This looks easy and tasty! Since these are not being cooked as long as you would normally cook lentils, are there any issues with the lectins not being destroyed?
Good question. If you soak your lentils at least 12-24hrs, drain and rinse them well before cooking, that destroys a lot of the ant-nutrients your referring too. Cooking them slow kills more as well but yes it’s true your not boiling them as long using this method. The good thing is, lentils don’t need to be boiled as long as regular beans, brown lentils really only needs about 30/40 min. What you can do, which is what I do, is add way more water then needed after you’ve blended it and put it in the pot. Put it on low and stir ever so often. Since there is more liquid, it will take longer to thicken up because the water needs to evaporate, but it will also allow the beans to cook on the heat longer. Once your ready to speed up the thickening process, just turn up the heat. I’m guessing this will help reduce the anti- nutrients more, but I’m not expert on it.
