11/10 Kitchen Confidence is an excellent course that taught my husband and I a LOT about balancing foods , combining flavors, and in general whipping up something from nothing without a recipe. We took it last year and it was worth every penny. If you're on the fence, DO IT!!

I've never liked the texture of overnight oats either. I thought adding Chua seeds would help - it didn't. I'm through trying them. My favorite way to eat oats is homemade granola (Google Chef Kathleen granola recipe - it's my favorite).
I like these no rules recipes. This is how I go in my kitchen as well. So much more options and flexibility, and the combinations are limitless! As would chef John say, this is you cooking! 👍

Yes! I've been doing it this way almost 15 years. My well-stocked kitchen keeps it as stress-free and flexible as possible. Almost always I don't pre-plan breakfast. It's more like I wake up each day and ask "What do I want today?" I think that's the way most "non-dieters"/non-food-preppers think. I prep a few salads at a time for convenience for work lunches. For dinner, I simply "cook some food"--big amounts of yummy comfort type food--no divvying up in food-prep containers. I portion out the food at mealtime on my plate and I enjoy the leftovers a few days until I have to think of what's NEXT!

I love your food journey; mine is quite similar. You haven't used the words "intuitive eating" but your approach seems consistent with those principles. I, too, found that rigid rules ultimately did not serve me.

I Love these ideas. My son just started Kindergarten and I want to always have a wide variety of snacks and lunches for him. But he is not allowed seeds, nuts, any seafood and no nut free butters. Idealy cold lunches too. Would you have any ideas please. thanks

Thanks for this. I didn’t know what to have for lunch and now I know that I’m going to have a mango and spinach smoothie LOL my husband has been wanting some energy bites, So guess what? I’m gonna make those as well LOL my six-year-old daughter started drooling at the Popsicles so looks like those will be on the agenda as well. Because I'm always looking for easy ideas for familiar recipes that I can now Veganise, moving away from having been a lacto-ovo Vegetarian for 30 years, I see eggy casseroles like this, and wonder to myself, "Okay, how can I do this **now**?" I think in the case of something like this, I would probably scramble some firm or extra firm tofu, but I would also make almost a crepe batter, but instead of eggs, I would use 2 Tbasp ground flax, perhaps a tablespoon of chickpea flour, maybe a couple tablespoons of black chia seeds, and maybe a really high protein nut milk. I used to do breakfast casseroles like this when I was lacto-ovo, using the MorningStar Farms breakfast sausages, which actually have egg white in them. Since going Vegan, I'm not only not using eggs, I'm not using things with eggs in them, and I'm not adding the cheese to this, so because my Asperger's person deep dive into food causes me to seek a scientific solution to a logical problem, I'm figuring out how to make what you made, as I did, without any eggs or dairy. Sometimes I end up with something that's really good, and other times, something that's rather like if I deduced the bread flavored pencil eraser. Meanwhile, I was wondering what to do with my frozen mulberries from my yard the past couple years. I've done jam (amazing), and syrup (make you wanna slap yo' mama), but what else? I'm going to do a wine, and a honey fruit meade, or course, but with my fermented, inoculated nut cheezes, the liquid non-dairy yogurt drinks ar just there for the blending, with my fruit, to make a popsicle! Thank you!

I like eat boiled egg or yogurts with fruits and some granola 😀💞.

with granola, added sugar is usually the biggest culprit. The less you can find the better :)
