Salted Egg Custard filling:
(200g, 5g each portion)
3nos Cooked salted duck egg
30g Custard powder
30g Milk powder
25g Sugar
1tsp Salt
95g Pumpkin purée
45g Unsalted butter
Snowskin Dough:
(10nos Mooncake)
25g Icing sugar
30g Wheat starch
50g Glutinous rice flour
50g Rice flour
1/8tsp Salt
2tsp Rose water
25ml Condensed milk
175ml Milk
8ml Rose syrup
Chestnut filling:
180g Pre made Chestnut paste
Dusting:

Can you explain the difference between Glutinous rice flour and cooked Glutinous rice flour? How do I make cooked Glutinous rice flour?
It can be bought from store or you just lightly pan fry the glutinous rice flour for few minutes😉
