    Tip from a really old griddle/grill cook. Use non-stick aluminum foil on your smash press thingy. Wrap it around the smasher with the dull side down. You'll never need wax or parchment paper again. I've done 24 smash burgers at a time with non-stick aluminum foil on my heavy, cast iron smash press without having to change it out. Try it.

    When I was a kid back in the 60's growing up in Eugene, OR, I would follow my neighbor on his John Deere tractor while he plowed. One rainy day my Mom made me a burger on white bread with mustard and salt/pepper and lettuce. Old George and I sat in the rain and had lunch next to his tractor. Best burger ever and the memory will never fade.

      I put mustard on there before I cook it I cook a lot outside so I rub the mustard on then put my seasonings It acts sort of like a binder but it tenderizes it and makes them juicy I smoke the patties about two hours really low temperature then turn the heat up and let them sear for a few minutes each side Best burgers you ever had

      I know this is an old comment thread but that brought back some awesome memories. My grandmother would always make up a bunch of burgers in cast iron pan, wrap them in paper or foil, load them all up in a playmate cooler and bring them out to us where we'd be on the tractor, cuttings trees or whatever we happened to be doing. Usually on a bun but sometimes on quite bread. I've been trying to duplicate those burgers for years. I've come close but I haven't quite achieved it yet.

    Took a break from the video 20:04. Made my first smash burgers, including toasting the white bread, on the 6th use of our two burner Blackstone griddle. The 93% lean meat (with a few drops of peanut oil) performed perfect as per your instructions. Thanks! Next time will be to add slices of cheese along with a topping of sauteed onions, to suit.

    God. you have captured my desire to cook. I recently, (2 days ago), got a gridd;e to convert my gas grill to a griddle. you helped me with seasoning my griddle. My first breakfast today and it was ok. My wife didn't like my cooking on an iron griddle that she saw me seasoning it. Today she tasted my griddle chicken and she loved it. if it wasn't for you, she would not touch anything I did. now that the griddle is black and up to par. Now she is willing to trust me. That means she is willing to trust you. We are a hit with here. She wants me to make the smachburger tomarrow. you are the greatest.

    Man I wish I would have found your channel sooner. I got my first 36” griddle last week, seasoned it up and was so pumped for smash burgers and I completely botched it.       Same. Just tried my griddle out with some smash burgers, and them shits broke apart quicker than the League of Nations. It was a massacre. All my friends I had invited over for it laughed at me. I haven't been that embarrassed since high school.

    I’ve never made them, and I don’t have a griddle. But the other night I thought I’ll try a smash burger like you make. I just did what you always do, but in a pan and made do with what I had. Turned out great! Also wanted to add, the fact you always SHOW what to do, personally helps me a lot. Thanks!!!

    I agree about the speed comment. Not only for this meal but for everything on the flat top. That’s one thing that took me by surprise is how fast and hot this thing cooks. Definitely have to have all of your prep done and ready to go.

    I use a 6" drywall knife as my "spatula" to flip the burgers. Never had a tearout and works flawlessly every time. I found those long spatulas have a learning curve and this method takes the guess work out of it.

      I use something that is similar but it's actually designed for use on a griddle. It looks like a normal spatula in terms of the handle but the tool itself is a stubby rectangle with really sharp edges on all sides. This is what they use in most commercial smashburger restaurants from what I've seen and of course it works perfectly every time. Also I've seen in the commercial kitchens they always paint the griddle with a little bit of butter first which gives a much better browning effect... A darker color that's more caramely while still not overcooking the burger.

    I use a 5" wall putty blade (for food only, of course) as a flipping tool. Run that sucker over a sharpening stone a few times and it gets every bit of crust on the flip. And it's cheap enough where when it gets old and ready to throw out, you're only out about $7.

      Problem with not using foodgrade or foodsafe is some of the marerials used. The putty knife may contain unsafe levels of lead or other toxic metals. Just a thought, your family, your kitchen, your rules.

    1. Grille is not hot enough
    2. Proper technique- smash and HOLD the burger for a second don't just smash and instantly release pressure, you won't get an even cook across the entire patty.
    3. Flipping too soon-wont get mayard reaction (not sure if I spelled mayard correct but its the reaction that makes the *crust* of the burger)
    4. Take care when flipping, you need to "scrape" (with the spatula flush to the surface as to not damage the flattop) the burger off the griddle.
    5. Over cooking the burger, have everything ready so you don't overcook while trying to season and assemble other ingredients. Start small, don't try and make 8 burgers at once your first cook, start with one at a time and once you get into a rhythm and have a feel for how long things take work up from there.
    6. Too large of a patty, you want balls of meat that will squish thin without being so large they won't fit on a standard bun.

      When I first started watching some of Neal’s videos I picked up on his delivery technique. I knew he had some sort of exposure to naval training.
      His presentations are exactly how the nay delivers trading; intro, description of subject matter, person experience, content delivered with “matter of fact” (confidence), explanation of the critical do’s and don’t s, conclusion and results. Most of all Neal’s passion makes the videos top notch.
      On the other side of the camera, Amy is also incredible. Timely prompts to ensure important tidbits are not missed and he camera work is fantastic.

    I just did my very first smash burgers following your teachings. I was so confident in what I leared I rolled out about 17 balls. I did one first, turned out perfect, then I did two, then I worked up to three. Mine looked just like yours and I seasoned one side. I was careful to dig for the crust. I think they turned out reallly good, just very slightly over seasoned. I'll back off that a little next time. I had a double and my youngest daughter had a single. Tasted alot like a Wendy's burger, which I think is good. I'm really happy because I've NEVER cooked, and this is great. Clean up wasn't even too bad.

