For the many wondering why it wasn't overcooked. A) It was shielded from the pan heat by the bed of herbs and B) Notice it's not a thin, weedy, minute type steak but a chunky inch or more thick one. that means the centre takes much longer to get hot and therefore go beyond pink. Gordon goes out of his way to use the herbs to avoid the outside overcooking. temperature take time to penetrate thick food and no time to penetrate skinny. The little details matter, they're not just window dressing.

I think it is amazing watching Gordon Ramsey cook. It is his timing that makes what he does look so perfect. I am stirring my little heart out when reducing a Diane pepper sauce so as not to burn it... Not this guy.... he has it thrown in the pan doing its own thing and he is crisping up those fries.

It always amazes me his perception of quantity.
Just a couple of butter dices- proceeds to toss at least 10 dices
Just a few teaspoons of oil- proceeds to drown the pan in oil
Just a few teaspoon of beef stock- proceeds to pour a 1 whole liter of it

Now, Gordon’s secret here is really to COOK literally; you never want that sort of figurative kinda of metaphorical cooking because it doesn’t give you the sort of existent FOOD that you want and can LITERALLY put in your mouth.
