    Friends, this is the BEST vegan fried chicken recipe. It's seriously crunchy on the outside with well-seasoned breading full of nooks and crannies. But the inside is what makes this vegan fried chicken different from all the rest. You won't believe how tender, juicy and meaty this vegan 'chicken' tastes and looks. Flavour bursts from layers of 'meat' as you bite into it.
    I stumbled across the secret to creating this realistic, crispy and juicy vegan chicken last year (you might have seen it on my Instagram stories) and have since perfected it so you can make it easily at home. Make deep-fried vegan chicken on your stove top or deep-fryer for the absolute best vegan chicken you've ever had. Or, you can bake these golden pieces of juicy perfection in the oven for the best oven-fried vegan chicken ever. And it's gluten-free to boot!
    BTW, using food that has been frozen and thawed twice is safe, as long as you do it right! Don't forget to read the printable recipe before you start.

      Are you using a certain brand of totu? After following your intructions my tofu still breaks in chucks, NOT LAYERS.Does it matter if you use Trader Joes Extra Firm?

      Try medium firm tofu. I think that's what she suggested for the best texture :)

    Hi Mary. This recipe is so awesome and everyone in my house loves it. I wanted to share with you an improvement in the process that makes this recipe way easier to make. Basically...instead of ripping the fragile tofu pieces apart and then pressing them in the double strength vegan chicken stock, you put the tofu blocks in the stock PRIOR to breaking them into pieces. So basically:
    1. Freeze twice and thaw
    2. Press water out of tofu
    3. Put whole tofu blocks back into their original containers.
    4. Pour double strength broth over tofu blocks in the containers
    5. Manually press the blocks down to get them to suck up the broth
    6. Remove and break into pieces
    7. Bread as Usual.
    The tofu pieces are far less fragile this way and you don’t get a million tiny pieces breaking off but the results are pretty much the same. Hope you find this useful!

      Just for the love of god don't try to put out a grease fire with water. Cover the pan with a lid as the lack of oxygen will kill the fire and keep you from being homeless.

      agreed. Being vegan isn't synonymous with healthy. I know someone who lost a bet and "went vegan" for 3-4 months and gained 10lbs!!
      Beer, pasta, rice, beans, potatoes, soft drinks, juice, onion rings, fries& gravy, red licorice, gummies, chips, tomato pizza, garlic bread. He fried everything he could and ate tons of carbs like bagel, carrot cake, muffins (all expensive vegan deserts too: delicious and loaded with sugar). Now, you might say that's 'not really' vegan but it is. Its just extremism pushed to its natural conclusion where health becomes secondary.

    I made this recipe with Bob’s Red Mill Vegan Egg Replacer, b/c that’s what I had on hand, and instead of mixing the egg replacer powder with plain water I used a few tablespoons of the double strong vegan chicken broth that I’d soaked my defrosted and drained tofu in (Not- Chick’ N Bouillon Cubes). It came out fantastic!!! It had layers of delicious flavor from the crunchy coating all the way into the tofu. Next time I’m doubling the recipe so I’ll have enough left over to enjoy again the next day. Mary, thank you for another really great recipe!

      Do you mean after you form the bun shapes and let them rise? Next time put the formed dough on to squares of parchment paper so you don't have to actually touch them to transfer to the steaming basket.

    I always find it insane how much water comes out of the tofu after freezing it hahaha the first time i was like "woha, where was all of that water hidden?". Literally a sponge!

