegetables for over 45 years....this could have been 45 seconds total but it will probably inform some people on the best way to cook vegetables.

      If you have rice cooker that has a steamer with it when you bought it, place the steamer with veggies on top of the rice after the rice is cooked. It will switched into warm, don't it off until you think the veggies are cooked. I'm Asian so I cook rice on daily basis.

      Chef Mike is fine for convenience. The method shown in this video is the same as the steaming method also shown just prior. Claiming microwaving is healthier is false.
      Microwaving dries out all food by evaporating moisture in an unnatural way. Microwaving food also separates oils and fats, thereby ruining many foods. Cheese turns into rubber, bread turns into a disgusting consistency I can’t even describe, meats dry out. This can be counteracted by adding water to the dish, thus creating the steaming effect as shown in the video. I use this method for reheating previously cooked, leftover, refrigerated rice and frozen siopao buns. The exact same end result can be achieved in the oven, but the microwave is more convenient. Microwaves dehydrate food while heating in an unnatural way.
      Notice that the materials used to microwave the food in this video do not include the plastic that most people unwittingly use. Plastic is never microwave-safe, despite the claims that it is. When heated in a microwave, plastic has been shown to leech carcinogenic dioxins into the food. It is now recommended to transfer frozen TV dinners to a plate and cover foods with either a plate, as shown in the video, or a paper towel. When appropriate, I like to use a wet paper towel to get the steaming effect discussed above.
      Some plastics also contain BPA, a harmful chemical that can negatively effect the brains of fetuses and the prostate glands of male fetuses. It can also cause behavioral problems in children. BPA also artificially lowers testosterone levels, thus causing hormonal imbalances in men. Microwaving BPA-containing plastics leeches even more harmful BPA into the food. In the USA, most plastics produced now are BPA-free. The same may not true of imported items and definitely not true of older plastics.

      What’s wrong with steaming on the stove? Nothing.
      I just cooked broccoli and cauliflower in the oven along with onions, green peppers, garlic, ginger, salt & pepper, and marinated chicken in a Dutch oven and baked the whole thing for like 45 minutes. I served it all on a bed of rice. The broccoli [edit:] _was_ not blanched or steamed, just baked (roasted) and it cooked perfectly without losing any of its beneficial properties.

    I steam mine with garlic pepper and lemon juice - you don’t need oil. Oil is 120 calories and 19 grams of fat per tablespoon. I eat broccoli every day. This was a helpful video!

    I found that steaming the broccoli for few minutes is ideal! I retain the water & use it then to make a delicious soup w/ added yellow squash zucchini, garlic, sometimes a small Sweet potato, 2 bay leaves, herbes de provence..then whirl in mixer til creamy, add some fresh ground nutmeg & fresh ground cilantro & pepper seeds, then serve w/a wallop of creme fraiche or coconut milk!
    Sometimes I add homemade garlic croutons! Delicieux!

    Or try steam frying in olive oil adding only enough water to steam them, it’s easier to make sure the broccoli isn’t overcooked and in last few seconds add butter, it’s now my favorite way to cook it. Au dente, should still be dark green when ready. If it goes to light green it’s too much. Pay attention.

      I just put the vegetables in a metal bowl--put a splatter screen over the bowl--invert it--then place the vegetables/splatter screen/bowl over boiling water for about 6-8 minutes

      Not clear what happens to pesticides when you steam /microwave ...I don't boil veggies in water unless I am making stock for soup but if veggie stock contains pesticides so should steamed or microwaved veggies which haven''t been immersed in water to remove them. If you immerse veggies in water while cooking, you lose water soluble minerals along with pesticides. We want to lose pesticides without losing the nutrients ..what's the best way to do that ? This video does not clarify the pesticide angle properly.

    The trick to cooking broccoli is to cook it only slightly either steam it for a minute or blanch it for a minute. It only needs to be exposed to heat for a few seconds to breakdown the chemical that causes the bitterness in raw broccoli. Properly cooked broccoli should be bright dark green and still snap when you bite it.

      I cook mine a fair amount. Im not a fan of mushy broccoli, or raw at all. But properly cooked for me is pierceable by fork so at least 5 minutes.

    Usually i bought the organic broccoli. Put them into water with salt and soda for 30 minutes. Sometimes the dead warms appeared in the water. Then wash it carefully. And break the broccoli into small pieces, addind olive oil, soy souce, apple cide vinegar, eat broccoli raw, it tastes great without any cooking.

