  • The Smash Burger is my person go-to technique for cooking hamburgers. The caramelized crust you get on the outside of this burger brings a flavor component to the meal that just can't be beat! Give this technique a try and be amazed!

    You have to smash those way more. Use parchment paper in between spatula and patty so it doesn't stick to the spatula. It allows you to smash it more evenly and thinly, and prevents grease from hitting your hand and arm. Also, always do double cheeseburgers when doing smashburgers, i.e. it's better to do two 1/6th lb patties than one 1/3rd lb patties. Twice the char. Also, aim for higher than 450. Go like 500-600. It should only take like 45 seconds to cook the patties. It actually takes longer to prep the bun and condiments than to cook the patties.

      I wipe them onto the griddle and it doesn't stick . No parchment needed

    Friendly tip is to hold your smash for at least 10 seconds. Holding it like that keeps it from puckering up into a ball like that, keeps em thin n stays flat. 👍

    Smash burgers are sooo tasty and juicy. ive accidently overcooked some smash burgers and they still taste excellent

    Looks incredible. I was always taught to never smash my burgers so as to not lose the juice, but those looked perfect. Now I need two more accessories...the cast iron griddle and that awesome veggie grill. Thanks again John.

    Hi John, love your channel! Next time I want to wait an hour before cooking my burgers I will sure try this, but I can get a hot enough fire on the Weber kettle in half the time and in 15 minutes on the gas grill. I love my Kamado Joe for smoking anything but maybe not cooking burgers. 🍔

    I agree with you John, that cast iron griddle makes the best burgers!!! I recently did burgers on mine and man were they fabulous! That SS veggie grate looked pretty nice also! Has KJ come out with the new lid hinge mechanism for the Big Joe yet? Mine is still not working correctly? Have a wonderful 4th of July weekend brother!

    Looks awesome John- I recently bought a cast iron griddle and put it on top of my grill grates on my weber kettle and did the exact same thing. Made a great crust and much juicier burger.

    John, that looks fantastic! Kind of a twist on an old fashion skillet burger. I just bought my Kamado Joe Classic June 27th and have enjoyed watching your videos and trying some of your tips already. I just got a cast iron grill grate and hope to season it tomorrow. Looks like I'll be getting the cast iron griddle soon too!

    EVOO on a grill top @ 450? that instantaneous billowing of smoke should give you a huge hint.

    Never drizzle oil on an open flame. Add oil to a paper towel and wipe the griddle.

      it may be ok to drizzle a little oil to promote some flaring but that oil pour :OO

    Ketchup on a burger, no. Only spicy brown mustard. It pairs very nicely with the crust of a smashburger

    Need a bigger, heavy duty smasher and to hold it down for 10 secs for best effect. They were too thick.

    How do you go about cleaning the griddle? I assume you have to let it cool down so you don't accidentally drop all the grease into the fire.

      Rob Lappin yes let it cool and just wipe down with paper towel...sometimes before a cook, I simply wipe the cast iron with a little oil. Then just wipe out again after.

    Smash burgers are awesome but I have a question on the stainless steel veggie and fish surface. I tried the onions and they were great also, but now my stainless steel has burned on oil. How do I clean this?

    Good recipes but the sores on this guys hands and constant runny nose and sniffles is just GROSS.