I am not fully vegan myself, but I am definitely plant based - I am GF for health reasons, so that's eliminates 80% of the food as I knew it, so ashamedly I still have some meat on the days when I am out of any other food and/or haven't done my food prep.       Green Life In Dublin - Sounds like you are a flexitarian rather than plant based. I mean, you are not plant based if you eat MEAT some days, as you describe. Just sayin'... ☺️ Personally I am 100% vegetarian, and maybe 98% vegan... I do my best, but getting to a full 100% is just a bit difficult for me where I live, but it is getting easier as more join, more products become available etc...
      So great with all these yum recipes, but also so nice that you don't have to make everything from scratch, but you can also buy some things too. E.g. They now have the most delicious fresh vegan schnitzels, breaded with cornflakes, to die for! Great for a lazy "fast food" dinner, airfryed with some sweet potato fries... I am automatically feeling so naughty when having it since it feels like fried - even if it is not bad at all... When I have that for dinner, without any veggies with it, I'll usually sauté a big plate of veggies as my evening meal - together it is a healthy dinner, right? OMG! I am soooo hungry, have to make something NOW! ☺️

    Making this for the 3rd time at 1:25 a.m. and made a vegan chicken gravy and some vegan mashed potatoes and used my Creole grandma’s seasoning blend for the flour. First time I actually made my own General Tso’s sauce and some furikake rice. I get high a lot ok lol. 💚🌻🌿

      Edgy Veg - A few years ago, they told me at a local Asian store, that you cannot freeze tofu. LuckilyI didn't think it made any sense, so I went ahead and did it anyway and discovered how easy you get the water out and how it changes in texture (becomes more chewy)... ☺️ Where would vegan food be, if people weren't creative and shared? 👏🙌👍💚🌱✅❣️

    I've come back to say THIS IS A REALLY GOOD RECIPE!! I have done this countless times and it has worked perfectly!! It tastes amazing and the resemblance to chicken is uncanny. I even tried it without the rice crisps and it was STILL really crunchy and delicious. It also can be changed a bit too! Like I personally add a few more seasonings and soak my tofu in a canned pickle and jalapeno juice mixture(this makes it taste like chik fil a). And also the baking technique works like a dream as well. But don't make the mistake I did and get FIRM tofu EXTRA FIRM is the type you need!!

    i tried this with extra firm tofu... no bueno. then i tried it with medium firm tofu and omg this changes the game!! my family LOVED it, even the self proclaimed tofu haters! (and i tried the baked version, too!) thanks for this recipe mary!! :)

    If you're in Australia and looking for "medium firm tofu" I'm pretty sure it is "lite firm tofu" and available from Coles. I've tried this and the results seemed to match the texture in the video.

    I'm newly vegan, about a month in and I am head over heels in love with my cruelty free nutrition change. I am super excited to make this recipe! And you information about thrive literally is going to change my shopping life!     This worked really well. Thanks, Mary! I made it exactly as you suggested and got very similar results. As I was squeezing the water from the tofu, I wasn't convinced I was going to get the same texture you did, but I did in the end. Next time I will try adding more herbs and spices to the flour.

    I've followed a few videos for making this recipe. This is the best one. Some say you don't need to drain the tofu before freezing. This is true but it does change the texture (it comes out like eating a cloud) and it breaks apart all boxy/square. Drain first and you can pull apart into more appealing shapes.

      Drain first before freezing and you increase the chance for contamination which is the main reason I don't recommend it.

    Came back to say that I tried this! My tofu didn't come out *quite* as flakey as the one in the video, but that very well could have been because of the way I pressed it before breaking it apart. However it still had a sufficiently flakey "meat like" texture to be very impressive and I will DEFINITELY be using this technique a lot more often! I didn't make fried chicken, I actually just threw it straight into the oven to dehydrate it a little more and then soaked it in some homemade BBQ sauce. It reminded me of ribs! And even my omnivore tofu-skeptical hubby loved it! Thank you for this video, I'm obsessed with making tofu now 😄

    As soon as you said the best vegan fried chicken ever my mouth watered! I cannot believe how amazing this tofu looks! Now I know how they make the “chicken” balls at the vegan Chinese place I frequent.     The of the best vegan chicken recipes i have made yet, I cant stop eating it. If you season well and get a good dipping sauce you have a hit!!! Biggest issue I had was finding medium firm tofu. i went to 3 Asian grocery stores before I found it in TN. I tried both soft and medium firm. The medium firm was perfect. Better for me than gluten/seitan chicken so will be my go to when i need a quick chicken fix

    Made this recipe tonight and it is AWESOME. Thank you so much! I used half cornflake crumbs and half panko bread crumbs for the cereal part. I used the oven fry method and I couldn’t believe how crispy it was! Texture became even more chicken like as it cooled. This is definitely a keeper!

