    Ingredients -
    Chicken Seasoning -
    750g (1.65lbs) - Chicken Thigh, Boneless & Skinless
    1/2 tsp (0.5g) - Dried Basil
    1/2 tsp (0.5g) - Dried Thyme
    1 tsp (2.5g) - Onion Powder
    1 tsp (2.5g) - Garlic Powder
    Seasoning To Taste
    Sauce & Pasta -
    1 Tbsp (14g) - Unsalted Butter
    2 tsp (10ml) - Olive Oil
    1 - Brown (Yellow) Onion, Diced
    5 - Garlic Cloves, Minced
    1/4 Cup (60ml) - White Wine (Substitute For Chicken Stock)
    200g (7.05oz) - Swiss Brown Mushrooms (Cremini), Thinly Sliced
    1 litre (4 Cups) - Chicken Stock
    500ml (2 Cups) - Thickened Cream (Whipping/Heavy Cream)
    350g (12.3oz) - Penne Or Pasta Of Choice
    40g (1.4oz) - Parmigiano Reggiano Cheese, Freshly Grated
    5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped (Optional)
    120g (4.2oz) - Baby Spinach (Optional)
    Seasoning To Taste
    Garnish & Serving -
    Parmigiano Reggiano Cheese, Freshly Grated
    Extra Virgin Olive Oil (EVOO)
    Cracked Black Pepper
    Notes -
    To store this pasta, place it in the fridge for up to 3 days. It can be frozen but isn't recommended due to the cream content and will potentially split upon reheating. It can be frozen for up to 4 months if need be.
    To reheat, either place it back into a pot or pan and gently heat it over medium heat until hot (10 minutes) or place it into a microwave in bursts. If you heat it in a microwave be careful of the harsh uneven heat as it will split the sauce, mix it around every 30 seconds to prevent this.

      A nice hearty beef stew, or even a sausage casserole; I make mine in one pot on the stove and serve it with crusty bread and butter, but I suppose it could easily be adapted with added potatoes?
      I'd love to see a chicken chasseur, cock au vin or beef bourguignon as well...😊
      But honestly, I watch every recipe you make anyway!

      @@joshtm66 in all the places I have lived you haven't needed to show ID for cooking wine. Some French chefs might scoff at the thought of using grocery store wine in food, but IMO, $4 a bottle can add a ton of flavor in the kitchen.

      @@SilverWave64 That has been debunked, according to Washington Times anywhere from 4 to 85 percent of alcohol remains in cooking, depending on the cooking time. According to an article released by Idaho State University, 15 minutes of cooking at alcohol boiling point results in 40% of alcohol remaining, and 2.5 hours still results in 5% alcohol remaining.

      @@ChefJackOvens Since my son is preparing for a food truck business in spring 2022 (when we are hopefully through with Corona restrictions), one-pot is in the concept to go.
      It´s easy to store in gas powered bain-marie container storage, and always to serve it warm and in short time like on a hotel buffet.
      So one-pot and things to combine from own choice from the bain-marie containers , but everything already prepared, will be the way to go.
      Things like Goulash are well known to work best after Re-heating next day anyway.

    I just wanted to say that you do a great job of producing a video that is accessible for beginners but people that may be further in their cooking journey.
    Like you do a great job of briefly touching on deglazing the baked on flavours, then you cook with the pasta in the sauce which would be great for the starch to make a nice glossy clingy sauce and resting the chicken in their juices/cutting across the muscle.
    Man I will have to try this for sure! So impressed with your quality of video, great job.

    I rarely cook and until now always shyed away from recipes from cooking channel recipes because most of them where way to advanced and needed me to buy way too many recipes due to me have literally NOTHING in my house.     You explained really well why you use certain techniques like why you grated the garlic and cut the chicken across the grain. It’s very clear that you really know your stuff!

    I made this today and it’s by far one of the tastiest things I’ve had. I was missing a couple ingredients such as parmesan cheese but I just substituted it for mature cheddar and it still tasted good.

    i eat pasta dishes all my life and am good at them, this is the best chicken recipe ive seen and chicken is teh one i fail at, that looks like an amazing way to do it! nice work !

    I have seen many cooking videos on UA-cam and you are the only person who asked to use the flesh of onions as much as possible. I hate when people wasting food and some of them cut off huge chunks from onions or some other vegetables. But you are different. Much appreciated ❤

    Tried making this today and it’s one of the best pasta dishes that I’ve ever made.. I only put
    like 1/2 tsp seasalt on the chicken marinade but still a tad salty for me so maybe next time I’ll reduce it (for my toddler as well). Thanks for the good recipe!

    Great vids, Chef Jack ! Complete, concise, and well executed. Takes me a little time to transcribe the methods, but worth it. I think I'd get a little too nervous following along with the vids !.
