Food in the restaurant was stupid expensive so I just went to the grocery and bought some veggies, tofu and did hot pots with ramen ... saved a boat load of cash! I think I will bring it camping with me ! I'll just need a power bank system like you have.

And how long does it take to recharge up the battery from the average time that you used it. And it looks like you’re using eight 100 W panels for charging. Is that correct? Really couldn’t tell just from the illustration. I’m using a much smaller set up 600w w/200wsolar just for emergencies in Florida without the wattage to use a rice cooker just a small water boiler. I have two portable solar panels, 620W total. It takes 5-6 hours to recharge my two batteries (2000+1500W). I use one battery at a time and turn off the other one. Otherwise it will drain by itself.
I want to get a Power Setup like this for my Toyota 86GTS to run an Apple Tablet, a PS5 & small Screen for 5 Hours a day, run a small fridge, cook a couple of times a day & run an Air-Con in Eco-Mode at night. Do you think 1000Wh is enough or would I need 2000Wh for weekend Camping trips?

That hot pot is a great idea for camping - it's so versatile!
I'm a big fan on cooking with propane but this looks tempting.
It's worth a try, it is so much easier and no carbon monoxide cooking inside a tiny van.

You need 2000Wh. You can also use the 2000Wh at home as UPS and emergency power during power outage.