      I made this for a second time tonight. I am so grateful to you. It has become one of my favorite things! Here is a quick observation....the first time I made it, the tofu didn’t look quite as “shredded” as yours (even though it was still great). So I decided to use the same brand of tofu you use in the video and...voila! There seems to be something particularly magical about Sunrise tofu. Mine looked just like yours. So exciting!! You are the vegan queen!

    Greetings from Florida! I tried this yesterday and it was awesome! I found some organic panko on Amazon that I used in place of the rice crispies and Bob's red mill egg replacement . I used the firm tofu from our local Publix grocery store. The texture still seemed rather tofu like to me, but my wife (also named Mary) said that she could not tell the difference. Overall, we were very happy with the results! I made some vegan ranch, we sprinkled on some hot sauce and we had Buffalo chicken salad for dinner

      Just for next time, the tofu called for is medium firm, rather than firm. The softer tofu is much better for getting that chicken-y texture.

The original catalyst for me was a vegan Buffalo chicken salad I had on vacation and they said they used extra firm. I'm sure I will find what we like best. Thanks again for the recipe!

      p.s. Another substitution for gf Gojuchang, is to make your own ahead of time with soy sauce, sesame oil, ground Korean red pepper flakes, and your choice of sweet element (maple syrup, rice syrup, ect.) all ground together. It wont taste exactly the same because it hasn't been fermented but the taste and texture will be similar.

      Have you seen Dr Oz show with the Dr and I believe scientist, that said to be able to eat gluten without a reaction to drink a teaspoon of apple cider vinegar in water before eating it. It preps the stomach so that gluten can be consumed without a problem. Look it up.

      I'm the opposite...most of the meat substitutes in this area use soy, not vital wheat gluten, so I end up having to make my own seitan.

    Made this recipe and it was a hit with EVERYONE vegan and NOT.
    However my tofu looked more like a sponge vs flaky 🤷🏻‍♀️
    I also let the tofu sit in the chicken broth for a couple of hours to absorb the flavors before I prepared it👍🏻

    This recipe is completely legit! So tasty and crunchy and feels and tastes pretty impressively close to good fried chicken. We made it and devoured as we fried it. It's well worth the work. I used to eat chicken and red meat and occasionally had eggs and fish. Because of really good vegan recipes like these and a health goal, I decided to remove all animal foods from my diet. I've been plant based for 14 years and I have no regrets. Thank God, I have been fibroid free for 15years (after myomectomy, 14 years ago) since I made the switch to plant based foods. Folks if you are on the fence about whether to switch over to full plant-based food I can tell you from this side of the fence that is worth it and very doable. Really search out recipes to the foods that you enjoy and switch out the animal products for healthier plant-based products and you can still use just about all of your seasonings. You really can get delicious plant-based food and as long as you eat it with temperance ( along with moderate exercise, exercising a joyful peaceful attitude, trusting God to help you, you will be able to secure better health.

    I made this tonight (just vegetarian style, I still used a regular egg wash) and it was delicious. I personally found the smaller chunks were more chicken-ish, and less watery. (I have a hard time getting enough force into pressing my tofu)
    I'm not vegetarian, I just like to go vegetarian when I find a good alternative, and this was REALLY good. The tofu held the chik'n flavor quite well, and the breading was light and crispy and honestly the best part! The freezing process really did change the tofu's texture, too!

