I become so relaxed watching you cook. Your cooking style & videos are awesome. My grandson & I are transiting to healthy eating. My husband went on a fast, so I introduced him to your recipes, and he enjoyed each one I prepared for him. We are enjoying our journey. Many blessings to you & your family.
My dad is anything but vegan however, whenever he tries one of these vegan dishes, he not only enjoys the taste, he also always says how good he feels and how light the digestion was.
I made it last night. Really tasty! Two things surprised me: 1) That miso cooked with rice is an amazing combination. I only used miso in soups, although I knew I eventually needed to branch out and try it in other things. And 2) the difference in texture and intensity when chickpeas (and the mushrooms!) are roasted before added to a dish. I didn’t have smoked tofu, but I happened to have smoked tempeh in my fridge, so it all turned out great. Thank you for sharing your wonderful ideas!

Love the combination of roasted king oyster mushrooms and chickpeas that you’ve introduced us to. We have your chili oil rice on rotation and will have to try this one too. And so easy to have dinner on the table in less than 30 minutes!

I've been trying to reduce / eliminate the amount of plant-based "meats" I eat as a vegan because of how prcocessed they are, so I worry I'm not getting enough protein, but this recipe is packed with it! I made this last night and it was delicious. For some reason, king oyster mushrooms are hard to find where I live, so I used a mixture of oyster and meaty fresh shiitakes. Not exactly the same texture, but it tasted great regardless. I’m a huge fan of chickpeas along with carbs of almost any kind, so this was a simple win for me. Thanks again Wil for yet another delicious and easy plant-based recipe.
This is my second dish after I made the delicious ramen. Holy cow, this one is another top tier dish. The umami is so incredibly great and the king oyster mush, chickpeas and tofu have a very nice crispiness to it. Thank you!! What a channel!

Thank you for this recipe! It was super delicious. I made it even healthier by making it with whole grain purple barley which takes a long time to cook. I didn't want to kill the miso so I just started in after it was cooked. Otherwise I followed the recipe as is. Super delicious!.

We lived in Discovery Bay, Hong Kong for five months last year - absolutely love Hong Kong! Traveled daily, Peng Chau, Central, Maritime, Number three dock ferry, Tung Chau, Tai Po, Mui Wo - I cried when we had to leave! come back to Vermont, US! We plan another long visit with my daughter this year- teaches close to Sha Ting. I never got used to noodles and egg for breakfast!

Most markets only have basics, so this will require a trip to Whole Foods or something similar. Quick question about short grain rice…it’s a 1:1 rice to water ratio? Although I use a rice cooker usually (I cannot make rice on the stove 🤷🏼♀️😂) it seems that other types of rice require more water? I usually use long grain or basmati rices bc that’s what’s available. Love these Sunday morning additions to the ideas for this week! Thanks Wil! 🙏🏻🫶🏻✌🏻xx

You can make your own "smoked tofu" by adding liquid smoke flavoring to tofu.

The smoked paprika seasoned chickpeas and the miso rice can even be made into a Buddha bowl/ used as part of another recipe too yum ❤
