i would call that a medium rare steak, not medium by any standards.. i also saw his reaction when he cut the steak.. got experience in the kitchen for 10 years.. or maybe im deaf and he said medium rare? or he just fried the stake cold so its red in the middle and fried outside because he might not care anymore

Being a 50 year old widower who's on disability while raising a beautiful young lady by myself since she was 7 has been incredibly hard. For the many wondering why it wasn't overcooked. A) It was shielded from the pan heat by the bed of herbs and B) Notice it's not a thin, weedy, minute type steak but a chunky inch or more thick one. that means the centre takes much longer to get hot and therefore go beyond pink. Gordon goes out of his way to use the herbs to avoid the outside overcooking. temperature take time to penetrate thick food and no time to penetrate skinny. The little details matter, they're not just window dressing.

Gordon is still the greatest all-round chef. I enjoy the younger generation's efforts who do the 1 second clip fancy food stuff, but I still prefer watching a genius at work, cooking up the full thing.

I am stirring my little heart out when reducing a Diane pepper sauce so as not to burn it... Not this guy.... he has it thrown in the pan doing its own thing and he is crisping up those fries.

Recommendation if somehow you see this: Edit the video less. It doesn't matter if it doesn't all sound perfect all the time, makes for a more homey cooking video, and Gordon in my home is exactly what we want.
