So in my youth I worked for a very intelligent man that was incredibly in touch with the earth, on his farm and campground. He spent ample time teaching me about the forest, the trees, he taught me how to move massive logs using force, angles, pulleys, lift. He taught me about wild edibles, and soooo much more...but for as much as I did pay attention; I wasn't always all in. Now in my 40s I long for that invaluable knowledge....and there are so few people that walk barefoot across the earth, and know what is underfoot, and all around them.
This show is like a salve/balm for the hectic world we live in. Thanks for providing us with an educational moment of peace.

Oh, with many episodes I'm always sad that I can't find the plants over here (europe). But with all 3 of them this is just a fantastic episode. I've used nettle for tea & cooking before and also dandelion. Haven't worked with the mustard yet, but will keep my eyes open this year or exchange it with something else. This pasta dish looks super good.

I used to live in a Stepford like neighbourhood of GTA suburbia, and one of my neighbours came over one day brandishing his spray bottle of herbicide and said "hey I can get rid of those dandelions for you" and I said "no thanks, they're good in salad!" he walked away mumbling. 😂 he hated all the "weeds" in my lawn.

I have a full on busy life, at the end of my day all I want is a moment to myself to just stop and breathe. I tend to forget to enjoy the moment, this is a blessing to be able to relax and enjoy such a beautiful show ❤. Thank you for letting us come along on this culinary journey with you two. This is still my favorite show, since episode one! I'm going out for a hike now, to collect some stinging nettle from a patch nearby. Hahah!
This series is so inspirational to me. Thank you so much for sharing all the episodes with us here on youtube, Les. I love the clever periods where there is no voice, just the imagery leaving time for our own thoughts and imagitation to kick in that goes a little beyond what is actually shown. That for me brings in extra an experience that I didn't know I was capable of. If there is one thing I would like to see more (I know you've already touched this briefly before in your shows) is: How to help the existing flora to grow further and not be affected by our own harvest. Even a regular dandelion where I live can easily be killed by a harvest. Maybe I can kill one, but I could perhaps help another one to be more stronger. Or maybe I could visit it during the seed stage and help to fill in the gap. I think it is important to show respect and gratitude to the plant, even if it is considered a weed. Including this part to your harvest would in my mind assert your empathy and good intentions towards the nature (which I know you posses).
Great job as always Les giving out life saving advise to people who may need this information to survive and continue to safely to live appreciate your hard work in putting out content and living in Maine growing up without electricity and spending a lot of time in woods and my Dad showing me skills for getting by and survival in a y environment like the indians did is naturally beautiful and brutal and must be respected and with the proper knowledge will take care of you glad there is a few good people still left with common sense and can live in the outdoors but also take the time so others can choose to learn as well Thank you and crew for the awesome content over the years I have escaped my home through your videos I am disabled now can't run through forest much any more but my mind and heart are still there thanks for what you do🦅
I enjoy foraging, mushrooms tend to be the bulk of my foraging .
I live in the midwest United States , and even in winter we have edible mushrooms such as flamullina velutipes and panellus serotinus.
Spring brings everyone's beginners fungus the morchella species.
That is also when ramps are popping up, and ramp compound butter is an awesome resource.

Keweenaw County Upper Peninsula of Michigan. U r this family's hero. We were poor too with a bunch of kids to feed. We made it fun and an adventure, a challenge between us kids and then again with our kids. U r awesome for doing this.

I am not using weed killers anymore. I definitely got to try some dandelions this spring. That’s one wild edible I don’t need to look up the see if it’s what it is.
Stumbled on this today, and caught the episode of you teaching, informing us about nettles, and cautioning us to beware of the 'gifts' the plant brings, the result of a stinging encounter causing burning, itching which is described in the medical field as URTICARIA, hives, red, itching skin.

Swainsons thush is my favorite bird. They live all around my neighborhood and some years right outside my house. I feel blessed to be able to associate home with the sound of a bird call as beautiful as theirs.
Up on the mountains above my house we have a few canyons that are INUNDATED by stinging nettle. I always knew it was eatible but didnt know it was that easy to prepare and get rid of the stingers.
What I want to know is, who is dressing Les?? He's come a long way since snowshoes and solitude! nettle and dandy flowers my most anticipated spring treat, love Paul's elegant touch and the ideas he brings forth look truly incredible. Wish I could experience the moment les is tasting!

Looked great guys as always! I wish you wouldn't of added mustard to the European mustard. I feel you were not getting the full flavor with extra mustard. I will def be trying this next spring!!

I grew up getting stung by nettle and ripping out wild mustard and radish from our carrot fields. So strange thinking about utilizing something I was taught to hate.

Les, is there any way you could put in roughly the week of year, so that if, I mean when, people want to partake of the wild harvest, we know approximately when would be best as per each culinary delight.
Are Dandelions different up north? I’ve had them in all times down south and they are always super bitter

Where do people get off to say that a specific plant was introduced from a different geographical local at a certain point in time, as if that plant couldn’t have possibly been there already. I think that is so sad.

Was that a mini shovel with a sheathe, or was he digging in the ground with his knife?
Looks like a small hand spade. You want a small blade when digging up small roots that you intend to eat.
It's in a sheathe for practical reasons... The spade doesn't fit in your pocket, but you'll be using it all day. Might as well attach it to your belt with a sheathe.
If you don't have a small spade, a good knife does work perfectly.

Awesome except for anything with raw eggs, animal milk and anchovies. Paul can do better withOUT ANY eggs. Pasta is also healthier withOUT birds eggs.

"Weeds don't exist"? What about dog strangling vine, which has been invading my end of Ontario in recent years?? It's also contributing to monarch population decline!