      @@XeNeXX I didn't start really getting into cooking until I was 30. I was a late bloomer in life, and aside from lots of camping (I worked seasonally in logging) and couch surfing at friends/family, I didn't fully move out of my parents until 28....too long of a story for here.
      My mom was a real annoying bit*h about me using her kitchen, so I just avoided it never really bothered getting into cooking much, except for basic stuff such as frying eggs/potatoes and such. I also was ignorant of how easy it is to start learning how to cook, so I didn't have confidence in my abilities. But now I love cooking and have learned alot in the last 8 years.

    Thankful to say my first couple of times I didn’t make that many of these mistakes. The one I was guilty of on my second run though was making too many at once. Makes for one chaotic scene-especially if you’re hosting! 😮 BUT, overall mine were a success.

    I bought a commercial 16 inch Avantco electric griddle for $230. It takes a while to heat up but it works incredibly well and things like worrying about the right temperature are never a worry. I set it to 425, let it heat up for 25 min or so, and proceed to make incredibly delicious smash burgers.
    The grill plate of the commerical griddle is nearly 3 times as thick as my Blackstone... and it makes a huge difference in the cook.

    Great tips! The only thing I do differently is mix my seasoning in a small bowl so I can use my hand to sprinkle it rather than deal with the individual seasoning bottles.

      I mix my seasoning into the meat before I make the balls. Works just fine.
      Just make sure you season just as you're ready to start cooking

    Thanks so much! First cook in my Blackstone and first Smash Burger. I made a nice warm slaw with broccoli, cabbage, and mushrooms for on top and on the side.
    Had some trouble with getting the first few off the griddle but then I got the hang of it. They were a big hit with my husband, his twin, and Cosmo the cow herding pit bull.

    Ive practiced making smash burgers so many times that i had completely forgotten some of these problems that i definitely had as well. I just pushed through with just trying it a thousand times haha if all else fails practice makes perfect!

    I'm a line cook in chicago ; after the owner of the restaurant took my 6 hours of overtime and spread it out throughout my paystubs so he couldnt pay me overtime, it made me realize even through i basically did all the prep, employee relations, kitchen set up, deep clean, I realized i can run my own resturant if i tried thnk you for these tips

    Great video! I usually go about 2oz for my patties. 3 tops, depending on how much I have to use. I like the smaller patties since it's better to stack them up. :D

    I’m from Wisconsin, and we did all those things with white bread, also (including, stretch your hamburger with it).
    Now I make buns form sctrach, and my family goes wild for those, since they taste like croissants, but still make loaves of white bread occasionally.

    You can tell the heat of the grill with the palm of your hand. The number of seconds you can hold your hand over the heat at 4 inches will give you your heat. Also, use the bottom of a sauce pan to mash the burger down. Just moisten the bottom of the pan and push down and give a slight twist. One minute on the first side 30 seconds on the second.

      Just tried the sauce pan trick. Worked like a charm! Only issue I have is I only have stainless steel and plastic spatulas. So a lot of brown stays behind

      You can tell it's hot enough when you put your hand on the flattop and can only hold it on there for .2 seconds

    Some good tips. I didnt have a grill or smasher so I improvised. I found 2 mins first side and 1 minute final side. The foil worked great. I just need better equipment now. Thanks!.

    I've definitely made a few of the mistakes you mentioned here, biggest one is rushing and not letting it come up to temp, just need to be more patient, looking at the difference in your burgers really shows just how important it is.

    I watched a couple of your videos, and I made Smash burgers for the first time Saturday on a small griddle on our stove top. They weren't perfect but they tasted amazing. I'm on Amazon purchasing your favorite spatula. I may end up buying a flat top grill this summer!!!

    Just found this channel as I'm in the market for a griddle. I saw a trick somewhere, maybe it was Diners Drive-In's and Dives, that you put a hunk of cheddar cheese on the burger, then shoot it with water around the sides and put a dome over it. Makes that toasted cheese around the patty. It's different but very tasty (did it in a skillet on the stove though).

      Thank you....good thing is when you practice this you get to eat it..ahahahha just takes around 425 to 450 ish....then 3 oz balls....then press and hold for 10 ish sec....then wait till its about 75 percent cooked through...flip and go...

    Im here bc im making my very first smash burger for dinner tonight. Since i dont have a griddle and am using a 10 inch cast iron skillet im afraid i wont have enough room to smash it correctly. I think i may pre smash it and fry it like that. Ur video was very helpful and so easy to understand so i thank u for that. I also subscribed and am on my way to check out other videos.     That white bread is THE move! We call that a “patty melt” where I grew up. 💣 And I agree that sliced white bread is the home chef’s best friend. Didn’t even realize when we were young that our parents were just trynna give us something substantial but save money, because they made it so fun to look at bread and say “how can we make this work for this meal tonight?” I used to toast it and throw butter and syrup on it like my own quick version of French toast before leaving for school. Best smash burger tutorials I’ve seen are on your channel!

    Gotta give you props for Cavenders seasoning, Im 39 and remember my grandparents always having it with the spices as a kid in the early 90s.. have a jar in my spice rack now but have never seen anyone mention it or use it. It is the bomb ap seasoning
