On the banks of the Bow River, just minutes from Chef Paul’s home, Les shows his foraging prowess. Paul utilizes his culinary garden and restaurant kitchen to prepare the final dishes of season one with some surprise ingredients from Les’ bounty.

Funny enough i had some Doug Fir branches i had harvested when i started playing this episode so i made tea to go with my viewing experience!
I have seen just about everything ever done by Les. This series is some of his very best. Beautifully informative and heart warming. The interactions between Les and Paul really make the show what it is. Thank you both.
Same I remember first tuning into Les's Survivor Man show during it's first season when he was surviving in the Arizona Desert way back when it was on the Discovery Channel and have fallen in love with his work ever since.

Fantastic, I'd love to see an episode that's a follow up interview with Paul on his thoughts. What were his favorite dishes? Will he incorporate some of the ingredients or dishes into his restaurant?

Same. I think it’s his best series yet. Although I love some of the Survivorman episodes, the spirit of this series really resonates with the way I try and be in nature. I’d also really love to import some of the style into my channel.
The respect and deep appreciation that Les has for the land and the non-human things living on it is almost spiritual. So beautiful. If only people treated each other this same way.

Thank you. I hope that your respect for nature comes through these productions for everyone that experiences them. The biggest parts of enjoying my place in nature are respect and appreciation for all the blessings that God gives us through the natural part of His creations.
Les, you are like a minister of nature that shows through your reverence of the natural world. Thank you for heeding the call and sharing the wisdom that you gather through your life of discovery of self and the world.
What I am getting from this is series is that its great to live in a place with lots of trees and water during the spring and summer ( I live on the great plains with no river or natural trees )

Wow! I watched your show Survivorman for years and I wondered what happened to it. Then I discovered that it ran its course and was canceled. Then one day while flipping through the channels I found Wild Harvest. I am amazed at so many of the recipes that you and Chef Paul Rogowski. One of the episodes that I like the best is the one where you were at Shepherd house keys house and harvested things from the forest especially the Douglas fir. It occurred to me that anything that you consume from the forest becomes part of you. And the most amazing, fascinating thing about that episode is that the endangered Douglas fir has become part of you. I found that to be quite an epiphany because the spirit of the tree is now within you. Thank you so much for teaching me so much about survival and how to appreciate nature even more than I ever did.

I do enjoy your backyard wild harvests. Douglas fir was harvested for ship masts. Lucky enough to have one in my neighbor's yard a foot from my backyard. Good uses of this lovely tree

I bet that food was absolutely amazing and I can't think of a better way for you to show us how to get out there and do the wild harvest ourselves and you are so correct there are so many things right here in our backyard and front yard that we could do a wild harvest with and I think you so much for teaching us this and I can't wait to go find somebody else to show me in my own hometown to find out what we can eat and make edibles out of and eat and tastes great especially dandelions blackberries and a whole bunch of other stuff here in Ontario Oregon and here in payette Idaho. Les Stroud I think you so much for everything you do I love your survivorman series and I love this wild harvest series that you do I thank you so much for everything that you do you've taught me so much for the last 20 years

I have lived in that same community for 20 years! very cool to see you there. I knew those firs were special but didn't know they were that special. There is a stump just west of you on a cliff that got hit by lighting 10 years ago and burned down and the stump is still enormous.

What a beautiful episode! If you haven't already, please release the soundtrack. I would buy it in a heartbeat and listen to it all the time while working on my art.
Great show sad to see it come to an end for the season hope we get a season 2 so much to learn about with wild edible plants.
Douglas Fir have been planted in abundance here in Germany to replace the failing spruce trees, so definitely not the most eastern stand. The grapefruit aroma is insane, I always thought they were poisonous, probably because someone said so.

Totally agree with you Les 👍👌. I only have to my fishing spot, a 6 minute hike from where I live. To enjoy nature, not being at the Lk & catch fish. It's the journey to the destination, looking at nature coluors as the seasons pass .

Every time i watch an episode of wild harvest i think this cant get any better, then it does. What an amazing episode, it is a highlight of my weekend to wake up an be truly inspired by this show. A massive thankyou to everyone that makes this channel as amazing as it is.

Not extinct, they are everywhere in the Pacific Northwest. Great place to hunt truffles. 😉

The doug fire grows back fast. The timber industry does more for planting than any hippies do. I fall for a living and know the truth.
Mono cultural tree farms grow back fast, old growth is gone for 20 generations once it's cut.
@@frankvehafric5062 there's more wildlife in younger forest cause there's more food. When hunting the old growth is barren and the new growth is full of wildlife. City sheople dont live out here and just believe propaganda from tv.
@@northwestolympics3001 Old growth has less game for sure, and clear cuts can mimic the effects of burning which is part of the natural cycle, but some fairly good percentage of old growth should be retained to insure genetic variability and diversity in the ecosystem. I'm not against logging. I use wood. But we need to look at more than our immediate self interest for timber and venison to insure future forest viability.

Hi, does anybody know what happened to the clip Mr. Stroud has of a hairy face looking at him, its behind a log thats horizon and there is some shrubs around the face. All you can see is some beady eyes and top of forehead?
I vividly remember this footage and Les commentary over the video but I can't find it on UA-cam. I suppose it could have been a fake but I doubt that.
Man when are you going back to the good stuff?? The survival and bigfoot stuff is what we want!
I think this series needs hunting incorporated maybe some trapping.
even if I could identify them I don't have the culinary skills to want to use it in any dishes lol