    I never boil my broccoli for the reasons you mentioned, but I stay away from microwaving. I made a simple video of how I cook broccoli and it takes less time than microwaving keeping nutrients intact. Thanks for making this video bringing awareness to this issue.👏🙌😀👏

      A really good way to eat broccoli is to pulse it really fine when it’s raw, in a blender, and mix the little pieces into a salad.

      I too don't like microwaves, I don't have one. I put my broccoli into a pan of cold salted water, as soon as it comes to the boil I take it off & drain it, it's not even partly cooked but is cleaned & tasty.

    Microwave, one and a half minutes. I usually do a big bowl, and then put in the fridge and have on salads for the next couple of days. I live in China and though it's not native here (beef broccoli is an American Chinese dish), it's super common and cheap.

    There are good tips in this video about the best way to cook broccoli, but there are also downright falsehoods regarding broccoli's nutritional profile.
    Raw broccoli (and whatever method you use to cook it does not increase any of the following amounts) is NOT 'rich in calcium, iron and vitamin B'. 100 grams of broccoli (a good serving size) will give you just 5% of your daily recommended calcium intake; 6% of iron intake; and moderate amounts, between 6%-16% each, of vitamins B1, B2, B3, B5, B6 and B9.
    What broccoli IS an excellent source of is Vitamin C (107% of daily recommended intake per 100 gram serving) and Vitamin K (97%).
    So A+ for the cooking methods, F- for the nutritional 'information'.

      Well thats why you need a variety of veggies & fruit!! They all provide us with diff nutrients. I use an Asian bamboo Steamer & for me its the best way!! Must more crisp than microwave. One veggie can not provide all the nutrients our bodies need to function. Im a big fan of all types of cabbage as well. We use good butter on it as well! My veggies also taste good!

    The stalk is very good to eat too either cooked or raw (which is better). Just cut away the tough outer skin, the center has a juicy, mild radish taste. My favourite part.

      Me too. Daughter used to cut away stalk and pitch it. Told her give it to me. I dunk it in boiling water for a minute , then dump Mac and cheese over top. Kinda taste like okra. Delish !

    When I first saw the lead in photo I came here to make sure that you weren't boiling your broccoli. Sure enough, you did it the proper way. We have been microwave steaming our broccoli for the last 20 years. For us, a medium size head takes about 5 1/2 minutes, and they look bright green and taste delicious. Well done my friends, you get a thumbs up !

    I like to put just a small amount of water in the bottom of the sauté pan, bring to a hard boil, then add fresh broccoli (including stems if tender). Cover and cook (more like steam) for 4 minutes, drain any remaining water.

    I stir fry toss lightly in oil , then pour in half a cup of water and cover to steam and remove immediately-it is no longer raw but still green, crunchy but cooked, and really tasty.

    When I want to disinfect my sponge I wash it and put it in the microwave to kill germs. Doesn't that also kill nutrients in food if you nuke it? I got rid of my microwave because of that reason.

    You should not cook(anyway) until the vegetables is soft; just blench it for about 30 seconds in boiling water, then put it in cold water to stop the cooking. After that, you can add salt/pepper to season it, or make saute beef and broccoli and many other recipes.

    I usually just boil broccoli in a little water only. Before that, wash it cleanly, soak in vinegar or eco-enzyme and salt.

    I just rinse the broccoli in water-the leftover water on the broccoli is enough that you don't need to add any more water. Then I microwave the broccoli for 3 minutes (not 6 minutes)--comes out very delicious.

    I actually appreciate the extra details in this video. I think steaming is the best way to cook most veggies or even baking just depends. Ain’t noooo way microwaving is healthy though 🙅🏼‍♀️

      @@guermeisterdoodlebug7980 There are many issues with microwaves, but one of them is that because of the type of heat, and the short cook time, it often does not kill the bacteria that normal cooking would. Also often times does not cook evenly as well. Also most of the time it makes the food soggy and whatnot. etc etc etc...