      Instead of berating I'd like to commend your efforts. I do hope at some point you consider going vegetarian or better yet, vegan. My aunt owns a commercial egg farm and I have to tell you, it's horrific. The chickens never in their lives see the light of day after arriving at the farm. They live in cramped cages and rub their necks raw sticking them through the cage for food. The lights in the barn are set on a timer, the ventilation is extremely poor. In the summer it's insanely hot. They live this sad life, never ever leaving their cages until their "good egg laying days" are over. After that she sends them off to be turned into chicken nuggets for places like McDonalds. Countless thousands of living beings, subject to the most brutal mental torture and confinement. It's truly sad and awful. Please give a life excluding animal products a chance. It's very easy in this day and age!

Be sure you're getting your proper fats (from nuts, coconut, and/or avocado) and your vitamin B (from nutritional yeast) -- things vegan men NEED (women who go vegan need to keep an eye on iron and B vitamin). These are things people going vegan consistently forget. Just like w/a non-vegan diet, don't rely on frozen and pre-made foods, you'll never get your appropriate nutrition that way. ;]

    Made this tonight! So yummmmmy! I baked it and it was perfect. I used Organics firm tofu and it did not get the flaky nor spongy texture. more of a crumble feta. But I still managed to break off large chunks and treat it very delicately. I also used chickpea flour and water instead of the egg replacer. i just added water to the flour until I got the consistency needed. Big hit with my family.     Hi Mary, I just made this today. It was da bomb! And oh were you so right, my kitchen smelled heavenly, even got our cat and dog’s attention. They were both staring at the stove “what smells so good, I want some too!” Haha! It really tastes like fried chicken (the texture is a little silkier though I used semi firm tofu as per your recipe, perhaps I should try firm or extra firm?). Really not a fan of seitan.     I gotta say thank you for this video, I'm not vegan nor vegetarian and I applied this tofu technique to my own recipe of fried tofu chicken. I used actual chicken stock to rehydrate the tofu and made myself a restaurant style coleslaw and put a few fried pieces on Hawaiian burger bun and topped it some of the coleslaw and had myself some fried chicken sandwiches mmm. I liked it so much that in the future I'm actually gonna try the recipe exactly how you made it.

    I’m totally thinking this would work for a vegan Karaage Don! Just season the tofu for more of a Japanese flavor and do a potato starch coating, I’m really pumped to try that actually! Hopefully I can give it a go soon. I’ll let you know how it turns out.

      After you freeze it. Let it thaw, and then the water comes out easily!

      Freeze and thaw the tofu
      Place the whole unopened package or packages of tofu in the freezer and freeze until solid (about 6 hours to overnight). Thaw completely. I do this quickly and safely by thawing on the counter until mostly thawed but still cold (about 4 hours) then letting it thaw the rest of the way in the fridge. Once you believe the tofu is completely thawed, freeze it solid again. Then, take it out of the freezer at least 5 hours before you want to start making your vegan fried chicken.     Nice bet you can turn it into teriyaki chicken nugget , soy sauce /sugar or Marin & dip before flour.

    I am a meat eater and so is my fiancé but I’ve been curious about these copycat chicken recipes and so o decided to try this out. I only froze my tofu once and I didn’t use puffed rice. I am impressed. As far as flavor goes, They tasted just like McDonald’s or Tyson chicken nuggets. There is a slight chew/spongey texture but honestly it’s so subtle. My fiancé is picky about that texture but he said he liked the once I made that were more of a popcorn chicken size, because it was less noticeable than the larger ones. All around I will definitely make this again

      Freeze and thaw the tofu
      "Place the whole unopened package or packages of tofu in the freezer and freeze until solid (about 6 hours to overnight). Thaw completely. I do this quickly and safely by thawing on the counter until mostly thawed but still cold (about 4 hours) then letting it thaw the rest of the way in the fridge. Once you believe the tofu is completely thawed, freeze it solid again. Then, take it out of the freezer at least 5 hours before you want to start making your vegan fried chicken.
