I can't wait to try this recipe and others. Thanks for posting and for the parchment tip. I have always used foil, but my husband feels like you.     I've made this twice and its the best pot roast I've ever eaten!! modifications- I don't add the mushrooms and I use sweet red wine and it's amazing!!!

    I made this, and my husband was thrilled! He said it was as good, if not better than his mama’s (it takes a lot for a man to say someone else’s cooking could be better than his mama’s). It was my first time making a roast, and I’ll definitely be making it again!

    I subscribed instantly after you spoke of someone saying you shouldn’t say slurry and you proceeded to say it over & over. I’m cooking this tomorrow, already have everything I need, however, I will put 1/4 cup of prepared horseradish over the beef after it is browned just before the lid is put on.

    This was so delicious! I made the mistake of not listening to you Olena, and adding my potatoes and carrots to a 6 quart pot and it wouldn't come to pressure. I took the veggies out and followed your tips and it came out great! Thank you!
    PS . I have never made a tender roast before!

    Wow...Chudovo! My roast turned out perfect, as did the vegetables wrapped in parchment (great tip). Very tasty, the best recipe on youtube that I have tried so far for pot roast! Loved adding wine to the ingredients, because once the bottle is open...well you have to finish it, which of course made preparations much more fun!

      Sure you can cook it in a crockpot for 8-10 hours on low. Brown first in a skillet.

    I recently bought my 6qt Instantpot, made breaded fried chicken & "stacked" fries first. came across a pot roast pack at Walmart today on sale so it's a good time to make a roast! So I happen to find you and went pretty much by yours..I'll let you know how it goes!

      iFOODreal I will! I didn’t get it done yesterday as I was very tired and lost too much time watching recipe videos lol, but I got the space for it in my kitchen cleared so there was some progress. Today will be the day. Going to do either a beef stew or a pot roast. It seems a bit of a waste of a gorgeous piece of brisket to dice it up for stew, but it’s winter here so stew is really tempting. I have pumpkin I want to add to it so I think I’ll need to do it in 2 parts even as stew. Then will do corned beef and cabbage. Also want to try eggs and chicken stock. So that’s week 1 covered lol.

    Sorry to disagree but solidly frozen beef roast ABSOLUTELY sears perfectly and beautifully! There is not one single problem with searing frozen meat. As a homeschooling mom of 8, I frequently have to quickly make dinner and frozen meat may be my only option. I promise there is never more than an extra minute or 2 required to seat meat straight from the freezer.

    Followed your recipe with a few modifications (leeks and brown onion, added parsnips to vege). 6 court instant pot, 1.5 lb sirloin. The outcome was delicious but potatoes were mushy :(
    Next time will cook vege after meat, in same broth. TFS!!

    I too MUST have a browned / seared pit roast before cooking. I have never, ever had ANY problem browning frozen meat. Try again Friend.

    Another tip for non mushy veggies is to cook roast for 40 mins, then cook veggies 20 minutes.

      Absolutely! You can up the amount of broth or use tomato paste and soy sauce along with the broth instead.

    Can I just say you make these so easy!! I am totally domestically challenged and that includes cooking. Seriously I do not cook at all. I had to have a friend explain what browning was. That is how bad! LOL!! But honestly i was able to make your beef stew twice already. Only thing I have made in my instant pot! LOL!! so going to try this one too.       Brewed coffee works. It helps to flavor and tenderize the meat. And once it’s cooked it doesn’t taste like coffee.
