  • While clamming icy waters I'm stopped by a Bay Constable who checks my catch of Quahogs. The clams are fried with my favorite recipe that uses crushed Ritz crackers as part of the coating.

    John, you are killing me from 2700 miles away! As I explained in the past, I’m a disabled retired police officer from Milford, CT, now living in SE Arizona and attempting to ease my salt water longing through your excellent videos. Again, thank you so much for your hard work and dedication where they are concerned. But now you’ve gone too far! This video brings back memories of digging clams in L.I. Sound, which is great, but by frying up fresh, golden whole-belly clams you have reminded me that I’m now unable to eat my all-time , number one favorite food. I can almost taste those beauties and my salivary glands are over reacting. GREAT video, great recipe and great memories. I’d give you a hundred bucks for just one. Really.

    When I was a kid and we used to gather shellfish, when it was taken home (just a few hundred yards from the beach) we'd also take a bucket of seawater too. Into that went a few tablespoons of flour and was stirred in befre transfering the shellfish into the seawater mix and they'd be left for an hour or so before cleaning and cooking. According to my father, it irritates the shellfishes "beathing" system and helps drive out and sand and grit from within them. Especially usefull with whelks.

      I'm not sure why, but I'm not having any issues with sand/grit in these. It might be the bottom makeup, or maybe the very cold water. I've had it be an issue years ago from other locations and times of year.

      I know people do this with crawfish because they live in muddy dirty lake water and the salt clears out their system but I’m not sure it would help much with something that already lives in salt water

    Wow this is fantastic! I buy littlenecks, and throw them (flat) on a charcoal grill. As soon as they open, I pick them off and throw into a pot of butter and garlic. 😋

    Another nice courteous officer - we don’t have those types of clams up here in Nova Scotia - ours are a bit deeper in the sand and they have to be 44 mm or more in size - great striper bait but better cooked and eaten IMO - they looked delicious !

    Some additional info for your viewers John. I go clamming a lot on the south shore and the fisheries guys always come over to check for license and clam size. For the uninitiated, the size of the clam is measured top to bottom (1 in min). For hard bottom I use a gardening cultivator or leaf hoe. It digs into the bottom much better and it's very easy to feel them scraping over the clam and once found you can just push it down and scoop out the clam. The regulations down here were necessary because all the clam beds are seeded and the Mexicans were coming in and taking away thousands of them every day. Good video though. Love the recipe. I just eat mine raw with some hot sauce or steamed dunked in butter sauce with garlic.

    Hey John, great video as usual! A couple of suggestions: stick the clams into ice water after boiling to immediately stop them cooking and spin off the excess water in a salad spinner before using the paper towels.

    clamming is a blast. grew up in ipswich mass and we had a shellfish warden as well. out of towners used to think it was a gag of some kind but they protect the fisheries and they're usualyl the nicest cops on teh water./

    Interesting! I'm not a fan of raw or rare-cooked shellfish so this may be the way to go. I bought a deep fried oyster with fish and chips once but it was very expensive and didn't invite a repeat purchase.

    John - NOOOOOOOO! a litlle garlic in oil, boil some linguine in another pot, start a large pan with olive oil, some red pepper flakes, add the clams, and white wine, dry sherry,
    they will steam..... throw in the mostly cooked linguine to soak up flavor.
    Serve with Italian bread or Angel hair pasta. Linguine Vongole

    You should hunt in the winter. Deer is very tasty and Long Island is infested and the season is long. Just got into last couple years and I find hunting and archery just as addictive as fishing.

      You need to check with the local municipality where you intend to dig. It's complicated. You need to learn State vs Town waters.

      @@mfarley4512 Here's how this shit works 95% of the time. Cops want to keep warm. Really have no desire to get out of their nice warm car and walk along the shoreline a half mile getting sand in their shoes along with some seaweed on the 5% chance someone is clamming illegally. The average street cop, which this guy appears to be - Southold Police (not DEC, not a Bay Constable) - look at his patch. So the cop is nice and warm, looking for the usual - car with switched plates, no inspection, etc. The guy has NO IDEA, most likely about clamming regulations. Anyhow, the way it works is some entitled, rich busybody, who lives in a house on the shore spends all day looking out her kitchen window, sees someone spoiling her unblemished view of paradise - and there his is - SKINNER!!! Or some other dirty clammer. He must be a poacher, or not - but who cares, THIS is very upsetting for someone to look at, so what do they do? Well, of course - they call 911 and report "Illegal Clamming Activity!" So the nearest, warm, comfy street cop is sent by the police dispatcher to go and check it out. He would rather not, he knows it's probably Skinner, or just some bullshit old lady cryin' about nothing whose view is spoiled. And so he goes..... Trust me, pal. That's exactly how it happens.

    is that not boiling the clam? I thought it was steaming when it wasn't in the water but boiling when is

      Look again when I'm scrubbing the clams. There was a half-inch of water in the pot. When I'm done steaming, there's maybe an inch total from the addition of clam juice during the steaming. The clam juice bubbles up a lot and looks like boiling, but there's very little liquid in the pot.
