How to Clean and Cook a 300lb Grouper

  • In this episode of BlacktipH, we show you how to clean and cook a massive 300-pound Warsaw Grouper! My good friend Capt. Jason Boyll is one of the best in the world at cleaning Warsaw Groupers. We wrapped a giant rope through the mouth of the grouper and tied the other end of the rope to a tractor. We had to use the tractor in order to lift the fish out of the boat. This fish was so heavy, Jason had to fillet the fish while it was hanging. Each fillet weighed over 70 pounds! The meat was so white and flaky! After a half-hour cleaning this massive fish, we placed both fillets in the cooler and brought them home. Jason showed us his secret Warsaw recipe, and it was incredible! He used bread crumbs, pine nuts, and orzo to make this fish dish. The fish cooked in the oven for 15-minutes before Jason pulled it out of the oven. He sprinkled Romano cheese on top of the meat and left it to melt. It was some of the best deep-water grouper I've ever tasted, and we can wait to catch another one!

      he explained what he was doing wrong but we have to start somewhere. I just hate butchering such an old fish, at least give it the attention it deserves. Filet a trout if your going to do a how to.

      @@njd4291 it was a joke but if you want to catch them they like to hand around deep areas with stricter like sunken ships and docks but it will be unlikely that you or your son would be able to reel one in and I think there are very specific Laws on Warsaw grouper fishing so do your research

    I've had fried grouper before, and I absolutely loved it! Even with a regular sized filet, the meat chunks were huge! I hope I get to eat it again soon, it has been way too long.

      Hardly anything wasted. And even after boiling the scraps and picking the remaining meat bits from it, you can still use the rest as bait for other fish, alligators, shellfish or turtles.

    I love the fact that y'all are doing a clean and cook on this big boy. I watched y'all struggle to get him on the boat and into a cooler. That was pure entertainment. Lol Please tell me you're going to cook the meeat in the head as well? The head has so much meat in it on a fish that size. Hell of a fillet for sure.

    I wonder how old that Warsaw grouper was. They could send the ear stone (otolith) to a biologist to find out. They're much more rare than they used to be, the daily bag limit is now one fish per boat.

    Head and belly is my favorite part. Good for soup with tamarind. tomatoes, garlic, onion, ginger few drops of fish sauce then chilly. Boil until become tender. Thats good

      Cheeks are great for folks who know to take them off too. Fish cheeks come easily off the gillplates and depending on the fish can be even better than the filets. My Korean buddy also invites the family over and roasts whole heads from bluefin tuna. Another one of his restaurants serves tuna collars.
      He takes the bony structure behind the gills off in one piece, salts them and places the big A frame looking structure upright in a scorching hot roaster.
      Afterwards everyone gets chopsticks and we gather around the perfectly roasted tuna collars to attack them all at once.
      Great food, good family fun!

    I'm SURE its preference, BUUUUT. I can't, kill my fish taste with ( cheese). To me it takes away the game taste. Other then that. WAYYYYY thumbs up on the cut and cook. Thank you guys. As always, KEEP UP THE VIDS. Total bad ass!!!!!!

      Parm cheese won't take the taste away from that fish at all. Parm is salty and just rich but not to rich.. I personally don't care for Romano cheese but parm is hands down my favorite with blue cheese coming in at a very close 2nd. The fillets are so thick, that amount of cheese is like a pinch on a cut of meat that size. It would still have the salt water g and taste for sure

      @@gabrielmorath6252 bigfest fish we ate that I caught was a 50 lbs wahoo. I did get a 14 foot tiger shark up to the boat but then it snapped the leader (granted we were going to cut it at that point)

    Thats how we used to fillet nile perch... the same size on lake Tanganyika - yep same size - also lots of cheek meat, which I didnt see being utilized! Otherwise great fish and brings back memories!

    I’m a huge fishing guy but this kinda grinds my gears, no reason to kill this fish honestly. Such a huge beautiful animal should be be released back into the wild for more people to appreciate in the future.

      I agree with you. Its lived this long out there leave him be. To be fair to these two meatheads however, that grouper would never have survived them bringing it to the surface then letting it go. It was pretty much dead when they got it to the surface. A fish that size that has lived decades in 400+ feet deep water would have gotten a severe case of the bends. Same thing divers get if they ascend too fast. It has a scientific name but it escapes me at the moment. I don’t bottom fish so i never encounter anything near this size. Im fine catching mahi mahi, snapper and jacks.

      @@ignignokt-6050 finally someone said it for all the "whY dIdNt TheY leT it GOOoo?" people on this post. Barotrauma. & a fish of this size wasnt caught in a matter of 5 minutes so the combo of Barotrauma and exhaustion, that fish isn't getting back to the bottom alive. Also, these fish are not as rare as many want to presume.. but not many people are fishing at the depths these giants live so they aren't catching them!

    First time I've heard of a brooder sized grouper being harvested from the sea and processed for human consumption. All my prior knowledge consists of black & white photos of them from a century ago and longer, when some of the open oceans largest products were tilled into farming soils. It's a great way to boost soil nutrient content, but failing to eat what we catch is just dumb.
    My only concern with eating larger fish is from past experiences. I'm not sure if it has anything to do with the age, species or size of the fish, but there isn't much more stomach turning than finding those stiff but thin, neatly coiled worms in a fresh filet or after cooking.
