In this episode of In the Kitchen with Matt I will show you how to make no bake chocolate oatmeal cookies. This recipe for no-bake chocolate oatmeal cookies is really easy to make using everyday ingredients. They don't take super long at all to make either. These chocolate cookies are incredible and they are gluten-free! Time to mix things up a bit and make some no bake cookies. If I can make them, you can make them. Let's get started! :)

Ingredients:
1/2 cup of unsalted butter (113g)
1/2 cup of milk (whole, 2%, 1%, etc.) (118mL)
1 1/2 cups of white granulated sugar (300g)
1/4 cup of unsweetened cocoa powder (30g)
1/4 tsp. of salt (1g)
1/2 cup of packed brown sugar (light or dark) (100g)
2 tsp. of vanilla extract (10mL)
1/2 cup of peanut butter (125g)
3 cups oats (quick or old fashioned) (240g)

The 1/2 cup of brown sugar takes this recipe up several notches over other recipes I've tried; excellent addition! I was able to cut the white sugar down to 7/8ths of a cup instead of 1.5 cups, while maintaining plenty of sweetness. Very happy to have found your video! Thank you!

You might not see this Matt but sincerely as a kid under the age of 18 I’ve made these over 50 times over the past 2 years after I started cooking and baking more during COVID. I took a break, forgot the recipe, remembered it and now I’m making it every week. I loved them so much at one point I used to make a small batch everyday and just eat it before it cooled. My mama passed away when I was 12 and we would try and make Sunday our baking day but her last couple years her health was severely declining so we started trying shorter and less complicated recipes. This was her ultimate favorite one and I never remembered what they were called and your video just so happened to pop up in my recommended and I'm so thankful. Seriously, thank you for this video! I try and share as much of my mom with my children as I can and what better way than to bake together!?

I saw this video and tried to make it using whatever I had at home. I used 1/4 cup cocoa powder,1 cup margarine instead of butter(that's what I had at home),half a cup of milk,1 and half cups of brown sugar,vanilla extract and 3 cups of oats. I did not have any nut butters so I omitted it altogether. It could be my modified recipe or the fact that Malaysia is hella hot,so it did not set properly even in the fridge. I baked them instead at 200°c for 15 to 20mins and it turned out incredible!! Thanks Matt!

I had to use a little less than 3 cups of oats. Your recipe was written perfectly, I just may have eaten a few spoonfuls of the "ganache" before mixing them in.

These cookies take me back to high school.First time I made these was in home economics.
I did some changes in my batch, this is loaded with sugar for my tastes.
I don't eat a lot of sugar, I omitted the white sugar, brown sugar, and used 1/2 cup of honey.
Plenty sweet for me.

If you allergic to peanut butter you can add a bag of chocolate chips instead. It binds the mixture wonderfully and makes them super chocolatey.
Great idea! You can also swap it out with different nut butter, if you aren't allergic to them, like almond butter or cashew butter. :)
OMG I grew up on these, and still make them now.They are absolutely delicious. So simple to make. We also called them no bake chocolate oatmeal drop cookies, even though they are more like fudge than cookies.

We always called them " Chocolate Oatsies". A little different as my mom loved coconut. Use all white sugar and substitute 1/3cup of the oats with 1/3 c of shredded coconut. They are amazing.

@@stevenking9357 How long have you waited for them to set? Did you put them in the fridge? It may not have boiled long enough, once it comes to a boil, let it cook for at least a minute but you may need to do two or three, stirring of course. Usually, that is the culprit for recipes like this not setting.
@@inthekitchenwithmatt Thanks for the reply Matt. I let it boil for 2 minutes, stirring constantly and set a timer. Put half the batch in the refrigerator for 4 hours now, still gooey. My only deviation from the recipe was I used dark chocolate powder instead of the standard cocoa because that's what I had on hand.
@@stevenking9357 mmm it may have been that. I have only ever used standard cocoa powder with it. Or it may have just needed another minute or two of boiling.

Made two batches today...
One with regular cocoa powder and one with dark cocoa powder instead. Both are AMAZING. Definitely recommend them!
You have to put them on the foil fast if you want them to look nice (then give a while for them to cool fully).
Imagine how cute they'd be shaped like a birds nest with little chocolate eggs in the center with some shredded coconut or something. =)

To help the cocoa get incorporated, mix it with the sugar before adding to the melted butter and milk mixture. It helps take the lumps out of the cocoa and mixes in better. Also, use a larger (still heavy) pot to mix the liquid portion together and then add the rest of your ingredients to the same pot so you don't have another bowl to wash (you can tell who does the dishes in my household). If you ever have problems with these setting up, the butter/milk/sugar/cocoa mixture needs to be at 230 degrees when you take it off the heat to add the rest of the ingredients. If anyone has ever had cookies that don't set up, this is invaluable information (I have a small digital cooking thermometer I got at a yard sale for $2 and it's one of my best purchases ever). These cookies have always been a favorite of mine. I do love the brown sugar addition and think I'll make some of these right now! Our dog is out walking my hubby right now so it'll be a great treat for when they get back (for hubby only)!
You can also use a sifter with the cocoa powder to take the lumps out if you have issues with lumpy cocoa powder. And yes the biggest issue with these not setting is it wasn't heated hot enough. With that said, a thermometer isn't absolutely necessary, it is more forgiving than something like fudge, because of the oats, but if you got one, use it for sure. Have fun!

I have not seen this recipe before. But I was at a party a few years back and someone brought cookies that I think was made with this recipe but they used Rice Krispies instead of the oats. Looks easy enough and delish too.
Thanks J! Yeah they are pretty easy to make for sure. I am guessing you could swap out the oats with rice krispies in this particular recipe, it would change the texture, but still taste good I bet.

I've never done this with brown sugar, but I'm curious. I remember making these as a kid from a Mulligan stew recipe. I saw a tip on another video, that said you can slightly toast the oatmeal to eliminate a mealy flavor. That sounds like a good idea.
Give it a try and see how you like it! Toasting the oats first is a cool idea.

I use about 2 1/-2 cups - 2 3/4 cups of quick oats. If you add the oats to the pot the liquid chocolate will stay warmer longer and when you spoon them out they will relax onto the wax paper a bit.

Fantastic recipe that yields wonder flavor. I think I need to boil for 1.5 min though next time. They were a little soft, but they're in the freezer now and they still taste excellente'. Kudos on your prezo skills, n1.

Yeah humidity can be a factor for sure. I never have to worry about it here in Arizona. haha :)
For easter put them in cupcake papers make indentstion like a bird nest , then line with with green colored coconut ( place coconut in a jar sprinkle a couple drop of food coñoring hake and use as grass top with three jelly beans.
