PERFECT Claypot Rice Spareribs Black Bean Sauce and Chinese Sausage | Wally Cooks Everything

  • The ULTIMATE easy one pot rice casserole cooked in Chinese claypots, cooked in 10 minutes. Filled with fluffy rice and topped with savory pork spareribs in black bean sauce. I’ll show you how to make this classic Chinese one pot recipe at your home. Just simple ingredients and know how you’re on your way to making one of the most popular rice dishes in Asia.

    ►Ingredients:
    1 1/2 Cup Uncooked Thai Jasmine Rice
    1 3/4 Cup Water + 1/2 Teaspoon Pure Sesame Oil
    2 Teaspoons Ginger Minced
    1 Tablespoon Garlic Minced
    1 Chinese Sausage
    Chilis
    Spare Ribs and Marinade
    250g (9oz.) Pork Spare Ribs
    1 Tablespoon Chinese Fermented Black Beans (soaked in a few tablespoons of water)
    1 Tablespoon Light Soy Sauce
    1 Tablespoon Chinese Cooking Wine
    2 Teaspoons Oyster Sauce
    2 Teaspoons Sugar
    1 Teaspoon Pure Sesame Oil
    1/2 Teaspoon Ground White Pepper
    2 Tablespoons Cornflour (a.k.a. Cornstarch)
    The Sauce
    1 Tablespoon Light Soy Sauce
    2 Teaspoons Sweet Soy Sauce
    1 Teaspoon Pure Sesame Oil
    1/4 Teaspoon Rice Vinegar

    Can’t agree enough about learning how to cook with a clay pot as a good general teaching component. My family is Italian and I learned more from Korean grannies on UA-cam about fire and heat than a childhood of watching my family cook. I love my clay pot!

    Hi Wally. That clay pot dish looks very yummy! Two questions. In your recipe you note 1/4 teaspoon and 1 Tablespoon of rice wine but you only used 1/4 teaspoon in the sauce. Is the amount optional? Also, can you heat the clay pot on an electric stove? Thanks and Happy New Year.

    Hey Wally, I can't seem to reply to your comment but I'm using a fairly standard Chinese semi glazed pot .. the sort you see in videos on claypot cooking. It actually has a few cracks in it now but the wires seem to hold it together and it doesn't leak. I've tried also putting the pot into the oven as well as some people suggest but I think that just bakes your proteins and makes them dry. It just seems tricky to get the balance right and I'm surprised no one else has these issues. I guess I'll just keep trying differing amounts of rice to water ratios.

      Hey how's it going? Have you tried soaking your claypot overnight, fully submerged in water? I've never baked with claypot though it does sound interesting.

      @WallyCooksEverything I've only soaked the claypot overnight when I first seasoned it and not really since.     I really like this video. I recently made clay pot rice it came out great but my question is that when u put in the marinated pork ribs, is 5 min enough to cook it through?

    I inherited some old claypots (glazed only in interior) and a gas stove. You advised against using these on a gas stove, but are there "work around" methods so I can try making a claypot meal on my gas stove?

      Hello Betty 😃 you can use your clay pot on gas range. What I meant was clay pots were designed to be used over coal. I recommend soaking your inherited clay pots fully submerged in water over night first before use. Because if you don’t use it for really long time it can really dry out and crack during cooking.

      Hello, how are you? 😀 Yes about 5 minutes, including the time to steam inside after switching off heat. Claypots are really great for keeping heat inside 👍 and is strong enough to cook spareribs to perfection with residual heat.

    I gotta learn to do this all in my oven, cos I only have an electric range, and I'm nearly positive it'll break my clay pot :/ My pot (with the lid on) does fit into my airfryer though, so it'll be an experiment...

    I asked my grand uncle to buy me 2 of these pots just in case one breaks while I'm learning. Can you teach us how to prepare them before a first time use and how to clean them after cooking?

      Ahh thank you for bringing this up 😃 Your grand Uncle is right! These clay pots have to be seasoned. Even though super heavy and looks durable it will crack if there’s no liquids inside for too long. I will make a video on how to season clay pots when I get a chance 😃 Have a Great New Years!

    Good job, I normally squirt oil around the side of the clay pot once the rice is half way cooked so the fan jiu won't stick to the bottom

    I find it always tricky to get the meat in at the right time. Wait too late and there's not enough steam to cook the proteins. Too early and you end up boiling instead of steaming.

      Hey how’s it going? I never really had that problem. What kind of cooking pot were you using. I did notice once using a friends pot it was thinner. So the pot did not retain enough heat to steam.
      Maybe for the final steaming turn your fire in the lowest setting. Check often cause if too dry your clay pot will crack.
