Homemade Chicken Satay with Peanut Sauce | Less Oily

- Ingredients:
800g Boneless Chicken thighs
4 cloves Chopped Garlic
20g Sliced Galangal
75g Sliced Lemongrass
200g Sliced Red shallots
Marination:
80ml Olive oil
2tbsp Lemongrass paste
1/3portion Blended paste
2tbsp Tumeric powder
2tbsp Golden castor
1tbsp Onion powder
1tbsp Garlic granules
2tbsp Salt
1tsp Chicken powder
1tsp Curry powder
1tsp Fennel powder
1/4tsp Ginger powder
Peanut Sauce:
( Approximately 1 litre)
80ml Light Olive oil
2/3portion Blended paste
700ml Water
80g Golden caster
100g Blended ground peanuts
85g Palm sugar
1tsp Salt
1/2tbsp Tamarind paste
8g Pre-soaked dried red chilli flakes
70g Jimmy’s sate sauce (www.amazon.co.uk/Jimmys-Saté-...)
240g Peanut butter

Hi Ling! Thank you for this recipe, I've made peanut sauce many times but your recipe seems to be quite different in quantities than others so i am excited to try this week!
Also i would like to know if putting the chicken on skewers is important to the way it is cooked or is that just for the look? I want to save a bit of effort and time and fry them directly as little pieces and wondering if that would change anything? Thanks👍❤️

It’s just a particular brand I used, called Jimmy’s Sate Sauce😉I’ve never tried any other brand, just prefer this one😋
