    I cooked my first Turkey following this recipe today and it was a hit with my family. We're from New Zealand and it's Summer here through Christmas and New Years so it's usually a BBQ and beach tradition but my husband grew up with Turkey for the Christmas meal so I decided to give it a go, but today I have made the decision that we will start cooking the Turkey for our Christmas meal, even the gravy was amazing. So simple and easy and delish, amazing, Thank you Mr Ramsay 😊 This recipe will be sent through to our future generations. I rested the Turkey for 3 hours and what a difference that made for sure.

    Back at it again for another year of cooking for the grandmas and family. Watching this yet again.
    Last year after I prepped and cooked the turkey, I left for a minute and came back to find my uncle has carved the turkey.. and carved it all wrong. In my eyes, Thanksgiving was canceled. This year, I put up signs and told everyone to not even be in the kitchen when I'm around.

    Struck me as odd cooking at 220 to get it “nice and brown” then turning the oven down to 180 then I realized that he’s referring to Celsius lol that’s 425 and 350 Fahrenheit roughly. Just in case anyone was wondering.

    Turkey cooks at 220C (430F) for 10 to 15 minutes and then when taken out reduce temp to 180C (360F)
    The butter mix:
    375 g of butter (1 2/3 cups) room temp
    1 tablespoon of olive oil
    Zest of two lemons and the juice
    3 garlic cloves finely chopped
    Handful of Parsley chopped
    Inside Turkey:
    Season with salt and pepper
    Add two halved onions and one lemon
    Two bay leaves
    After add the bacon about half way to cook on top of Turkey (Ramsay puts bacon when he takes it out to cook at lower temp I do it half way because my bacon burned once before)
    Gravy :
    Drain excess fat from the Turkey tray
    Take the onions out of Turkey and chop
    Take the bacon and chop
    Add to pan
    Chop the lemon and add to tray
    Two sprigs of Rosemary in tray
    3 tomatoes chopped and add
    Get Turkey trimmings (wings and butt tip) and add to tray
    1 bottle of dry cider (1liter) (I use 750 ml)
    As it reduces add the resting juices of your Turkey
    Reduce by half
    Smash everything with potato smasher
    600ml of chicken stock and reduce again
    Strain it and add a rosemary for flavor
    To serve gravy get a handful of walnuts and crush put at the bottom of gravy tray and add gravy (remove the rosemary if you added it at the end)
    Done

    Gordon: today I will be breathing. To do so, season the air with salt and pepper, to bring out the fresh flavour of the nitrogen and oxygen. Next, olive oil. Drizzle the air with the golden liquid, just a little bit to just heighten the crispiness of the carbon dioxide *empties barrel of olive oil*. Done. One atmosphere of air, ready to breathe. Mmmm. Beautiful.

      Today we'll be making the most amazing water. To start, you're going to give it a light seasoning of salt and pepper. Then you're going give it a splash of olive oil, to keep the flavor in. Beautiful. Add in some basil and reduce. Let the water rest for about 2 hours and serve. You can even do this the day before, just cover with tinfoil and refrigerate.

    My car broke down yesterday. No trips to the grandparents this Christmas, more than likely. Luckily, I always have a turkey on hand so my wife and kids will still be getting a Christmas feast, thanks to this recipe and to Gordon for sharing it.

    Americans, make sure you’re converting you temps! He’s using Celsius. 220C is about 430 F and then he turns it down to 350 F after the initial 10 minutes. Also, to easily convert lbs to kg divide the lbs by 2.2 and that gives you the kg. Kg should always be about half than the number in lbs that’s how you know you did it right.

    Anyone coming here for Thanksgiving 2019. I am from Thanksgiving 2018, and I made this turkey. Was single handedly the best Thanksgiving turkey I ever made. 👏 I'm now the turkey person because of this recipe. Do yourself a favor and make it. 🎉

      @@JFZ931 well it depends on how much gravy you are making. I used about 3 splashes. I know that's not an exact measure but it's the best I can give you. Lol gravy turned out lovely. Also I browned my Turkey like he did in the beginning, then I put it in one of those Turkey bags. And cooked it in the bag. Cook it to 170 F and it will be perfect. Mine was falling off the bone. 👍 Also do not tie the legs together!!! That's huge. Turkey cooks more evenly and quicker

      @@JFZ931 also it's not apple cider. Its dry apple cider. Which typically has alcohol. Regular apple cider is very sweet and concentrated. Dry cider is much lighter and less sweet. 👍

      @@bshmstdie89 I saw a good idea from good eats where he covers the turkey breasts only with foil after it is browned. This prevents the breasts from drying out. I do this instead of bacon.

    If anyone is curious, my mom and I followed this recipe for Thanksgiving today, and it’s the best turkey we’ve ever done. It was juicy and the gravy was delicious! I would definitely recommend to anyone who is considering trying it out.

