I made pot roast in my IP yesterday- different seasonings but cooked the same exact time for meat & veggies. (I didn't sear as this was a dump & go recipe) I also left the "keep warm" on for about 2 hours afterwards. OH MY it was so tender & moist! And the carrots & potatoes were perfectly cooked. Don't be afraid to leave it on the "keep warm" if it isn't supper time yet! :)
I like the add sequence you follow. Other videos show adding veggies from the start and for me, they turned out mushy and dark colored. Yours looked wonderful. Thanks!

Love this! If u have leftovers, put enough water in a frying pan just to cover the bottom sit 1 to 2 servings of roast and veggies in the water, cover, bring to a boil momentarily, and reduce to low for two minutes. Then remove the lid, increase to medium, and cook until the water is almost all gone. It will all be tender again. I tried this method with a tough roast, and it still did the trick.
Thanks for a well done video. You explained every step so that even a 'rookie' like me could follow and understand it. Also, if you like your potatoes and carrots extra soft, would you recommend adding them when you begin to cook the roast?
You could add them at the beginning and they would be softer for sure. When I make stew in the IP, I cook meat and vegetables for the same amount of time and it turns out great.

I added flour to the carrots and onions stirred it good then added the meat back to the pot. I only did another pressure for 5 mins because I like the veggies just a tad firm. It came out perfect, didn't stick to the bottom. It was delish!
You can put the veggies in on top wrapped in foil and then put them in the juices afterwards and cook it or simmer it for another 10 minutes, but you really don’t even have to do that or you can use parchment paper and wrap them up if you don’t like the foil. But that’s one of the things that I do. Or that I have done. They taste fantastic

You're correct they do get mushy if you leave them in for a full hour. However you can put potatoes in, uncut, for an hour and they won't be overcooked.

Looks yummy. Thank you! One suggestion would be to keep the green beans separate and steam them in the microwave for a very few minutes, to keep them green and fork-tender, not mushy.
For a richer sauce/gravy, take out the beef and set aside - leave all veggies and liquid in the pot. Create a 1/1 corn starch slurry (usually 3 tbsp on corn starch to 3 tbsp of water) and add to the remaining liquid. Add a packet of au jus mix and put the instant pot on sautee, maybe 4-5 (out of 6), which is medium or medium high. Stir in the slurry and the au jus and let simmer for about 5 mins. You'll be left with a MUCH richer sauce. I always shred the beef on a cutting board, too, using two forks. I then place the shredded beef back into the pot with the gravy so it soaks up all that amazing sauce.
LOL, you said "sukosh." Did you know it's short for sukoshi in japanese for a tiny bit or small amount. Love your video and will definitely try this recipe.
I cooked tonight a beef sirloin for 1 hour and it was like beef jerkey, horrible all dried out! I'm sticking too tri-tip from now on as that's nice and tender and juicy.
You were actually cooking this on “normal” pressure (middle light) to get it to “high” you gave to push the pressure button twice. Pressing the “ pressure cook” button multiple times changes the pressure levels. 😊
I thought you have to natural release meat for 10 mins before quick releasing? I always put everything in at the beginning and then natural release because I don’t want tough meat but if I can quick release that would save a little time!

On a pot roast I cook it for 20 min per lb., If you want it fall apart tender do 25 min per lb

I have not tried to do that. I have friends who say they’ve pressure cooked frozen meat. I imagine you’d need to increase the cook time.

I've always been told that an instant release dries out the meat....so maybe that is not needed at the first release on a two part cook like this?
