  • Did you know that in 2011, Beef Rendang was voted as one of the World's 50 Most Delicious Foods by some of the 35.000 people who took part in CNN international's online poll? This yummy dish deserves to be voted.
    In case you're wondering if beef rendang should look as dark as ours, yes it totally should! If you have seen beef rendang still orangey in colour, those are actually not cooked for long enough yet. We could only achieve this result after hours of simmering the beef in the beautiful curry gravy. The end result? Beef Rendang that melts in your mouth!

    Serves 6
    500g beef (can use knuckle meat or shank meat)
    3 pieces of tamarind
    1 tablespoon of curry powder
    1 stick of cinnamon bark
    6 pieces of lime leaf
    5 pieces of cardamom pods
    3 stalks of lemongrass
    15 pieces of dried chilli
    1 thumb size galangal
    1 thumb size ginger
    5 cloves garlic
    10 pieces of shallots
    800ml of coconut milk

      Good morning iLLa! Thank you so much! We forgot to add porcelain spoon in the wok - a trick our Malay friend thought us. She said it can help to speed up the cooking process. Amazing!       Rendang is a much loved cuisine of " dunia Melayu"( Malay world).
      And " Malay world" comprises territories that are known now as Malaysia, Indonesia, Singapore, Brunei, parts of Thai , Philipines, Myanmar.
      As such, we must not become paranoid. Just enjoy the food

    I made this with bone in ribeye. It was very good even though I used the wrong chili and it was spicy as hell.

    wow caramelized rendang is good one
    1 -note * dont grind lemongrass is give weird texture. just crush lemongrass and put inside
    2-note * add coconut shrewd but u can roasted it to brown for better taste

      Do u add kerisik? That elevates rendang to a whole new level. Kerisik is toasted grated coconut Candlenuts also provide an oilier texture n thickener but dont use too much. Maybe 3-4 nuts. Kerisik goes right at the end maybe last 30 mins.

    +Clove, 5 spices, asam kandis, belachan, salam\bayleaves, corriander, without curry powder as you mentioned in the caption, dried crushed grated coconut/serundeng. Foult system, sorry. At least you have tried 👌🏾 The meat normally put when the sauce is thick and oily, correction, sorry.

    Hi, i noticed u did not use kerisik( blended dry coconut paste) which the authentic malay rendang used, is there any different in taste?

    Oh and we have a local version in our country in the Philippines but it contains shrimp paste instead of curry and cinnamon and mainly a pork dish called binagoongan 😀

    can i cook this in a thermal cooker and will the gravy turn dark n thick like yours which is cooked over a fire?

      Hi Hui Cheok. Unfortunately a thermal cooker - no but pressure cooker is possible. We would recommend you to stir fry the chilli first before cooking them in a pressure cooker. Btw we were told by a Malay Friend that they like to add a porcelain spoon when using frying method to speed up the cooking process of the beef. We have yet to try it but we believe them cos malays make the best beef rendang 👍🏻👍🏻

    I suspect the reason behind the long cooking hours is in the old days, the villagers tended to use meat from old cows as they were too old to work in the fields. The meat tended to be harder and needed to be tenderised. The only way to tenderise the old meat was to cook it in the coconut milk in low heat.

      I often use low-grade wagyu beef, and it's still need more than four hours so it can be properly called rendang (darkbrown colour with naturally coconut oil appears from the process). With the condition it has been preserved naturally, so in the past Minang people can bring and keep it in weeks or even more than a month.

      the reason is preservation. it stays good for days without refrigeration, so you can bring them for long travel.
      cows don't work on the field, water buffaloes do.
      even with premium tender beef, the process will still take hours(if not days) because traditionally the rendang cooked till total dry where the spices become almost powdery.

    I tried cooking the beef rendang. I could not get it as dry as yours though. Cooked it for abt 4hrs. It tasted good. But the coconut smell is very strong. Is it supposed to be like that? People sometimes refer it as the coconut has broken and the oil has come out.

    I am a fan of your channel but 1 thing bugs me. I wonder why ginger can be a substitutde or galangal? The flavors are very different

      Hi Victor. Thank you so much. Galangal is still the preferred ingredient but if one really really can’t get the ingredient and doesn’t mind the difference in taste then ginger can be used.

      Yes you can use chilli boh. 15 pieces of dried chilli is about 15g. As chilli boh is usually salted, you might want to taste your end product first before adding more salt. Hope this helps. 🤓

      Well, cooking Rendang is experimental experience... the process is the same, but you can make many variations in ratio of spices for the spice paste. You will be amazed how they are different.. and still delicious. Find your favourites !!! Good Luck and have fun cooking it!!

      Hihi! We’ve read from this site (www.culinarylore.com/substitutions:what-can-i-substitute-for-kaffir-lime-leaves) that you may substitute each kaffir lime leaf with 1/2 to 1 teaspoon of lime zest. According to the author, the best combo substitute for each lime leaf is actually 1/2 teaspoon of lime zest & 1/2 teaspoon of lemon zest. Hope this will turn out yummy for you and your family.       Hihi. The ingredients used are largely the same except you can add toasted grated coconut to the ingredient list. You also don’t need to cook chicken for such a long time compared to beef so the colour of the dish is more brighter orangey than this beef dish. Happy cooking.