    As an American, I cooked my bird at 220 degrees Fahrenheit instead of Celsius. And it took me four weeks until it was done.
    I was late for Thanksgiving, but on time for Christmas.

      LOL! They don't need to know when it's done. If my family doesn't know the turkey is done, they don't have a chance to act like a pack of wolves. And they're too lazy to check on it themselves; they don't want to accidentally offer to help in the kitchen, so they stay away from checking on stuff. So, my turkey can sit there quietly in the smoker being done, but my family is none-the-wiser.

      That’s hilariously accurate around these parts too. That’s why I start my process at 3am. Per Mom’s recipe let the bird rest outside the fridge for 3hrs before prepping (post thawing in fridge; in a fairly cold house - no heat). At 6am I’ll butter & stuff, brown & add bacon blanket, reduce oven temperature and put the bird in the oven to roast. Around 9am I’ll remove it to rest for 3 hours. Dinner is at 1pm so I have wiggle room.

    - 3 chopped tomatoes
    - rosemary
    - turkey wings
    - turkey
    - apple cider
    - turkey juices
    - chicken stock

      Turkey gravy with cider and walnuts.
      INGREDIENTS Serves 8-10
      Bacon, onions, lemon and trimmings from Gordon's classic roast turkey
      3 rosemary sprigs
      3 tomatoes, chopped
      1 ltr good-quality dry cider
      600ml good-quality chicken stock
      2 tbsp walnut pieces, toasted
      Sea salt and freshly ground black pepper
      METHOD
      Once you've transferred the cooked turkey to a platter to rest, drain off most of the fat from the roasting tray and place on the hob.
      Roughly chop the bacon, add to the tray and fry for a few minutes. Chop the onions and lemon and add to the tray with 2 rosemary sprigs and the tomatoes. Cook for 1-2 minutes, then add the turkey wings, parson's nose and drumstick tips and fry for a few more minutes.
      Pour in the cider and boil for a few minutes. Add the juices from the resting turkey and simmer to reduce the liquid by half. Pour in the stock, return to the boil, then reduce the heat slightly. Using a potato masher, crush the vegetables in the tray. Simmer for 15-20 minutes, stirring occasionally, until reduced again by a third. Take off the heat.
      Strain the gravy through a sieve into a saucepan, pressing down on the solids in the sieve with a ladle to extract as much of the flavourful juice as possible. Add a fresh sprig of rosemary to the pan, then turn off the heat and leave to infuse for a few minutes.
      Before serving, remove the rosemary and reheat the gravy. Coarsely crush the walnut pieces using a pestle and mortar and then tip into a warmed gravy jug. Pour the piping hot gravy on top and serve at once.

      Turkey cooks at 220C (430F) for 10 to 15 minutes and then when taken out reduce temp to 180C (360F)
      The butter mix:
      375 g of butter (1 2/3 cups)
      1 tablespoon of police oil
      Zest of two lemons and the juice
      3 garlic cloves finely chopped
      Handful of Parsley chopped
      Inside Turkey:
      Season with salt and pepper
      Add two halved onions and one lemon
      Two bay leaves
      After add the bacon about half way to cook on top of Turkey
      Gravy :
      Drain excess fat from the Turkey tray
      Take the onions out of Turkey and chop
      Take the bacon and chop
      Add to pan
      Chop the lemon and add to tray
      Two sprigs of Rosemary in tray
      3 tomatoes chopped and add
      Get Turkey trimmings (wings and butt tip) and add to tray
      1 bottle of dry cider (1liter) (I use 750 ml)
      As it reduces add the resting juices of your Turkey
      Reduce by half
      Smash everything with potato smasher
      600ml of chicken stock and reduce again
      Strain it and add a rosemary for flavor
      To serve gravy get a handful of walnuts and crush put at the bottom of gravy tray and add gravy (remove the rosemary if you added it at the end)
      Done

    I followed Gordon's instructions 100% step by step for our roast in 2018, I think I've watched this video around 100 times - I was afraid to fail on our american guests. They told me they never had a better turkey in their life, including their grandma who was supposed to be the master chef of the family. I was so proud that we'll do the same thing this year and our guests have been already lining up. We will be 12 - so I'll do 2 turkeys again - each will have around 4kg = 8.8lbs. I am using a full bottle of dry ecological cidre from Galicia, Spain, that's enough for the gravy of 2 turkeys. The resting time of 3 hours is exactly right, and the turkey will still be warm, the meat will just fall off the bones. Do yourself a favor and try it - it's a once in a lifetime recipe, because even a wannabe-chef like me was able to do it. Merry Christmas!

    I did this turkey for 2023 Christmas and it came out phenomenal! I followed the recipe and procedure to a T and by far the best oven turkey I ever made in my life.