    An easy and very healthy way is to add a little olive oil to a pan or wok (start high heat for 1 minute and drop to medium). Add chopped decent size chunks of broccoli (stems and florets). Stems are the most nutritious part and delicious. Sprinkle a little garlic salt and pepper and cook medium heat for 2 minutes and add eggs and cook it with eggs for a couple of minutes. Done ✅ Son! 😎😉 Add some salsa and enjoy! You don’t lose nutrients if you barely cook it and the crunchiness is so good with eggs (not raw, but barely cooked broccoli) 🥦 🥚 🥰

    I steam them on high heat very quickly or dump them in boiling water for less than a minute I love them crispy oh and sometimes fry them as in stir fry and so on....

    I use salt to clean any produce, and fruit as well, just sprinkle salt on any vegetables or fruit in a strainer let it stand for 5 or 10 minutes then rinse well with warm water .

    Thank you. Steaming may be the best way, but still not well explained. Possible to place the vegetable on the steamer, when water is boiling, diminish temperature and cover. Set timer for 4 or 5 minutes. What do you think about it?
    The microwave is not good. We do not need radiated food that kills nutrients and can get us sick.

      Get an Asian Bamboo steamer. UA-cam it, and its 100% healthier!! They are super cheap, and farther up from the fire so the veggies also cook fast, and they are WAYY more crisp!! Put a tab of good quality butter, steam some mini potatoes and cook a steak!! An American tradition made healthy!! My gfs lost over 100 lbs & swears by steamed veggies!!

    The best way if boil the water first then pull the broccoli in, stir it for 30 seconds then pull it out drain with cool water. In this way, we don't have to worry neither about pesticide or losing of nutrition. 🙏🏻❤️🌸

      @@kunntakentay if you want the broccoli to be fully cooked (soft) then either leave it in the boiled water a little longer or drain it with warm water. Add olive oil (or sesame oil) depending on the type of dish you want to serve. 🙏🏻❤️🌸
      P.s: Remember to add some salt to the boiled water before pulling in the broccoli.

      @@relaxforever7961 Blanching as you described sounds good to lose pesticides without losing the nutrition but leaving broccoli in water longer may cause loss of nutrition, wouldn't it be better to saute the blanched broccoli with some olive oil to cook them further ?

      @@Soumyification broccoli is easily gotten soft; so leave it a little longer in boiled water in which I meant no longer than a minute. Or when you drain it, drain it with warm water instead of cold - the heat will eventually soften the broccoli. In boiling water, adding a pint of salt & some oil helps the keeping green of the broccoli.

    I have always steamed broccoli and cauliflower.
    Fit a steamer in the saucepan. Bring the water to the boil. Add the broccoli, and some salt.
    Bring the heat down to medium and fit the lid. Set the timer for 5 minutes.

    You've paid for often a large stalk so cut it into small batons and also cross cut the stalks on the florets. Into boiling water for 3 minutes. I tried to use the boiling water to make instant gravy but it makes it bitter so don't do that any more. Fresh is good but frozen florets are pretty close. No waste and economical all year round.

    Boiling for 30 second and steaming for not more than 3 min. Immediately shock in cold water to stop cooking. This is correct information.

      You also have to try cutting cabbage like a thick steak, and steaming them. they take 25mins on asian bamboo steamer. I always set a timer, and check frequently. Cabbage is a super food as well. You want a variety so that your body can feed your organs the nutrients they need so they work effectivly to radicate any chronic illness. Your guts feeds off fibe, and this helps you digest carbs, protien, and fats.

    Steaming is best BUT its yucky to eat. What i do is to blanch them in really boiling water for 2 to 3 mins depending on quantity. Then immediately take them out and place the flowers in an ice bath to retain the green color. While doin this my wok is smoking hot, pour some oil and lots of mince garlic, throw in the veggies, add salt to taste, some chicken broth. Stir fry for a few mins and out. Crunchy and yummy

      I just bought my first rice cooker off Amazon, it has a steam tray that goes on top of the rice. I plan on putting fish on one half and broccoli on the other side while cooking rice at the same time. My new years resolution is to East more vegetables daily, I've read broccoli and spinach are the best daily veggies. I even bought a rice cooker recipe cook book. Came in a bundle rice cooker and recipe book for $40

    If I saute' the broccoli with butter and seasonings, will that cause loss of nutrients? I recently started cooking broccoli and purchased a package of frozen broccoli and have been lightly cooking them the way I mentioned. The butter, seasoning and saute' make the broccoli taste fairly good. But again, how does this cooking method affect the nutrients, which of course, is the primary reason for me eating broccoli.
