This is a recipe we have been making in our house for years and years and it's so yummy. It's kid friendly and even non vegans will love this one! I just found your channel and I loved how clean your house was so I kept watching. Then I thought you seemed very eco-friendly/conscious which is a nice change from all the other 'mum channels' I'd watched where there was just so much plastic it was upsetting... Theeeeeen you turned vegan and yaaaaay, I'm so happy! You're a super mum and feed your kids actual food, not meat and dairy with half a veg.

I made this last night and it was really good. I didn't have miso paste so I subbed in a few Tbsp of nutritional yeast. Kid approved, and it makes a ton!

Looks so good! Not sure if you’ve ever used it, but you should try adding some nutritional yeast in the filling or even on top (blended with raw cashews for a vegan “Parmesan”). Good for you and such a yummy, cheesy flavor!
I have nutritional yeast, and I’m not a huge fan of sprinkling it on top of dishes... idk why lol but I’ve mixed it into recipes and like it that way! ♥️ I will have to try blending it with cashews and try it that way😘 thanks for the tip!
You should make a video on different breakfasts/lunches for kids. For some reason I always struggle to come up with something new for my kids.

This looks like a very nice and simple recipe which can also easily be changed up a little by using more fresh ingredients or a home-made tomato sauce. But this is quick and I think easy enough for cooking beginners.
Yes! This was kept very simple, but you can absolutely add in spinach and other veggies♥️and I have a delicious and easy homemade veggie packed pasta sauce recipe on my channel you would love!

This is so good and easy to make. I do it to, sometimes, I add ground beef inside. All though my kids are big they love it like yours. I been watching your videos for while now but, this is my first time writing you. I love stuffed shells. I make an enchilada stuffed shells but I am sure you could veganize it to switch up the beef with tofu. I'm putting tofu and miso on my grocery list so I can give this a try. Thanks for sharing.

You could add in some soy sauce, but I would try a little less than a 1:1 ration swap 😉
Ok where to start? Miso is not necessary. Neither is a food processor. Use a fork to mash the rinsed and then dried tofu in a large steel bowl. Add fresh minced garlic, lemon juice, olive oil, salt, fresh minced oregano and nutritional yeast. Much easier to work with and more closely resembles ricotta. Make some homemade rustic sauce from plum tomatoes, garlic, salt, basil and olive oil. Or, find Dom Pepino sauce if you want something close to homemade. Stuff the shells with a teaspoon and place open side up in a Pyrex dish lined with a thin layer of sauce. Layer with more sauce and top with vegan mozzarella cheese. Do not cover. Bake at 375 for 30 minutes and serve with a green salad and fresh semolina bread. A nice decanted Barolo or even a simple Chianti goes well with this meal. And don’t forget some red pepper flakes for the table! Enjoy!

I wonder if there would be some way to substitute a good processor... maybe a blender in small batches. Otherwise check a thrift store, you can pick one up for under $5 there😉 this recipe is totally worth it, so good!
